Zoodles in a Jar is a light and nourishing twist on classic ramen—made entirely from plants. Spiralized zucchini noodles (“zoodles”) are layered with kale, shredded carrots, green onions, garlic, and crunchy pepitas, then topped with a hot sesame-tamari veggie broth that brings everything to life.
Heat vegetable broth, sesame oil and tamari in microwave or on stovetop to a near boil.
Trim the ends off the zucchini and spiralize into long strands. If needed, cut the noodles into shorter lengths—about the size of traditional spaghetti. Place in a quart size mason jar or bowl.
Add the kale, carrots, green onions, garlic and pepitas on top of the zoodles.
Pour vegetable stock over the veggies in the jar. Let stand for 5 minutes to warm everything up. Enjoy!
Notes
Add cayenne pepper or red pepper flakes for some spiciness.
Sauté the garlic, carrots and kale in the sesame oil for addition flavor if you have time.
