Salad challenge
Living in a rural area with limited access to organic produce has thrown a wrench in my usual eating pattern. I used the challenge to inspire me to try harder – and that I did. Though it took a lot more time to acquire the groceries I needed it was well worth it. My sleep digestion and energy level were all improved over the last 14 days. (I started early and repeated some salads). My favorite was the taco (amazing flavor) and my least favorite was the strawberry mixed greens (too wet). Others that ranked high were potato lemon arugala sweet and Crunchy and crunchy carrot. My biggest win was that the hubby was asking me daily “what salad are we having today” 🙂 Thanks Jen and SGS!!!
Just what I needed
This challenge encouraged me to use new ingredients that I had never even heard of before as well as the healthy classics that I love. I really enjoyed the taco salad and the potato salad!! I loved how colourful flavourful and interesting all of the recipes were. They weren’t too difficult and it was fun for me and my husband to do together. It was also super sweet to hear about others journeys and tips. We also added in a few runs to get our physician exercise which made us feel even better. It was a great challenge!
Definitely expanded my horizons!
This salad challenge was so fun! I’m used to eating the same old boring salads for lunch and needed a change. This challenge gave me some delicious recipes that sometimes took me out of my comfort zone which was a good thing. I also was eating a salad for lunch and then another with dinner. It was easy to incorporate into my families meals and my kids enjoyed some of them as well! Thanks Jen and team for a super fun challenge filled with lots of yummy salads!

Fun Challenge
All the salads in the 10 Day Challenge were beautiful flavorful quick and delicious. The dressings are what put them over the top. Many were filling enough to be a meal and others are great as a side or healthy snack. I highly recommend this challenge.
Salads that are delicious
I enjoyed each salad especially the vegan potato salad. The shopping lists made it so easy to follow. Each salad was easy to make and was suitable to add your own spin.
Easy and delicious!
I joined the challenge to learn new recipes for healthy salads and tips/tricks to making preparations easy and quick. This challenge fulfilled all those goals. There wasn’t any salad that I hated and many favorites. The different dressings have given me ideas for other uses. The citrus based ones were very refreshing and I can see these being used on cooked veggies, maybe even on pasta or rice. I had never put beans in a salad before,(other than taco salad) and I was surprised that I enjoyed the flavor. These salads will stay on rotation in my household.
Greens everywhere
I enjoyed this challenge; it gave me some new recipes to use in my food rotations. They are quick and easy to make and easy to adjust to my personal taste. Thanks!
Salad Challenge x 10 days
I liked the challenge and recipe ideas. It would be great to have had a grocery list up front (sorry if you provided one and I missed it). I don’t live near a grocery store, so it wasn’t feasible to run and get the ingredients that I didn’t have each day. Therefore, I didn’t participate in making the salads daily and commenting on them.
Like new recipe ideas
I love all of Jen’s challenges! The recipes are absolutely delicious and it motivates me to use fresh ingredients in different ways. I so appreciate the plant centric approach, not to mention the support and positive vibes I get from the challenge and from following Simplegreensmoothies.com. Oh, and the best part is that these short challenges are free!
The best challenge to jumpstart new healthy eating habits!!!
I am definitely not a salad person, but I am training for a hundred mile race at 52 and I need everything to be in my favor. I joined this sceptically but now. I am glad I joined. The healthy dressings and ways of adding protein and fat to make them more of a complete meal are very helpful. I will definitely be referencing the recipes in the future. Thanks for organizing this.
