I have been doing the smoothie challenge for 2 years and was very excited to sign up for a salad one. My partner and I did it together and for 10 days we had it as our lunch. My goal was to try new recipes. Since then the lemon and arugula (my fav) was the salad for 2 other evenings. My partner loved the taco salad that in fact was out dinner. Amazing new recipes
The salad challenge was fun! I love salads and am always looking for new ideas to change it up. The support group made it fun to see how everyone made their salads and what they served with it. Id definitely do it again! Favorites were the taco salad and the strawberry basil salad!
Salad Challenge Fun!
I learned that I am able to make my own dressings and like them. It is easier than I thought. The secret for me was buying quality olive oil.
Going green
I’ve always thought of salads as something you just “throw together” so I really didn’t know what I’d been missing! I’ve almost never followed a recipe for making ANY meal much less salads so getting to be part of the Simple Green Smoothie 10-day Salad Challenge was really special for me!! I’m also a bit of a luddite and shy to boot so after decades of having a Facebook account the pictures of the salads I made this past week were more posts than I’ve done in all twenty years of having Facebook combined. (Embarrassing I know but what a great way to get my toes wet eh?) Ok it must be said – the salads were SO SO yummy fun and nutritious – and I can’t wait to make them all again starting tonight! There are even some great prizes to win just for participating and while I have my fingers crossed for some good luck in that department in truth I have already won because I’m walking at least a mile a day and making salads daily (usually the night before – so unlike me!) and these great new habits are quickly changing my life for the way-better! Taking care of my health and wellbeing has felt overwhelming these last few years and I have gotten pretty out of shape so I doubly appreciated the genius of committing to something manageable which the 10-day Salad Challenge truly is and combining it with the Walk-a-Mile challenge also do-able! I love the option to keep going and look forward to checking out all the other yummy treats Simple Green Smoothie has in store for me! In fact it could be called the “10-day Salad Easy” because Simple Green Smoothie has thought of everything! There are recipes shopping lists guidance mutual support accountability and inspiration! And it was all complimentary! WOW -what a gift!! Needless to say I was very impressed and really enjoyed the event. (Psst…It’s way more than a salad challenge!!). Thanks to the folks at Run the Edge for providing the forum to be accountable to track my miles (23.77 big ones!) to VitaMix who make the BEST blenders in the world and Organic Girl who made all my salads extra scrumptious! RAWKIN’ the Casbah!
This was a great challenge! I was stuck in a salad rut but this has opened my eyes to how varied and wonderful a salad can be for a meal. I never had arugula or fennel before this challenge and I love them both! The dressings were easy and delicious and i have discovered I have so much more energy eating this way! Bonus: I lost 2 pounds!
Pure salad bliss!
This is a great challenge. I found myself eating less as these salads are so filling. As healthy as they are they taste so good and I’m in love with most of the dressings. I will be making a lot of these salad in the future. I also fell in love with arugula during this challenge.vi look forward to day 10 the strawberry arugula salad. Shopping for the produce was also fun. I have lots of left overs so I can continue salads as to not throw away any of these good veggies.
Easy peasy healthy salads
I do love a good salad but I get stuck in my ‘go-to’ ruts. The information provide with this challenge opened a whole new world of salad possibilities for my spouse and I at a time when we were looking to add more veggies to our diet. I love love love the walnut meat substitute! Didn’t even know it existed. The recipes are easy to follow and modify if that is desired. I’m looking forward to coming up with some recipes of my own from this challenge. Thank you!!!

Smooth smoothie challenge
I liked the challenge ok. Some of the items were hard for me to find. I also don’t like many foods so if I couldn’t find something or didn’t like what was on the recipe I substituted.
Seriously Salads
I loved how well this challenge was set up. The support from the Support group was great and I love seeing how other people made and served their salads. The recipes were easy to make and so much better than the salads that I normally just toss together right before dinner. I gained some great tools for planning ahead to ensure that my daily salads are exiting and won’t bore me into leaving them off the menu. I’ll keep these salad recipes in my favorite binder so I can keep them on rotation. My favorite salad was the sweet and crunchy salad. I had it for lunch then I made another to bring to a friend’s bbq on Sunday. It was a hit! Now I can up my salad game at home and at parties! Thanks to the creators of this challenge for setting up something so fun and helpful.
Beautiful salads and wonderful support.
I joined this challenge not knowing how much I would get out of it, but hoping for more salad ideas. I had participated in a smoothie challenge before which was good so I signed up for the 10 day salad challenge. Wow! Both husband and I have been pleasantly surprised by every salad recipe. I also loved that they weren’t all “green” salads and the potato salad was one of my favorite, because I never would have made that one my own. All the dressings are delicious and even though neither of us are big on fruit in green salads, the mix was always good and the strawberry vinaigrette was amazing! If you aren’t sure about signing up, just try it! The challenge also had a Facebook support group that was amazing and very helpful if you had questions or could not find an ingredient. This was just what I needed to get out of my winter food rut.
Creative, delicious, easy and supportive!
I enjoyed this challenge. And it WAS challenging somedays because I had to modify some recipes. For example, I am not eating high shade veggies, so I used jicama instead of potatoes. The rest of the ingredients were awesome. My salad was very good, a little crunchy (I needed to cook the jicama a little longer), but I enjoyed it! I plan to make it again and it will be even better. I am also not eating sugar or flour. I substituted Chickpea pasta for the pasta in the Healthy Pasta Salad and eliminate maple syrup, honey, and all fruits except berries. My favorites were the Strawberry Mixed greens and Strawberry Arugula Salads. I loved the dressing for the Strawberry Mixed Green salad! I posted a picture of my salad on Facebook. I have some mobility issues, but I participated in two of SilverSneakers’ 15-minutes online walks each day. I never got the email about the fitness tracker. But, I was able to increase my steps during this challenge. I appreciate the opportunity to participate in this challenge. I learned and used some new ingredients (tarragon, fennel) and recipes. The challenge also motivated me to move more. THANKS SO VERY MUCH!
Plant Heaven
I love fruits and vegetables and salad in general but I lack creativity with food combining, This challenge helped me think out of the box and enjoy such interesting salads that I would not have dreamed up on my own! I really loved the walnut taco meat as an alternative to meat.

I love salads, and this challenge was a great opportunity to try new salads. And, my husband dislikes salads, low and behold…he really enjoyed almost all of them
The grass IS greener
I loved the variety of types of salads and dressings. Salad isn’t just always about lettuce. We found some new family favorites, the potato salad and the healthy pasta salad.
Great variety
I loved all the salad recipes! My favorite was the strawberry basil dressing, so light and refreshing. It’s going to be a staple in my fridge for salad. Having the recipes will keep me on track to get back in favorite jeans!
