I have done a few of Jen’s challenges, I loved this one. It helped me meal prep healthy lunches for 2 week and added in so many new recipes to my rotation. The Kale Caesar, Healthy Taco Salad, Healthy Pasta Salad and of course the Bright Berry Salad were my absolute favorites. I could not pick just one. By meal prepping even just the salads for the week it set me up for eating healthier the rest of the day. Having the community for tips and support makes a huge difference in actually following through with the healthy eating. I just felt better eating cleaner during this challenge, I can’t wait for the next one.
A great jump start to a healthy spring
I have never in my life ate a salad everyday for 10days in a row!!!!!! It felt so good to put all those healthy foods into my body! For the past 10 days I put myself first! SGS made it easy, with their recipes. Eating so many different colors on my plate was adventurous! I love the fact that I can easily incorporate these into my daily life, it’s easy being green!
It is easy being Green
I appreciated learning new recipes that fit my taste buds as well as incentive to incorporate new healthy ingredients in enjoyable salads.
Springtime jumpstart
I really stepped out of my comfort zone on this challenge. I purchased things I never would have otherwise. My first time buying and eating Fennel. I liked it. Who would have ever guessed? I tried fresh herbs, and now have a mint and basil plant in my kitchen. I will be eating more greens on a regular basis. My favorite salad was the Strawberry Mixed Greens. The dressing was the best dressing ever. I will make this over and over again. I really liked the Healthy Taco Salad. I was so surprised how great the Walnut Taco Meat tasted. I want to make this for my women’s group soon. The Vegan Potato Salad was a big hit with my husband. He had it for lunch two days in a row. He wants this salad in the summertime. The Bright Berry Salad was refreshing and bursting with flavors with all the fresh fruit. The Healthy Pasta Salad was very close to a pasta salad I have made in the past. May use this version the next time I have a cover dish gathering. Not an Arugula fan, so did not add it to any of the salads. The dishes were good with my changes. I am so glad that I did this challenge. The only complaint I have, too many left over items in my fridge. Other than the Potato Salad, I was the only person eating the salads. Things I purchased and only used once: Chives, Dill, green onions, tarragon, barley, tahini, and tamari. I guess I will google ways to use these items in other recipes. But I did truly love the challenge.
My body loved the healthy foods
I really enjoyed all the salads, but I must say the potato salad shocked me and my family at how good and creamy it was. I was skeptical and had doubts when preparing it. All of these salads will be in our regular rotation. I lost 3lbs and know I am retaining way less water. Fell energetic and happy. Thank you for this challenge. They all are so wonderful.

Excellent 10 day healthy eating fun!
I usually eat a big salad everyday as my main meal with a protein. I was in a rut making the same salad everyday, it was starting to get boring. The challenge gave me the opportunity to try new things, some I never would have thought of trying. Thanks!
Great Experience
I really enjoyed the variety of this salad challenge. I was challenged to try new combinations and even a few new vegetables. The salads were all beautiful and most of them will be added to my recipe book for future use. I really liked the lemon arugula salad and think it was probably my favorite.

Smoothies
So when someone has week one and week 2 in their instructions we normally think of the standard definition of a week. 7 days. Monday to Sunday. My surprise when week 2 starts on the weekend. Suggestion: leave the weekend for shopping and preparing the next 5days. On the other hand did get to make some new salads and walnut “meat” new dressings and new ingredients: arugula and fennel. Definitely got me out of my comfort zone.
Confused but Curious
The colorful recipe booklet, support group, e-mails and online kickoff were super helpful. Really enjoyed trying some new recipes as well. Thanks for letting me be part of the challenge.
Great Challenge
Loved the recipes i had to modify a little for carbs but they were all so tasty.. love challenges that get you eating healthy and being active
Taking it one salad at a time
Thank you so much for 10 day salad recipes which gave me pleasure of only fixing not having have to plan myself on vegan dinner meals since I have had the alpha gal allergy for a few months and have to mostly eat vegan. I have been blessed and will definitely use them a lot. My husband is to have shoulder surgery in a few days and is a diabetic and has helped him also, so all in all it has been good for us both. Thanks so very much.
Excitement each day
My coworkers say I’m part rabbit, so this challenge was easy and very enjoyable for me. I loved expanding my recipe collection and getting new ideas to alter some old recipes I’ve been making for years. I will continue to follow simple green smoothies and Jen. Can’t wait to find the next challenge. Thanks
