This healing, cleansing vegetable soup recipe will become a staple at your house like it is at mine. Upgrade it to a meal by adding optional collagen powder.

Earlier this year my friend, Kathleen, texted me a recipe for Bieler’s Broth. If you haven’t ever heard of Bieler’s Broth, you aren’t alone! It was new to me as well. Apparently this healing vegetable soup recipe was created by Dr. Henry Bieler, a clinical nutritionist and author of the book Food Is Your Best Medicine. Read on to find out why I love this vegetable soup recipe and how I’ve upgraded it.

The broth starts with garden fresh veggies – bonus points if you actually have these in your garden. 😉 It’s a great way to use garden zucchini. The combination of zucchini, string beans, celery, and parsley yield a vegetable soup recipe that is simple, cleansing, nourishing and totally plant-based. So much to love. And while the recipe as written can be a little plain, it’s a great base for adding some extra goodness in there to season it up a bit. A little garlic, salt, and pepper gives the soup a lot of flavor without taking away from its healing benefits. I prefer it very mild and simple, especially if I’m feeling a little under the weather.

Why this vegetable soup recipe is good for you:

This vegetable soup recipe is perfect for when you’re stressed out and craving high sugar, high carb meals. Those foods can mess with your adrenal glands and make your body more acidic that it should be. This recipe (plus green smoothies + plant-based meals!) is how we can balance our body out. I just had it for dinner and it’s doing the body some good. The heavy dose of fresh greens is a great way to help restore your body to an alkaline state and reset the “sodium-potassium” balance to your organs and glands. You ready for some green soup?!

And now for the upgrade!

This broth on its own does have all of those benefits I discussed, but it is a very light soup. To add extra gut-healing, calming benefits and a hit of protein, I like to add Dr. Axe Keto Collagen. (Note: this soup may not fit into a strict keto diet.) That boost of protein coupled with the coconut oil and veggies makes this a complete meal.

This makes a TON of soup, so it also ticks off the box of creating something healthy and delicious that I can freeze in smaller portions for later.

Description

This healing, cleansing vegetable soup recipe helps to alkalize the body and bring it back into balance, especially if you’ve been eating too much sugar and/or processed foods. Add collagen powder for a protein boost without altering the flavor or texture.

Ingredients

Healing Vegetable Soup Recipe | SimpleGreenSmoothies.com4 medium zucchini, chopped and ends discarded⠀
1 pound string beans, ends trimmed⠀
2 stalks celery, chopped⠀
1 bunch parsley (flat-leaf or curly), tough stems removed⠀
4 cups alkaline water⠀
1/4 cup coconut oil⠀
Optional: Dr. Axe Keto Collagen Powder


Instructions

  1. Place all ingredients (except coconut oil and optional collagen powder) in a pot and bring to a boil. Lower the heat and simmer until the vegetables are tender, about 15 minutes.⠀Healing Vegetable Soup Recipe | SimpleGreenSmoothies.com

Notes

Use caution and make sure to vent the blender lid and cover with a towel and start blending on low speed to prevent the hot soup from splattering.

    I hate to be a nitpicker…but…How much parsley is “1 bunch”? Should I be adding 1 cup, 2cups…?

    We like to say “1 bunch” because that is how it’s sold when you buy it fresh. The amount in measurements is 1 cup.

    If you are not a fan of string beans you can totally leave them out and add more zucchini and celery to make up the difference.

    Alkaline water? I know there are very expensive systems for the home to make this, but I am guessing most of us will have to just use regular filtered water.

    I was looking forward to making this, but I recently read pregnant women shouldn’t “overconsume” parsley. Not sure where the line is on that, as other resources I’ve read have indicated that parsley has many benefits during pregnancy. Would you recommend this soup as-is during pregnancy, and if not, do you have any recommendations for a parsley substitute? I’m right in the middle of my second trimester (21 weeks) if that matters.

    Hey Rebecca,

    I am not sure how to answer that because this is the first I have heard about parsley not being good during pregnancy. I consumed parsley during both my pregnancies so I would suggest talking with your doctor to make sure. You can substitute parsley for basil or cilantro if you prefer. 🙂

    Collagen is the most abundant protein in your body. It is the major component of connective tissues that make up several body parts, including tendons, ligaments, skin and muscles. Consuming collagen may have a variety of health benefits, from relieving joint pain to improving skin health.

    Alkaline water has a higher pH level than regular drinking water. Because of this, it is known to neutralize the acid in your body.

    Are there any substitutes for the animal based collagen powder that are plant based? It is. O longer vegan or vegetarian with that added, but the boost it gives sounds good if it can be made cleaner.

    Hey Jodi,

    You can totally swap out the collagen here with any plant based collagen you prefer! Plant based collagen is slightly different then regular collagen but it still has amazing benefits for your body.

    I’d like to try this recipe, but I don’t like coconut in any form and so many recipes call for coconut oil. What other oil can I use? Would avocado oil work in this recipe?

    Totally understand not wanting to use the coconut oil. I have brothers that gag at the thought of it haha You could substitute the coconut oil for MCT oil.

    I have been reading a lot of things on coconut oil and it basically has said that it will raise cholesterol levels if used often. As, I am over 65 I certainly don’t want to raise my cholesterol levels. Can you leave out the CIC ut oil? What purpose does it have in the soup. Many heart specialists recommend no oil of any kind.
    So I guess I wonder what makes SGS still promoting its use.?

    We know that many people have difference of opinion especially when it comes to nutrition. However, we absolutely love coconut oil here at SGS because of all the amazing health benefits it gives your body and we see for ourselves. If you would prefer to not have he coconut oil feel free to leave it out of the recipe.

    I like heat so I added jalapeno pepper, I also added tumeric & nutritional yeast for an added boost. The soup is very good but next time I will use less coconut oil, little over powering for me.
