These ramen-style zoodles layer spiralized zucchini with kale, shredded carrot, green onion, garlic and crunchy pepitas in a jar, then a hot tamari sesame broth pours over the top. A light lunch you can pack, ready in 25 minutes.
Heat the vegetable stock, sesame oil and tamari in the microwave or in a saucepan on the stove until nearly boiling.
Trim the ends off the zucchini and spiralize it into long strands. Cut the noodles into spaghetti-length pieces if needed and place them in a quart-size mason jar or bowl.
Layer the kale, carrot, green onions, garlic and pepitas on top of the zucchini noodles.
Pour the hot stock over the vegetables and let stand for 5 minutes to warm through before serving.
Recipe Notes
Spice Level: Add a pinch of cayenne or red pepper flakes to the stock for some heat.
Flavor Tip: If you have time, saute the garlic, carrot and kale in the sesame oil for a minute or two before layering for deeper flavor.
Protein Boost: Add 1/2 cup cubed baked tofu or shelled edamame to the jar for a heartier lunch. Find more ideas in this plant-based protein guide.
Make Ahead: Layer the vegetables in the jar and refrigerate for up to 2 days, then pour in the hot stock just before eating. Eat it soon after the 5-minute rest, since the zucchini noodles soften the longer they sit.
