Thanks to the nutrients found in pineapple and coconut, this pina colada popsicle recipe can hardly be categorized as a treat! Coconut is packed with vitamins, minerals, antioxidants, and fiber. And pineapple is chock full of Vitamin C.
- 1 1/2 cups spinach
- 1/4 cup coconut milk
- 2 1/2 cups pineapple
- 2 tablespoons shredded coconut (unsweetened)
- Blend all ingredients until smooth.
- Pour into a popsicle mold or small disposable cups.
- Insert popsicle sticks.
- Freeze until firm, at least 3 hours or overnight.
