Although I love salads, I get tired of them rather quickly! However, that is something I cannot say about the 10 days salad challenge. Each salad was unique and the dressings were fabulous! I was happy when I had leftover salad for lunch seven of the 10 days! There were some new additions to salads that I had never considered before, such as fennel, nor had I ever made cashew Cream but it’s certainly a recipe that I will have at hand. I’ve discovered I can really enjoy salad daily without getting tired of them! My favorite – and my family’s – Was the kale Caesar salad. I learned a new trick to soften kale and it seemed to take out a little at the bitterness as well. And the cashew garlic aioli tasted very similar to the dressing on a regular Caesar salad. I think I can eat it every day! I’m so glad that I joined this 10 day challenge not only for the salads but also for the Physical activity motivation. This is a challenge I would love to do again!
Simply Satisfying Salads!
It was tasty and interesting trying new vegetables and combining ingrdients that I wouldve never considered before the challenge. I will be definitely making these salads over again and again to enjoy..
A very green finish line
It’s inspiring. Eating healthy with lots of plants sends my soul soaring. It just takes time to learn the habits that will be sustainable and bounce back when I get defeated (like when one of my dishes wasn’t tasty). My intention is balance. Balance of the areas in my life so cooking and meal prepping is paramount versus being left by the side of compost bin. Thank you!✨
Greens are the new ME
On my healthier journey, I was starting to back slide a bit. After a strong New Year’s Resolution, I was beginning to slow down to a boring crawl. I needed a new challenge to provide some momentum. This 10 Day Salad Challenge was the kick in the behind that I needed. I shopped, created new amazing salads everyday, and walked when the crazy Dallas spring couldn’t decide to be cold or rainy or hot! Now facing the end of the 10 days, I am joyfully celebrating a renewed spirit of determination. Success can only be measured by perseverance along with determination, and I am now armed with new tools to continue that journey that I began in January. I have no fear of recreating Jen’s fabulous recipes from the Simple Green Smoothies cookbook or even reinventing them with all the suggestions from my fellow challenge participants. I have a Fitness Tracker from Run the Edge to keep me trekking, and a big round of applause to Organic Girl for supplying the healthy salad mixes and alerting me to the 10 Day Salad Challenge. I’ll be making my favorite, the Taco Salad, tomorrow as I trek thru the next month with an “I Got This” attitude. Thank You!
Stepping Outside My Comfort Zone
One of those things I’m just terrible at is creativity in my meal planning. This challenge was the kick in the pants I needed to try new things and – bonus!- eat more plants. Literally on Day 1 I found my new favorite salad dressing, the Strawberry Basil. Day 4 is my new favorite salad (Lemon Arugula, picture attached) with Day 10 (Strawberry Arugula) as the runner up. Never tried fennel before in my life but it will be a regular addition to my salads now. (I also get to break out my mandolin slicer -yay!) One downside to this challenge: I hate to waste food, so doing this challenge for 10 consecutive days was tricky. I did have some difficulty trying to use up the ingredients that didn’t make it into the salads. My rabbit took care of some of the scraps and we got creative with the rest. Thanks for the motivation and tools give this a try!
I Love Fennel – Who knew?
I’ve always wanted to include more greens into my diet. I’d also recently read about how the human diet should mimic the natural diet of apes (50% fruit, 40% greens, 10% misc, /seeds/etc.) So, this challenge really spoke to me and inspired me! I have increased my intake of greens to about double and I’m really happy about that. (Any day I don’t get in my greens, I can tell right away!)
Great! Perfect way to get healthier!
Loved all the salad combinations, most of which will be on a regular cycle. I am happy with the added RTE walk/run challenge. I had been trying to get motivated to get moving again, and thankfully I was able to get a jump start by meeting the daily walking challenge. I love that I have more energy and am getting back to what I loved.

What a fun way to jump into the spring season with a salad challenge. I had a great time eating them all. However, I am particularly fond of any taco Tuesday… so the Healthy Taco Salad gets top honors from me.

This was an amazing 10-day challenge. I absolutely love salads and eat them everyday but my husband usually won’t eat them. I think I have made a convert in him with this challenge. He is now asking for salads!!!
