This chocolate bark starts with melted vegan chocolate chips topped with sliced almonds, dried tart cherries and flaky sea salt, then chilled and snapped into shards. Four ingredients, no oven, and it boxes up beautifully for holiday gifts.
Line a rimmed baking sheet with parchment paper and chill it in the refrigerator or freezer.
Melt the chocolate in a heatproof glass bowl set over a pan of simmering water, stirring occasionally and keeping any water out of the bowl so the chocolate doesn't seize. Remove from the heat while a few unmelted pieces remain and stir gently until smooth.
Pour the chocolate onto the chilled baking sheet and spread it evenly with a thin spatula, almost to the edges. Immediately sprinkle with the almonds and cherries, then the salt.
Refrigerate until firm, about 2 hours. Break into pieces and store in an airtight container in the refrigerator.
Notes
Vegan Tip: Check that your chocolate chips are dairy-free to keep the bark vegan.
Mix-Ins: Try other toppings, like pretzels and peanuts, crushed potato chips, or dried blueberries and hazelnuts.
Nut-Free: Swap the almonds for pepitas or sunflower seeds.
Storing: Store in an airtight container in the fridge for up to 1 week; it softens at room temperature. If you're giving it as a gift, let the recipient know to keep it chilled.
