Springing into Spring
Each wee, my partner and I would do our grocery list and the same recipes kept coming up. This challenge was great to change up our meal plan while staying healthy. I really enjoyed the Facebook forum to hear about what other challengers used for alternatives. It allowed my partner and I to experience new tastes! The one thing I also really liked is that I find many times when you try these challenges or plant-based recipes they often are really spicy. I am not a fan of spicy. So I liked how the recipes were full of flavor without needing to be spicy. Two things that we got out of this challenge that I did not anticipate. This challenge was a great way conversation between my partner and I. We both like to cook; so trying new recipes allowed us to talk about what we liked and what we might have changed. I got to know my partner’s thoughts and tastes more and get to know him better. The second thing I did not anticipate was how easy it was to clean up. Many times after we cook we have piles of dishes. With these salads (and helped already having a vitamix) the cleanup was often times 1 to 2 items. We both had room in the kitchen to help bring the meal together which the prep and clean up saved us both time. And we both got to enjoy doing it together. Unlike most challengers we actually did our salads for dinner so we could enjoy our meals together. We both really liked having that light meal before winding down for bed. We both felt better the next morning. Overall – we loved the experience and would absolutely want to try the next one! This was our first time but this won’t be our last! Thank you so much for putting this together.
Great Couples Challenge – Something to Talk About
I love how this challenge gave the resources and recipes! It didn’t just say do this. It gave all those tasty recipes as well. It helped me to change up my boring everyday salad. I really enjoyed the healthy taco salad option. It had lots of flavor and colors to help keep me motivated
Healthy jumpstart
I’m feeling proud of the fact that I introduced more greens into my diet every day. I increased my miles walking every day. An accomplishment that I can be happy about. I couldn’t have done it without the challenge encouraging me. I have a long way to go to meet my weight loss goal but I am on my way!

I loved the recipes. They were easy to prepare and delicious. The ingredients were easy to find and quick to pull together. My family liked the recipes as well. It’s always good to get new healthy recipes to add to my weekly rotation.
Easy and Delicious
10 new salad recipes for 10 days. And now that my fridge is full of fresh foods I am going to be eating the leftovers for another several days. Some of the recipes I’ll definitely utilize again and some I will tweak to see if we like enough to make them regular meals. Way to shake up our taco, wing, and burger rut!

I enjoyed the 10-day salad challenge! It pushed me out of my comfort zone – I explored areas of my grocery store I never noticed before. My favorite recipe from the challenge was the Kale Caesar Salad!

I like how all the salads were quick and easy to make. It was nice to be able to put a salad together when I didn’t have time to cook a full meal.
Easy, quick recipes
I absolutely love this challenge and how it took the complexities out of eating a more plant based diet away. The recipes were delicious and not overwhelming and made plant forward eating delicious! Here’s to a more sustainable, health forward future!
Fun and simole
I had so much fun expanding my salad repertoire. Such a great way to greet the spring and all the lettuce starting to pop up at the farmers market. Some of my favorites were the strawberry mixed greens, taco salad, arugula salad and the pasta salad. I’m going to add these to my regulars.
Perfect way to greet the spring
I love salads and eat them quite often. However, I have never wondered far from the usual four or five standard recipes. This 10 day salad challenge has been awesome!! I have so many new favourites now. The ingredients are minimal and affordable 💕 I was so pleasantly surprised at how well combinations of ingredients tasted. For example the fennel and arugula or black olives in potatoe salad! All of the salads and dressings were easy and colourful and made just the right amount 😋. I especially liked the strawberry dressing on our first day and the beautiful carrot crunchy salad!! I need to get the book! Thank you for sharing 🙂

sensational salads
I am so happy I decided to do this challenge. I have been wanting to eat better, exercise more and just feel better. This challenge really helped inspire not just myself, but my family to engage in better choices for our meals. We have been incorporating a smoothie every morning. We didn’t stay strictly vegan but made sure all of our meals were healthy and fresh choices. I personally really enjoy fresh vegetables and fruit, but I have never used these combinations. This challenge really opened my eyes to the amazing flavors you can achieve mixing all of these items together. The dressings were all very good. The combinations of the salads were just beautiful to look at as well as the flavors worked so well. No longer will I be eating the boring mixed greens with dressing. The only salad I didn’t care for was the taco salad. I believe that most people would love this salad. I’m just not a fan of Mexican spices. I will take the advice of the hosts of this challenge and give that salad another try by removing the cumin. Maybe I would then enjoy it. But I truly loved every other salad in this challenge. I have purchased the both the Simple Green Smoothie and Simple Green Meals. I look forward to living a better lifestyle.
