This old-fashioned switchel steeps apple cider vinegar, raw honey, fresh ginger and Meyer lemon in chilled water for a tangy, gingery drink farmers sipped in the hayfields centuries ago. Ten minutes to make, and it keeps as a concentrate for sparkling water.
Combine the apple cider vinegar, honey, ginger and lemon in a blender. Blend until smooth.
Transfer to a quart-size mason jar, add the chilled water and stir to combine.
Notes
Lemon Swap: A regular lemon works in place of the Meyer lemon. It's more tart, so you may want a little more honey.
Vegan Swap: Use pure maple syrup in place of the honey, or another liquid natural sweetener you like.
Concentrate: Skip the water and refrigerate the blended mixture in the jar. Dilute with still or sparkling water just before serving, starting with about 1 part concentrate to 4 parts water.
Storing: Keep the switchel refrigerated in a sealed jar for up to 1 week. Shake or stir before serving, since the ginger settles.
