For this healthy taco salad, soaked walnuts get blended with cumin, smoked paprika and chili powder into a plant-based taco meat, then piled onto romaine, black beans, avocado, corn and tortilla chips. It is hearty, with 20g of protein per serving.
Soak the walnuts in hot water for at least 20 minutes. Drain and rinse well.
Place the walnuts, tamari, cumin, smoked paprika and chili powder in a food processor. Pulse until the walnuts are finely chopped and resemble ground meat. Taste and add more spices if desired.
Arrange the romaine on a plate. Top with the tortilla chips, walnut taco meat, black beans, avocado, tomatoes, bell pepper, corn, olives and green onions.
Garnish with the cilantro and sour cream and serve.
Notes
Sour Cream Swap: Vegan avocado crema makes a great swap for the sour cream.
Grain-Free: Skip the tortilla chips, or use a few large lettuce or cabbage leaves instead.
Warming Tip: To warm the taco meat, cook it in a lightly oiled nonstick skillet over medium-high heat until warmed through and lightly toasted. Watch closely so it doesn't burn.
Meal Prep: The walnut taco meat keeps in an airtight container in the fridge for 3 to 4 days. Keep the greens, toppings and chips separate until serving, as with any meal prep salad.
