This salad challenge was so fun! Iโ€™m used to eating the same old boring salads for lunch and needed a change. This challenge gave me some delicious recipes that sometimes took me out of my comfort zone which was a good thing. I also was eating a salad for lunch and then another with dinner. It was easy to incorporate into my families meals and my kids enjoyed some of them as well! Thanks Jen and team for a super fun challenge filled with lots of yummy salads!

All the salads in the 10 Day Challenge were beautiful flavorful quick and delicious. The dressings are what put them over the top. Many were filling enough to be a meal and others are great as a side or healthy snack. I highly recommend this challenge.

I joined the challenge to learn new recipes for healthy salads and tips/tricks to making preparations easy and quick. This challenge fulfilled all those goals. There wasnโ€™t any salad that I hated and many favorites. The different dressings have given me ideas for other uses. The citrus based ones were very refreshing and I can see these being used on cooked veggies, maybe even on pasta or rice. I had never put beans in a salad before,(other than taco salad) and I was surprised that I enjoyed the flavor. These salads will stay on rotation in my household.

I liked the challenge and recipe ideas. It would be great to have had a grocery list up front (sorry if you provided one and I missed it). I don’t live near a grocery store, so it wasn’t feasible to run and get the ingredients that I didn’t have each day. Therefore, I didn’t participate in making the salads daily and commenting on them.

I am definitely not a salad person, but I am training for a hundred mile race at 52 and I need everything to be in my favor. I joined this sceptically but now. I am glad I joined. The healthy dressings and ways of adding protein and fat to make them more of a complete meal are very helpful. I will definitely be referencing the recipes in the future. I didn’t tell my husband about the challenge until after I’d prepared 10 salad-based, meat-free dinners. He was happily surprised by the variations from what I usually cook (he thought I’d been unusually creative!), and even more glad when he discovered he’d dropped a bit of weight. (I did too!)

I typically donโ€™t like salads because they are usually boring (I donโ€™t eat meat and I donโ€™t like vinegar). When I got the Organic Girl email about this salad challenge, I signed up immediately! These salads were different enough to keep you on track but similar enough that many of the ingredients were shared! My husband and I could also agree on the daily meal ๐Ÿ™‚ I plan to incorporate some of these salads into our weekly meals!

I loved that I did this challenge to make & eat salads for 10 days in a row. While these took more time than I normally do for salads- I usually just chop & throw in whatever is at hand, Jen really had thought thru flavors & dressings to complement the ingredients. I never make my own dressing, but now I realize it’s not that hard or time consuming. I loved the Strawberry Arugula salad. It is something I’d feel proud to serve for company. So I got some good recipes, ate better with more vegetables, and feel like I can continue on to include more plants in my diet. All my goals were met! I have recommended it to several friends.

I really enjoyed the variety of the salads, however, there were a few that I altered or replaced with a different salad. My favorites were the bright berry salad and the Crunchy Carrot salad. I also loved being able to make taco meat and cheese sprinkle from nuts!!!!
