I loved most of the salads. There were a few that wasn’t my favorite. That being said I love the challenge and new salad recipes. It was fun to see other peoples twist on things. These salads were so easy and quick to do it was also very easy on my belly but still hitting all the flavor note that you would want.

Easy tools to stay on track
Honestly, I wasn’t sure about this challenge…not a huge salad fan. Signed up at the last minute and boy am I glad I did!! I’ve felt so great, slept really well and have not needed coffee!! Who knew plant based was a life changer….yeah, you knew!! HAHAHA I weighed just for the ‘halibut’ and BOOM 5 lbs down!!!! The prep and grocery lists so so helpful to stay on track!! Even my corgis enjoyed some veggies!! My big surprise was how much I loved cashew cream and walnut meat. Mind blown! Thank you so much for supporting me in trying new flavors and grasping that plant based eating is not so hard. Thank you ❤

I liked joining in with a group to improve my health. I don’t eat a lot of fruit or any grains so I had to modify most day, but it was still fun. Thank you. Carol
Great way to be healthy
I always feel better when I’m eating more veggies! Salad is a quick and easy way to get extra veggies and fruit! I love the dressing from the mixed greens salad, so so good!
Yum-O in the words of my 6th Grader
I have always enjoyed salads but this made me experiment outside my comfort zone. My favorite was a mixed green salad with homemade pickles and avocado. Everything was pretty much dang delicious. I literally ate some type of salad for 10 days straight!
Enjoy life and salad on
I love that Jen picked a huge variety of salads for the challenge. Something for everyone’s tastes and I can pick salads in the future based on what I have on hand, what I’m hungry for or whats on sale! My family loved the salad challenge too. they liked them as a side while I was eating them for meals. thanks!
great variety of salads to try
I loved this challenge, I have bee looking for new salads to try and I now have 10! they were all amazing I will be using them all regularly.
Salads galore
I loved this challenge!! It gave me the opportunity to try ingredients in combinations I never would have considered otherwise. My family enjoyed it so much that my son asked if we could find more salad recipes to try to keep going!! A lot of these salads are going to be staples in our meal rotation. I also liked the pairing with fitness as that is just as important as our food we ingest.
So much fun!
I can’t live a day without a salad, so although this challenge didn’t convince me to eat more salads, it definitely brought a refresh to my daily salad routine. For example, I normally don’t add fresh berries to my salads, I was also challenged to use more fresh herbs and use lemon juice more often (instead of vinegar.) The kale Caesar salad is my favorite and is definitely a winner in this challenge, so good even non vegans would fall for it.
Running on plants
I loved the challenge! I would usually do a big bowl of salad every day but that left me with a number of containers with left overs in my fridge. If I do it again, I will make sure to follow the volumes in the ingredients list. The best ones for me was the taco and the potato salads. And the strawberry dressing is also divine!
Eat your greens
I thought it was a great idea and it inspired me to not only try out new takes on salads but encourage my family to participate. We often had varying opinions, but I think that also was great to learn in terms of understanding that we all are unique and have different preferences. What a great way to change the way to look at salads: not only a salad, but could be a meal, or even a snack.
The salad adventure
It was something fun to enjoy fresh healthy meals and recipes. Having a designed recipes really helped to keep me on track and try out ingredients I wouldn’t have normally tried.
Smoothly time
It’s been an awesome 10 days!!! I’ve been walking with my family and even enjoyed making the salads with my family!! My 12 yo son was especially inspired by this challenge!! We’ve made future goals of repeating salads from the challenge at least once a week. And we are continuing the at least a mile a day as a family!!! This was just the challenge I needed for my family and I to kick off warm weather and build our relationships! Thank you for this challenge!! I’d recommend it 10/10
Fun family challenge
Nothing says spring like crunchy green salads. Some of these salads were new to me and some I have come to love through other challenges/cleanses and Rawk the Year. I’m amazed at how much I enjoy arugula these days after being turn off by the strong taste the first time I tried it! I do think the Lemon Arugula is my favorite of all these yummy salads. I will definitely be remaking several of these!
Fresh spring greens!
I really liked the different recipes for all of the salads. I really liked the Kale Caesar Salad. I had to share with my son since Caesar salad is his favorite. For work I would switch it up and put the salad into a wrap. It was also easy to put the salad together after a quick walk after work. Pairing the shopping list with the recipes made prepping the salad so much easier. I’m looking forward to doubling some recipes to have for the whole family rather than just my lunches. The whole family is looking forward to the potato salad.
Tasty challenge
Love juicing. It feeds my needs and my soul. Consuming healthy foods is my goal daily. It makes my life easier because I know that juicing is healthy for me and will help keep me well and feeling invigorated. Learning new techniques and trying different things to juice is fantastic. It is amazing how creative one can get with juicing to stay healthy and yet enjoy the beverages.
