Excted!

Although I love salads, I get tired of them rather quickly! However, that is something I cannot say about the 10 days salad challenge. Each salad was unique and the dressings were fabulous! I was happy when I had leftover salad for lunch seven of the 10 days! There were some new additions to salads that I had never considered before, such as fennel, nor had I ever made cashew Cream but it’s certainly a recipe that I will have at hand. I’ve discovered I can really enjoy salad daily without getting tired of them! My favorite – and my family’s – Was the kale Caesar salad. I learned a new trick to soften kale and it seemed to take out a little at the bitterness as well. And the cashew garlic aioli tasted very similar to the dressing on a regular Caesar salad. I think I can eat it every day! I’m so glad that I joined this 10 day challenge not only for the salads but also for the Physical activity motivation. This is a challenge I would love to do again!

Healthy Living

You work hard and get to the finish line and then wish it had not flown by so fast. This Challenge has made me stronger smarter and feeling great. Besides losing 2.6 pounds (through Day 8) I can tell I have lost inches which to me is the most important. I can tell I am stronger in my walks – hills that used to make me breathy are being conquered. When I started this challenge I was walking about 3.5 miles a day and sometimes 5 miles on a weekend day. I was probably walking 4 days a week. My average pace per mile was under 19 but not by a lot. I ate salads and literally kind of got bored with them making the same thing just about each time – like “oh let’s have a salad”. This challenge has energized and inspired me to keep going with enthusiasm. The recipes and the overall group have been solid. I have found new items that I love to eat learned how to massage kale and had fun looking at all the shared ideas. I would absolutely do another challenge. My husband and I are slowly changing old habits drinking less exercising more and trying new food options. I am going to try and make a plant-based diet more of a part of my regimen each week. The recipes make it very easy to add a protein for my husband and I love that piece of it. It was also fun to plate the food. I am a firm believer if it looks pretty it is probably going to taste wonderful. I ended up pushing my miles to an average of 4.74 per day and my average pace to 17:33. I now have a great base to maintain and push forward; just keep moving! The challenge got me organized and helped in every facet of my day to day. My husband was so supportive and did some walking with me and a great deal of chopping for me. I can’t say enough about Organic Girl Run the Edge and Simple Green Smoothies; you are all terrific individually but together you really do RAWK!

Green Eating

I enjoy these challenges to add one thing to your daily meal as it is less overwhelming and time consuming than a full meal plan. I like all of the salads. Some were amazing and I’ll add to our regular meal rotation. I found the recipes easy to modify for my taste or something I’m trying to use up. But I really challenge myself to try something new. Who knew I liked fennel!? And massaging kale is a game changer! Thank you for making this healthy and fun!

Gorgeous Great Greens!!

I enjoyed having a different salad recipe every day, and I appreciated that there were a variety of types of salads, not just lettuce. The downside to these recipes for me was that they relied on oil. Oil is not a heath food, and it was hard to make some of the recipes without it. Some of the recipes were easily converted and will be on my regular rotation (Delicious strawberry-basil dressing, I am thinking of you). It was nice to know that I wasn’t alone making the salads, and I enjoyed reading some of the comments below the recipes.

Salads for Life

I absolutely love salads but hate making them on my own; I always feel as though I use the same combination of vegetables and dressing at home. When I go out to eat I am amazed at the salad varieties and often wonder why I don’t ever think to make different salads at home. So when this challenge came out I jumped at the chance to expand my repertoire. I became a fan of Simple Green Smoothies the beginning of this year just after receiving a Vitamix for Christmas. Like salads, I felt out of my comfort zone with smoothies. Until I found Simple Green Smoothies. When I saw the salad challenge, I knew I would get delicious, healthy salad recipes that I would make over and over, just like the winter smoothie challenge. And I was not disappointed. Thanks again for another wonderful challenge that helped me bring tasteful ingredients into my kitchen!

Rawking the salads

I am a salad gal, but definitely got out of my comfort zone with these 10 salads! The Healthy Taco Salad was my favorite, but I loved the Lemon Arugula and the Sweet and Crunchy were close runners up! I definitely have 10 new salads in my rotation, helping me eat more veggies!

Greens for good

I am new to eating plant-based meals and smoothies, but enjoyed it so much, it is now my preference! Thank you for introducing me to so many great salad recipes. Previously, I didn’t know where to start and where to find such great ideas to incorporate this into my weekly menus. You have given me that information and confidence. I am still learning all the new ingredients, but they are great tasting and so visually appealing. I had two favorites, the Bright Berry Salad and the Strawberry Mixed Greens. I feel my greatest accomplishment these 10 days is being introduced to eating green and loving it. Everything new starts with the first step. Thank you for helping me do that.

Great Kick Start!

I LOVED this challenge! Daily salads are my thing. This challenge provided an awesome variety of different types of salads. This was perfect for me, as I branched out and thoroughly enjoyed the variety. The Strawberry Mixed Greens, Strawberry Arugula and Bright Berry Salads were amazing!
