I love a good challenge! This challenge being 10 days was a good number – some challenges just last too long! I loved the variety this challenge gave – it wasnโt just green lettuce salads every day. Not only did I try new salad variations but some new ingredients! I also like how there were a lot of staple ingredients too so you werenโt buying everything new for each salad. I was very excited to get out of my comfort zone and try new recipes and will definitely be adding a few of these to the regular menu! My only complaint is that the printed PDF version was missing ingredients instructions and substitutions. And a few things were unclear which made it frustrating and altered the recipes. Overall I am happy with the challenge and would do it again!
This is just the kind of challenge that I love! I normally make salads every day as I’ve been a vegetarian most of my life. However I’m known to get into a bit of a salad rut and make the same thing over and over. This challenge was just the kick in the bum that I needed to break out of bad habits of monotony and shake things up a little with my greens. I love experimenting with new ways of creating salads. Thanks to the 10 Day Challenge I vow to never make my salads boring again!
I just loved the Salad Challenge! I didn’t get a chance to make all the salads due to life but I got a lot more greens in than I normally do and that was my goal. I will be repeating the 10 days because 1) I want to try ALL the salads and 2) just because the challenge is over doesn’t mean I don’t need the greens! The recipes I tried were delicious with the different flavors and textures. I enjoyed making the dressings where you know and can pronounce the ingredients. Everything was easy to make.
I entered the challenge mostly because I’ve been slacking on eating enough veggies lately. I love salads but mostly when I go out to eat. I just don’t feel like any of the salads I make at home are that ‘great’. They’re OK. I can honestly say that I loved all 10 of these salads. I was most surprised by two of them however. The carrot salad and the kale caesar. I thought they would be tolerable but not great. Both were fantastic and I would make again. In fact I had the kale caesar leftovers for breakfast today! I am adding 10 new salads to my arsenal now. Thank you!
Easy to follow recipes made them fun to prepare plus the shopping list just made it that much easier to follow. Summer is coming and I want to look my best. I am disciplined in walking at least 7 miles a day and by tweaking my nutrition this will make a powerful impact on overall well-being. Thanks for providing this challenge; letโs keep going!
Excellent experience with the 10-Day Salad Challenge! Not only was every salad a winner in our family, but we each walked away feeling like winners because of how we felt physically and mentally. We can confidently feel better about ourselves and our food choices. In the past, I thought making salad at home was too much work. This completely changed my mind! I planned dinners around salads and have no plans to stop. I am confident my family will be eating more green foods on a regular basis thanks to this fun, easy and super tasty challenge!
For ten days, I was able to “celebrate” healthier food choices and discover new recipes that I will continue to make long after this challenge ends. I loved it ! Thank you.

I already eat salads daily, so I entered this challenge with complete confidence that I could rawk it. I’d say there were two big things I loved about taking the challenge on: 1. It gave me some AMAZING new recipes, salads that I may not have constructed on my own. The lemon arugula was my hands-down favorite, but I’ll also be making the bright berry salad and the strawberry arugula salad on repeat now. 2. The community was awesome. As with all of Jen’s challenges, I’m inspired by the open-mindedness, the support, and the encouragement that I see in the support group. I’m so excited to continue adding the recipes from the challenge (and others!) to my regular repertoire … and to continue to eat more plants!
I love Salad! I’m always searching out new and interesting salad recipes. I loved the recipes and several will be keep in the rotation. I love how I feel when I incorporate salads in to my meal planning. It’s easy to be committed to salads, especially tasty salads that make you feel good. Salads, I salute you!
I loved the salads. At first I thought making the salads and dressings every day would require too much of my time, but because I took the advice on how to shop and prep some of the meals ahead of time, I actually enjoyed the experience. I loved making my own dressings since the store bought dressings have way too much sodium for my health. These salads were delicious and the Kale Caesar and Strawberry Arugula salads are my favorites, but I enjoyed every salad. I was also surprised how filling they were and at the end of each day, all I needed was a cup of tea and a glass of water or wine. I plan to keep making them instead of the boring salads I normally create every week. Thank you.
I love this challenge! Not only does every recipe have a beautiful photo to go with it, so I know if mine came out close to what it’s supposed to look like, they taste amazing! I don’t feel bloated anymore! Yay… So grateful for Jen and Team for all the great support, I’m on my way to a healthier me!
