This mixed greens salad tosses crisp spring mix, cucumber, green apple and creamy avocado with sliced almonds and a blended strawberry basil dressing. It is sweet, savory and crunchy, ready in 10 minutes, and has 13 grams of fiber per serving.
Arrange the spring mix, cucumber, apple, avocado and almonds on plates.
Make the dressing: Puree the strawberries, basil, olive oil, lemon juice, maple syrup, salt and pepper in a blender or food processor until smooth. Taste and add more salt and pepper if needed.
Drizzle some of the dressing over the salads (you may not need all of it) and serve immediately.
Notes
Greens Swap: Any tender leafy greens work in place of the spring mix.
Nut-Free: Use pepitas or sunflower seeds in place of the almonds.
Oil-Free Dressing: Leave out the olive oil. The dressing will be a little thinner but still bright and flavorful.
Storing: Store leftover dressing in a sealed jar in the fridge for up to 3 days and shake before using. Dress the salads just before serving so the greens stay crisp.
