These alkaline smoothie cubes are one of my easiest prep-ahead recipes. Kale, collard greens, cucumber, parsley and lime blend once and freeze into 8 cubes. Drop one or two into any smoothie for an easy hit of alkaline greens, and skip washing leaves every morning.
Add the lime juice, cucumber, kale, collard greens and parsley to a blender in the order listed. Pulse a few times, then blend on high until smooth, adding a little alkaline water if needed.
Scrape down the sides of the blender. Add enough alkaline water to reach the 4-cup (32-ounce) line and blend again.
Pour into two standard 16-well ice cube trays and tap them gently on the counter to release any air bubbles. Freeze until solid, several hours or overnight.
Pop the cubes out of the trays and store in an airtight, freezer-safe container.
To use, add the cubes to your favorite smoothie in place of or in addition to the leafy greens.
Notes
Ingredient Swaps: Lemon juice or raw apple cider vinegar can replace the lime juice. Plain filtered water works in place of the alkaline water.
Greens Swap: Any leafy green or bok choy, cabbage or broccoli can replace the kale and collards. Celery, lettuce or bell pepper can stand in for the cucumber.
Cooked Greens: If you prefer cooked greens, lightly steam or blanch them first, then add more water or greens to reach the 4-cup line.
Freezing: Store the cubes in an airtight, freezer-safe container for up to 3 months. Add them to the blender straight from frozen in place of fresh greens.
