Scoop into this refreshing Vegan Banana Split—a vibrant twist on the classic sundae. Sweet, ripe banana halves cradle creamy scoops of your favorite dairy-free ice cream, while juicy strawberries and plump blueberries add a burst of fresh flavor.
Ingredients

banana

scoops
vegan ice cream
½
cup
strawberries
diced
½
cup
blueberries
cacao nibs
for sprinkling
ground cinnamon
ground, for sprinkling
Instructions
Peel
and
halve
the banana lengthwise.
Place
in a shallow serving bowl or sundae dish so the banana halves open like a book.
Place
ice cream scoops down the center of the banana.
Top
with fresh berries.
Sprinkle
cacao nibs and cinnamon on top.
Serve
immediately.
Notes
Other fruit can be substituted for the berries.
Top with
coconut whipped cream

berry compote
and/or a fudgy topping.
