Love my greens
Going green never looked and felt so good! So glad I chose to jump into all-things-green and do a deeper dive into creatively challenging myself with each & every salad! I’ve always been a fan of homemade salad dressings and am happy to have found several I’ll be using from here on ~ especially the cashew cream variations! My favorite was most definitely the Vegan Taco Salad as I love lots of crunch and color ~ and was surprisingly pleased with the vegan taco meat. Who knew soaked walnuts would do the trick and hold the flavors as well or better than ground beef! Just an all-around 1st Place in my new repertoire of salads. Doing this challenge together with hundreds of others and seeing the post and pictures along the way made the challenge even more do-able with a great support system to lean on when needed. Thank you Simple Green Smoothies for inviting ~ and challenging us along on the journey to new levels of plant based living!
Game On For The Greens! 🥬🥑🥬
This salad challenge was a simple and easy way to take baby steps towards a more powerfully healthy life. Each day included a new salad recipe. Each recipe was flexible to allow for adjustments. I honestly felt like I was a foodie chef as each recipe included combinations or ingredients I might not have otherwise considered. The salads were delicious and gave me new recipes that I will include in my meal plans going forward. The challenge also included a light exercise element. I was unsure of how I would be able to do this part of the challenge because I had a fractured right foot and was in a boot and walked with a cane. If I can find a way to do it with these restrictions anyone can. And I found ways to have fun with it.
Easy Plan to Begin the Journey of an Authentically Healthy Life
I like to challenge myself. These past ten days broke the monotony of day to day eating and living. Usually I start my mornings with a cup of coffee but the plant based diet gave me the energy needed to perform my job as a busy healthcare provider. My favorite salads were the sweet and fruity ones. Nuts seeds and beans added healthy fiber. The dressings for each salad were simple to make and made each night taste different. Preparing for each day was fun and eating healthier meals was the best. Thank you for changing my life by exploring the many diverse ways of eating a plant based diet.

Wow! Can’t believe I am craving smoothies and salads these days. I don’t have to reach for caffeine in the afternoon because I am feeling GREAT! Loved the salads and will definitely continue this in my food choices.

Joining the Salad Challenge has been fun and satisfying! The salads were filling and left me with no desire to grab a sweet dessert or high carb foods. I will be keeping the recipes to try again. I love the dressings! They were my favorite to explore. I am encouraged to continue diving in to more plant based recipes and to join future challenges. Thank you for the experience!

Grateful for the list to purchase in 5 day increments so the items would not spoil. Grateful for the time you put in researching and making the meals delicious for us. Many of the recipes will be put to use many times over, especially the taco salad, full of flavor, delicious and so eye appealing. I like to try different healthy that are good for me to consume every day. I have baby spinach salads and 50/50 mix salads. I add small several different sides on top my salads with grape tomatoes, celery and jumbo olives for my late lunch/early supper one meal each day.

I love a good challenge but it’s even better when it is beneficial! I have completely fell in love with Organic girl salads and from this Challenge I have learn a daily salad can be a lifestyle! Challenge to turn into lifestyle!
I’ve never been so happy to prep my meals before I took on the 10 day challenge. I loved the variety of the salads and I’m obsessed with amazing dressings I got to try through the recipes. My favorite salads were the strawberry mixed greens sweet & crunchy salad and the healthy pasta salad. The flavours were top-notch and made for excellent meals post-workouts. I’m truly going to miss looking through the support group activities and seeing everybody’s progress and creations. Because of my new job I started to skip my daily runs but through this challenge I forced myself to make my runs a priority and ended up with 30 miles in 10 days!! I feel healthier happier and my skin is GLOWING! I’m a salad convert and I cant wait to try more healthy and plant based foods! 🥰

Hi there!! Even though I arrived to the challenge late, I’ve had a great time seeing what other people have thought of the recipes. When I think of salad, I tend to think just greens but love how the salads were not all focused on greens, like the Crunchy Carrot or Vegan Potato Salad. I also love how many of the salad dressings are made with staple pantry items. Thanks so much for sharing such yumminess that is easy to prepare and enjoy! I can’t wait to make more 🙂 I’ll also get my son involved in helping in the kitchen. He hates when I make him help for more than 20 minutes haha, so these recipes will be perfect!
Easy Nutritious Salad Variety
I am completing the 10 day salad challenge today and it has been awesome! I’ve learned some new recipes to add to my menu planning that my whole family has been excited to eat. This has helped push me out of my comfort zones to try homemade salad dressing. I will definitely be continuing on with my daily salads. Thanks Simple Green Smoothies for the challenge!
Healthy start!
I am just blown away how each challenge and cleanse gets better and better. Never would I have thought I would enjoy eating plant based foods. The recipes are amazing. I loved the taco salad and the lemon tarragon salads the most. I have only been on this plant based journey for 4 months now and I am hooked. The recipes are so tasty. I have learned so much from simple greens and all the amazing Rawk in the support group. Thank you for all you help and encouragement. I am looking forward to the spring challenge and more new recipes. Again thank you Jen and staff and all the great sponsors for another successful challenge. I have also enjoyed the running challenge ( walking for me). Between that and run the year, I plan to continue my fitness journey. I doesn’t seem like a challenge when you feel so good.
