These frozen chocolate banana bites sandwich creamy almond butter between banana slices, dipped in melted chocolate with a little coconut oil for a snappy shell. Four ingredients, 10 minutes of hands-on work, and a freezer stash ready for any craving.
Line a baking sheet with parchment paper. Arrange half of the banana slices on the sheet and top each with a small dab of almond butter. Top with the remaining banana slices to make sandwiches.
Freeze for 1 hour.
Melt the coconut oil and chocolate chips in a small saucepan over low heat, stirring constantly, until smooth, 2 to 3 minutes. Remove from the heat and let cool for 5 minutes.
Using a fork, dip each frozen sandwich in the chocolate until completely coated, letting the excess drip off, and return to the baking sheet.
Freeze until the chocolate is set, about 1 hour.
Notes
Ripeness Tip: Use bananas that are ripe but still firm so the slices hold their shape.
Ingredient Swaps: Any nut or peanut butter can replace the almond butter. For nut-free bites, use sunflower seed butter.
Vegan Swap: Check that your chocolate chips are dairy-free to keep these vegan.
Freezing: Store in a freezer-safe container for up to 3 months. Let them sit for a few minutes before eating so they soften slightly.
