I did this challenge with my husband who is allergic to dairy and nuts. I was able to make easy substitutions and it was a great experience! It was the first “challenge” I ever made it through and I think that was because it had the ingredient list clearly laid out it was obtainable with just switching one meal a day and I was interested in trying all the recipes. Even though they weren’t all our favorites I was glad we gave them a try to test out those flavor combinations. It was also nice to have 10 days of not having to plan too much for dinner which was also a HUGE incentive for me to try this out. Overall I enjoyed it very much and looking forward to whatever challenge Simple Green Smoothies comes up with next! 🙂
Definitely worth a try!
This challenge was so fun! I highly recommend your body will thank you for it! It was so fabulous to have 10 days of meals and 2 weeks of grocery lists I didn’t have to think about or plan myself. I generally eat a lot of meat but with these recipes I didn’t miss it at all! Thanks for such a healthy engaging experience!
Holy Salad!
I am a pescatarian so I eat a lot of salads and grains already. This challenge opened up a lot more variety to me. All of the dressings will be ones that I make over and over since they were all delicious! Interesting combinations and taste experiences. RAWKIN’ Great challenge!
I really enjoyed the variety of salad recipes and the encouragement to keep up and make the salads and review them. The accountability was encouraging and motivating. My favorites were the potato and pasta salads. I loved the lightness and flavor of these along with incorporating lots of veggies and great dressings. I’ll be sharing the salad recipes with my children. I’m a huge Vitamix fan and make smoothies daily for my husband and 92 year old mother. There is no better blender out there for smooth smoothies! Two out of my four children have a Vitamix and the other two are saving up for one!! All have tasted my great green smoothies!! I love that many of our dressings used the Vitamix to blend the liquids. So versatile! Thanks so much for the great Salad Challenge!!
Adventurous eating
I loved this challenge! My mom used to make the same boring salad with the same boring dressing whenever we went to people’s homes for dinner which was a lot. She also used to tell me to stop being lazy and walk around the block. Thus my now-changing dislike for salads and short walks. The salad portion of this challenge was worth it for the dressings alone – yummy! I love adding a dash of maple syrup or pureed strawberries to make a dressing pop. The lemon dressings are divine. I loved the variety of salads from potato to pasta to kale. The taco salad with “walnut meat” and cashew cream is my new favorite salad but most of the others have also made it into my recipe box (I have an actual box with little recipe cards). The Support group was a fun place to share and get ideas about things like making kale taste better (rub it in seasoned olive oil). The walking/running portion of this challenge was right up my alley since I used to be a walking mentor for half marathons and did the 2,020 in 2020 Challenge with Run the Edge. I figured out that the walk to and from our local health food grocery store is exactly 1.1 miles – a perfect way to walk and rawk at the same time!

A great challenge to experiment with some salad recipes and ideas that are out of my comfort zone. Honestly, they weren’t all to my liking so I didn’t try all of them. The potato salad was great!
Spring Salad Challenge
All of the recipes are nutritious and satisfying! My favorite this time was the Lemon Arugula Salad because I loved that citrus and fennel combination. I enjoyed the recipes as always and again, the support from the Rawkstar community through posts of their salads etc. made this a fun challenge. I’ve now gotten more yummy recipes to add to my meal rotations and I’m loving vegan eating!
Smashing Salads!
Found some great recipes to had to my daily routine to introduced healthily and interesting choice to my boring routine. I am amazed had how ingredients that I would never think or consider putting together work for some magical tastes Thanks to all involved for your time and knowledge Much appreciated Terry King
In lightening
I joined the challenge in order to up my repertoire of salad making, and my expectations were exceeded. The various salads were all very good, and 4 or 5 were outstanding. Little did I know I would be testing the waters with my husband for a more plant based diet … he really enjoyed the 10 days. Other benefits were coming off a weight loss plateau and reducing unhealthy snack cravings. I believe I am a bit more clear headed, too.
Surprised by Salad!
I enjoyed the variety of flavors and mix of fruits and vegetables. Generally, I felt full and satisfied for several hours after eating. My husband, however, often felt hungry an hour or so later, and he didn’t find the fruit based salads as satisfying. I plan to continue to make several of the recipes regularly but may need to add something on the side for my hubby.
Full and Fun for This One
I give this 10 day challenge 6 ! Even though I don’t always eat plant based this has been very fun. My favorite salad is the Taco salad. I’ve explored new ingredients that haven’t been in my kitchen before and I even lost a few pounds!
Fun Salad challenge for all!
What a wonderful challenge. I learned many new recipes and convinced my husband that we could eat this way all the time. I also, lost two pounds, I once again fit into my jeans and I feel much better. I’m not as tired and feel energized knowing that I’m doing good for my body. Thank you.

Who knew salads could be so much fun? This challenge showed me that boring salads are not necessary! Have fun by mixing up ingredients, using homemade dressings, and changing it up every day. The recipes provided allowed me to do just that. I highly recommend trying these recipes!
Awesome Challenge!
This challenge was a really great experience! I’m in the process of becoming more aware of what I eat, and I’ve been trying to eat more whole / raw foods. But before this challenge I didn’t really know how to do that practically or affordably. Now I feel equipped with a whole new set of tools to accomplish my immediate nutritional goals, and hopefully to implement some lifelong changes. My favorite aspects of the challenge were the variety among the different recipes and the link to tips on meal prep. The separation of the shopping lists into two sets made the set up easy to follow. My favorite recipes were the taco salad and the lemon arugula salad. (Also—walnut taco meat is AMAZING!!!) Thank you!!!
Whole Lotta Lettuce!
This was such a fun challenge, thank you for creating it! Not only did I get to feel good about what I was putting in my body, I also had the pleasure of knowing this way of eating helps the planet too, since it is more sustainable and less a source of waste than the SAD. I recommend this way of eating for anyone who wants a simple way to help themselves and be kind to the earth.
