Even though I fell behind in the posting of my 10-day salad Challenge, I still completed it. I loved how it feel. It was what I needed to give me a boost. Wintering in Mexico promotes a healthy lifestyle which was complemented by this salad challenge. Hubby was a reluctant participant until he tasted the salads now heโ€™s the biggest supporter! My biggest learning curve was making my own dressings. These were all delicious & surprisingly easy to make. No more Kraft dressings for me!!

I love Simple Green Smoothies and have done 2 of the cleanses, so I was totally on board for the salad challenge. I thought I knew a lot about plant based eating, but of course I learned some awesome new skills that I will bring with me. I liked all of the salads, and LOVED the majority of them. But the big winner was the vegan kale Caesar. That dressing!!! That was AMAZING!! Thanks again for this cool idea. Itโ€™s a lot of prep but I love being able to buy and make the salads myself, over and over. And I feel great, too.

I loved this challenge. Iโ€™m trying to eat healthier due to some health issues. I have always loved salads but didnโ€™t know how to mix and match all the different fruits and veggies and what dressings to use with each one. I loved the 10 day salad challenge! The recipes are delicious and have a great variety of vegetables. I thought I would get tired of salads for 10 days, but they are all so different. The shopping lists and prepping tips make it so easy to stay on track. I also love the flexibility of making it a meal or a side. After 10 days I have a ton more energy and even lost a few pounds. My favorite salad was day 1 because I loved the strawberry dressing! I will definitely be adding several of these recipes to my regular menu!

I really enjoyed this challenge. I used to eat salad everyday, but since my son was diagnosed with cancer, we stayed away from raw food. His blood counts are good now, so we all enjoyed new recipes! And not only eating salad, I loved going outside and did 1 mile walk everyday. We live on a busy street, so we barely go for a family walk. Thank you for making this combo challenge!
