Try this refreshing chia fresca drink if you're spending a long time outside doing strenuous work. I like to pack it when I'm on a long trail run, doing a day in my garden or hiking the Grand Canyon.
Stir together the coconut water, chia seeds, lime juice and maple syrup in a glass or jar, along with the peach and strawberries, if using.
Let stand for 5 to 10 minutes so the chia seeds absorb some of the liquid. Refrigerate until ready to drink.
Notes
Texture Tip: Stir again after a few minutes to keep the chia seeds from clumping. Let it stand longer for a thicker, gel-like drink, or add more coconut water to thin it.
Liquid Swap: Filtered water or maple water works in place of the coconut water.
Mix-Ins: Swap the peach and strawberries for diced mango, raspberries or a few cucumber slices and mint leaves.
Make Ahead: Without the fruit, it keeps in a sealed jar in the fridge for 3 to 4 days. Add the fruit a few hours before serving.
