Superior
As a confirmed salad lover, I was so excited to see the recipes for this 10 day challenge. While I enjoyed each one, there were some that I’ll want to make and eat again and again. My absolute favorite was the Bright Berry Salad. It is just a beautiful salad with all the colorful berries and grapefruit. It’s the perfect end to a meal. The healthy taco salad was another favorite. Who would have believed that walnuts could be made to look and taste like taco meat? Such and explosion of flavors. The sweet and crunchy salad was so tasty and filling. I absolutely loved the dressing and used the leftovers on another salad. The healthy pasta salad was tasty and I’m already thinking of other combinations of veggies to use the next time I make it. I like that it was light and not all “goopy” with mayo. As always, Jen and staff made this challenge fun and were always there giving helpful tips and suggestions as well as positive and encouraging comments. The printed book with the recipes was high quality and made it easy to access the recipes for each day. I highly recommend this challenge. You don’t have to follow it perfectly to achieve results. Another thing that makes this challenge so enjoyable is reading the posts from participants and soaking up all the positive and supportive feedback.
Now That’s What I Call a Salad Challenge!
I was looking for a way out of a winter salad rut and was happy to find new ideas that I could adapt with how I eat. I did not use many of the oil based dressings but I did take the raw ingredients to get the flavour combos where I could. I really appreciate the work that goes into creating recipes and running challenges and I look forward to following more from simple green smoothies in the future. Thanks so much 🙂 🥬🍅🥬
Greens are not just for bunnies
I am not a salad eater (hubby is) This was a great way to introduce more salads into my diet! We both got so much more into our diet! I now have several salads I will eat and give hubby different taste and texture from the normal everyday salad! This was a funny and easy endeavor to accomplish. I haven’t made todays yet but is ready to be made!! Looking forward to eating more salads….. I never thought I’d say that!
You just might find you love salad
The 10-day Salad Challenge opened my eyes to more creative and healthy possibilities in making salads. The ingredients were readily available. The dressing recipes enhanced the flavor of the salads unlike store bottled dressings over powering and covering up the taste of the salad. The salads were easy to prepare and were tasty. It was a great way to transition into spring. My favorite salad recipe was the HEALTHY PASTA SALAD. It had a great Mediterranean vibe! The pasta was not the central ingredient but just enough for the rest of the ingredients to shine! Thank you so much. I hope you do this challenge seasonally!
A Real Eye Opening Salad Eating Experience!
Delicious foods to the palate and the eyes. I learned some new ingredients to add to my salads that are not only tasty but also healthy.
Colorful eating
4 only because I enjoy arugula but not as a base for a salad. I used Spring Mix instead. I never know what to do for dressings because I like to keep in simple and these are pretty simple for the most part! Will definitely keep these in mind as the weather continues to get warmer!
Great change from my usual salads
I enjoyed being encouraged to continue the challenge each day. And I look forward to enjoying more salads!! I participated in the 2021 Mile challenge last year and loved the feedback from your tracker!! Thank you.
Glad to return to a challenge
I enjoyed making these salads. I did email today a list of my favorite salads. Once you eat these salads, you get full. The preparation of each recipe is very easy. The dressings were wonderful. I really like the way you provided the list of shopping and preparation method.
Wonderful list of healthy salad for healthy life style
I joined this thinking it would be just some fun mix ins for salads and I’d have a few new ideas. Wow! It was much more than that. Seeing the recipes for different salads, I kept thinking “I never would have thought of that!” Definitely will be using some of these recipes after the challenge is over.
I Never Thought of That
After 10 days, All I can say is YES to this new way of eating! I have lost weight and noticeable inches. Clothes fit better, look better. I gained energy and as a result sleep better than ever. Not waking up during the night is a major improvement, has a huge effect on my wellness and happiness. Not only did I benefiT from this challenge, so did my spouse. For us, these large salads were not only tasty, they were filling. For most days, we did include some additional proteins such as fish, chicken breast and lean beefy. The taco salad was my favorite. I love black beans and the walnut meat combo. It was so easy to make. The cashew cream recipe is a “keeper” too. My old Vitamix made preparation and clean up easy. I use it all the time for fruit and Organic Girl green smoothies. These new recipes were all great, saving every recipe. The challenge was a good reset. Now is time for a lifestyle food change, I’ve already come up with some of my own modifications for new healthy salads and smoothies. Thanks for the challenge. ❤️
Lost Weight and Inches, Gained Energy and Better Sleep
I found the challenge to be very enjoyable. Was nice to try new recipes that add to my playbook of foods to have more regularly.
Salad days
I actually made most of the salads even with a very hectic schedule because the recipes were not complicated and could be put together quickly. It is really hard to say which one was my favorite. I really liked the Taco Salad, Potato Salad and Pasta Salad. These were really good and filling after hard workouts. I have been a vegetarian for 40 years and totally plant based for several. I had never made Walnut meat or cashew cream before. I will use these recipes again for sure. The best part of this challenge is that my husband also tried many of the salads and says he is feeling more energetic lately (of course he is not connecting this with eating more salads). I am not saying a word. Thank you! I am so happy I took the time to participate.
Greens are Great!
I have always eaten salads, but as more of a health strategy than for pleasure. But Jen’s recipes made every salad a delicious surprise! The creative dressings (I particularly liked the cashew cream) and the clever meat substitutes (like walnut “meat”) really made it easy to switch to a plant-based diet and not get bored or not feel full after eating. And I lost weight and my cholesterol went down in the process, so it’s a win all around! 😉 Thank you!!
Dressings for Success! (or how I learned to like salads)
I have been eating the same old salads and healthy meals for as long as I can remember. This challenge gave me some new recipes to broaden my horizons on some new healthy meals to try. My husband is NOT a healthy eater especially when it comes to vegetables so he got excited thinking I was trying something fun he could eat but was sadly mistaken but I was very much so the opposite! Mixing it up felt like I was eating a whole new diet!
New recipes for my Husband to cringe at 🙂
I loved this challenge because it got me back on track with healthy eating. The recipes were easy to follow and each one left lots of good ingredients to use again. Eat salad was different and there was a good variety within the 10 days. My favorite salad was the potato salad, it was a clean and fresh. I usually don’t like potato salad because of all the mayonnaise. This is one recipe I will pass along to others. Now the real work starts, continuing eating healthy.
