Such fun to see all the colorful photos of presentation plates posted in the support group and to read about others’ experiences. I loved the variety of salads. Some combinations were out of the box for me which led to delightful surprises. The Taco and Berry Salads were two of my faves and will be made again in our household. As far as taste all of the salads were high on the Yummy Meter. Eating well must be coupled with exercise though so I did hook up my fitbit for accountability on getting in steps and keeping it moving and grooving. Now I feel healthier inside and out.
Oh Walnut Meat|where have you been my whole life?
While I’ve always been a big salad maker/consumer I enjoyed the new ideas I got from the challenge. I am postpartum so trying to increase my consumption of dark leafy greens to rebuild my iron stores. My favorite recipe was the Sweet & Crunchy Chickpea Salad and I also enjoyed the kale salad. My favorite Organic Girl product to use is the Little Gems — so fresh and tasty! Uploaded photo is my own creation with the Little Gems + leftovers + miso ginger dressing.
Great to increase leafy greens intake
I am so glad I joined this challenge. I have been eating plant based-ish for a couple of years but it was becoming a little routine and boring for me. I loved exploring the different salad ideas and discovering my likes and dislikes. Oddly enough I found that even though I love carrots in a soup or roasted I do NOT like them in a salad. My favorites were the salad with berries especially Strawberry. Thank you for showing me that fruit with greens is a good flavorful option to get more plants that n my diet.
Great Motivator!
I must say having this experience was exciting an refreshing to try all different kinds of salads plus I got to add a few of my own ideas in the mix. This one I really enjoyed doing this & I love salads it made it more exciting to try this challenge. I will keep using the salads for fun and eats. Keep on Rawkstaring !!!!

New start
I live in the UP of Michigan and it is still very much so winter here. What I liked about this challenge is that it brought a little taste of summer into my home. I loved the Bright Berry Salad, even the grapefruit. Also, the Strawberry Arugula salad was delicious. I really liked the crunch of the almonds. This challenge has gotten me excited to get out and work on myself to be better physically and mentally. Thank you
Loving it from the UP
I am a vegan and was so happy that the recipes were vegan friendly or very easy to make vegan (like subbing agave for honey). For me personally, the salad challenge forced me to eat salad when I would usually not. I live in the Northeast and tend to eat salads only in the warmer months. By switching to salad from my usual winter comfort meals, I lost 5 pounds! The recipes, especially the dressings, were delicious! Thanks so much for creating these recipes and sharing. The Kale Caesar and Potato Salad were the ones that surprised me the most on how simple they were to make and “restaurant quality” yummy!
Rabbit Food Redeemed
After having my son I slacked on exercising (pretty much stopped completely and I had him literally right before covid). I was eating healthy but not at the same level I was beforehand. I focused more on making sure my son and husband were eating healthy and I forgot to take care of myself. I was so tired that it was easy to just make sure they were taken care of and even skip meals due to me not wanting to use the energy. This challenge reminded me of needing to think of myself. It’s easy to forget your own needs and now I’m making sure I’m taking care of mine too. It challenged me to create a routine again and I’m so happy.
Best decision
I love salads. Always have, always will. But I do get into a rut sometimes with a mixed leafy green salad. But this challenge gave me a whole lot of different options, variety, and unique dressing recipes, too. So many of the salads were amazing, but my absolute favorite from this challenge was the carrot salad, as it is so different from my usual repertoire. Kids loved it too! I also enjoyed the plant based proteins (cashew cream and walnut taco meat, I’m talking to you!) Thank you for this challenge!
All these salads and still not a rabbit!
I have eaten more variety of foods during this challenge than I ever thought possible. Some foods that I have always stayed away from have become new favorites. I especially enjoyed making my own dressings.
