These smoothie cubes start with chia seeds, hemp hearts, psyllium husk, cacao and Medjool dates blended with almond milk and vanilla, then frozen. Drop a few in the blender with fruit and greens and a thick, chocolatey base is ready whenever you are.
In a bowl, stir the chia seeds into some of the almond milk. Let sit for 10 to 15 minutes to form a gel.
Pour the chia gel into a blender. Add the remaining almond milk, hemp hearts, psyllium, cacao powder, dates, vanilla and a pinch of salt. Blend until smooth, adding a little more almond milk if needed; the mixture will be very thick, like pudding.
Spoon into two standard 16-well ice cube trays. It's fine if the mixture rises above the wells, as long as it stays within the trays.
Freeze overnight or until completely solid. Pop out the cubes and store in an airtight, freezer-safe container for up to 2 weeks, or a little longer in a deep freezer.
To use, blend the cubes with your choice of liquid and leafy greens until smooth. If it isn't sweet enough, add some ripe banana or a little maple syrup to taste.
Notes
Date Tip: If your dates are dry or firm, soak them in hot water for 10 minutes so they blend smooth.
Sweetener Swaps: Replace the dates with pure maple syrup to taste, or use 2 medium bananas in place of the 8 dates. More options in this guide to natural sweeteners.
Texture Tip: The mixture thickens quickly as the chia and psyllium set, so spoon it into the trays right after blending.
Freezing: Store the cubes in an airtight, freezer-safe container for up to 2 weeks, or a little longer in a deep freezer. Blend them with plenty of liquid, since the chia and psyllium make a very thick smoothie.
