I like how all the salads were quick and easy to make. It was nice to be able to put a salad together when I didn’t have time to cook a full meal.

I had so much fun expanding my salad repertoire. Such a great way to greet the spring and all the lettuce starting to pop up at the farmers market. Some of my favorites were the strawberry mixed greens, taco salad, arugula salad and the pasta salad. I’m going to add these to my regulars.
I love salads and eat them quite often. However, I have never wondered far from the usual four or five standard recipes. This 10 day salad challenge has been awesome!! I have so many new favourites now. The ingredients are minimal and affordable 💕 I was so pleasantly surprised at how well combinations of ingredients tasted. For example the fennel and arugula or black olives in potatoe salad! All of the salads and dressings were easy and colourful and made just the right amount 😋. I especially liked the strawberry dressing on our first day and the beautiful carrot crunchy salad!! I need to get the book! Thank you for sharing 🙂
I loved the variety as well as how organized the program was. From grocery lists, and tips to store salads and prep work. It gave me many new ideas for tasty delicious, healthy eating. I really appreciate how well it was done. Thank you so much!! Keep up the great work
I am so happy I decided to do this challenge. I have been wanting to eat better, exercise more and just feel better. This challenge really helped inspire not just myself, but my family to engage in better choices for our meals. We have been incorporating a smoothie every morning. We didn’t stay strictly vegan but made sure all of our meals were healthy and fresh choices. I personally really enjoy fresh vegetables and fruit, but I have never used these combinations. This challenge really opened my eyes to the amazing flavors you can achieve mixing all of these items together. The dressings were all very good. The combinations of the salads were just beautiful to look at as well as the flavors worked so well. No longer will I be eating the boring mixed greens with dressing. The only salad I didn’t care for was the taco salad. I believe that most people would love this salad. I’m just not a fan of Mexican spices. I will take the advice of the hosts of this challenge and give that salad another try by removing the cumin. Maybe I would then enjoy it. But I truly loved every other salad in this challenge. I have purchased the both the Simple Green Smoothie and Simple Green Meals. I look forward to living a better lifestyle.
I applaud the organizers of this challenge for getting me to eat my greens! Had it not been goal oriented, scheduled and dictated, I may not have stuck to the plan. I appreciate all of the extra suggestions, tips, ideas for healthy eating in the future. I have gained a lot from this challenge and not in pounds!
I decided to do this challenge because I’ve recently been dealing with heightened anxiety. My self perception made me feel horrible, and I knew I needed to do something. I’ve enjoyed other Simple Green smoothie cleanses and thought this could work. I loved it!! It’s hot again in Texas, and these salads were delicious and refreshing. My favorite was the Sweet and Crunchy salad. The dressing and crunch was great! I’m a texture person. This made me feel like I was eating something real. I knew with each mouthwatering crunchy bite, I was giving my body a chance to work at its highest potential. Thank you for making this cleanse! It’s been a great kick start to a healthier lifestyle.
I loved the challenge! Salads can be intimidating and when I try to make them on my own they are often on the bland side. Each recipe was simple and so different from the one before it. Will be coming back to these often!
I loved the salad challenge and enjoyed all the great recipes and particularly like that Jen shared options/substitutions for any ingredient we didn’t like or have. Definitely a great easy way to add more plants to our weekly menus!
I really enjoyed participating in this salad challenge. I wasn’t able to make all of the salads within the 10 days but I do intend to try them all. I participated in all 10 days of the fitness challenge. I really enjoyed trying new flavors. The walnut taco meat was fantastic! Arugula is something I never would’ve bought and it is delicious! Thank you for all the great suggestions and texture, flavor, color combos . I can’t wait to try the remaining recipes .
I was able to create new salads. Yummy!
I was skeptical that all these salads would be good. Some ingredients I had never tried before in a salad. I also thought of a salad as a side vs. a whole meal. Boy was I wrong. Each salad was a new taste experience. I loved the taco salad. No “dressing” – the cashew cream and the salsa as dressing were awesome. One of my kids suggested putting the whole thing in a wrap. This was definitely a meal, as was the pasta salad, sweet and crunchy salad, lemon arugula salad. The potato salad was a big hit….as were all the others. After the first couple of recipes I started to double what I made for the family because everyone wanted it for lunch the next day. My salads will never be boring again. It was fun to experiment with fresh new ideas and flavours.
I really liked the opportunity to explore cooking with veggies I don’t normally use, such as fennel bulb. I actually didn’t care for it much, but just trying it was fun and exciting. I loved the shopping lists divided into two weeks and doing the challenge with a group of people was motivational. I found that most of the dressings were too sweet for my liking, so I improvised along the way (e.g. skipped the maple syrup in the strawberry dressing). Thanks for putting the 10-day salad challenge together!

Since I am theonly person eating these salads and they make 2 servings, I have been eating one salad for two days (once a day). I have enjoyed the variety that I have eaten so far. I finally ate avocados. I enjoyed them to my surprise! I loved the salad with the barley in it. I have always just reserved barley for soups in the wintertime. It was a new experience to eat it cold and in a salad. Tomorrow I do the pasta salad. I look forward to that. I intend to do all the salads even through the 10 days are over. I have really enjoyed this challenge and the new combinations that you have given me. Thank you.

Loved the challenge!
It was my first time joining a food challenge and I wasn’t sure I could hold on. Some of the recipes were way out of my comfort zone… I asked hubby if he wanted to join me, because the recipes were for two and he surprisingly said yes. The salads were great, some combinations I wouldn’t have dreamed of, but they worked. Only one salad wasn’t our cup of tea (the carrot salad), but that wasn’t the recipe, that was us. I now can make a cashew cream an fell in love with kale. It was a great experience and hopefully other challenges will follow throughout this year.
