Pineapple Mint Smoothie

Sweet. Soothing. Refreshing. Hydrating. This Pineapple Mint Smoothie happens to be my literary agent's favorite recipe of all time. If you close your eyes while sipping it down, you might even teleport to a poolside bar and think it's a pineapple mojito (you wouldn't be the first!).

Have you ever thought about serving smoothies at your poolside parties? They make the perfect addition to a summery spread, and I won't tell anyone if you add a little rum to them!

Ingredients in a Mint Smoothie

Head to the grocery store and gather the following fruits, leafy greens and herbs to create this delicious mint smoothie. No matter where you serve it, a juicy, sweet pineapple smoothie is amazing. It's the perfect summer drink to cool down, hydrate and feel amazing!

Kale: The king of the leafy green family, kale is packed with fiber and phytonutrients that our body loves.

Coconut Water: This is the most hydrating liquid base out there. I love using it as a post-workout smoothie or on a hot day.

Pineapple: This natural sweetener turns this healthy smoothie into a decadent poolside cooler.

Lime: Fresh limes make the most vibrant flavors and can be blended effortlessly into a mint smoothie.

Mint: This herb is a natural stimulant, which can help your perk up during a painfully slow afternoon, or even give you a healthy jolt before you head to the gym.

If you're not a fan of kale in your smoothies but want to be, then this is a great gateway smoothie. The pineapple and coconut water up the sweetness and tone down the bold kale flavor.

Let me put it this way. Normally my kids don't like kale in their smoothies, but this pineapple mint smoothie went down the hatch nice n' easy.

Pineapple Mint Smoothie FAQs

How much mint should I add to my smoothie?

I typically stick to ¼ cup or less when adding herbs to smoothies. I really want the mint to shine in this pineapple mint smoothie, so I add the whole ¼ cup. Feel free to start with less if this is your first time trying fresh mint!

Can I use dried mint in a smoothie?

I don't recommend it. Dried mint has a different flavor, and consistency and doesn't hold the nutritional benefits found in fresh. I do recommend growing your own mint! It's super easy to do and allows you to grab a garnish any time you want.

How do I lower the natural sugar in a smoothie?

Use a low-sugar fruit to naturally lower the sugar. If the pineapple in this pineapple mint smoothie is too much, then use half of the measurement called for and add in raspberries, blackberries or peaches to help lower the sugar.

Naturally Lower Sugar in Smoothies

While sugar in fruit is not processed, it can be a bit much at times. The easiest way to help your body easily process the natural sugar in fruits is to add in a plant-based protein powder with protein and healthy fats. Then you get a filling snack without the sugar crash.

You can also swap out higher glycemic fruits with lower glycemic fruits.

Low Sugar Fruit Swaps

If the pineapple holds too much natural sugar for you then cut it down to ¾ cup and add in ¾ cup of one of the following low sugar fruits:

Raspberries

Blackberries

Peaches

Grapefruit

Don't let natural sugar slow you down! Smoothies are the ultimate 'build your own' since you can really use what you have on hand or prefer to make any recipe work for you.

Smoothie Recipes Using Fresh Herbs

Fresh herbs are the ultimate bonus ingredient. They add an extra leafy green and lovely flavor addition to any smoothie. Here are a few of my favorite herb smoothie recipes:

Ingredients

  • 1 cup kale (fresh)
  • 1 cup coconut water
  • 1 ½ cups pineapple
  • ¼ cup mint (fresh)
  • 1 tablespoon lime (juice)
  • 1 serving Protein Smoothie Boost (optional)

Instructions

  • Blend kale and coconut water until smooth.
  • Add remaining ingredients, and blend until smooth.

Notes

  • Use frozen fruit to make smoothie cold.
  • This really can turn into a mocktail with a fun glass and some fresh mint or lime wedge garnish.
  • Swap kale with the leafy green of your choice. 
  • Swap coconut water with regular water or carton coconut milk.
  • Use a plant based protein powder to help your body process the natural sugar more easily.

    I love mint in smoothies and this one is pretty good. I added two good sized mint sprigs and 1/4 avocado. I do have to say that I prefer the chocolate mint or berry mint combos better.

    I didn't think I would like this but tried it anyway. I had mint from my garden and frozen pineapple. I didn't have coconut water and used filtered. Loved it so I cant wait to try it with coconut water!

    This is a simple but yummy smoothie. I usually don't care for coconut water, but I don't notice the taste in this one. It's very refreshing with the combination of mint and pineapple.

    What a wonderful refreshing mint sensation really enjoyed it. not something I would drink all the time, but on a very hot day definitely hits the spot! I might adjust the total fresh mint to just a little less, so I can taste the pineapple more. thanks!!

    I liked this one a lot! Very refreshing and light-tasting. I used frozen kale (~1/2 cup) and frozen pineapple, so it was nice and slushy. Love the mint.

    This is my new favorite smoothie. I love, love, love it. My friend gave me fresh kale from her garden, which was fabulous. I wouldn't change a thing about this smoothie. I will be making this one often. So refreshing. I loved the mint, the lime, and the pineapple flavors.

    I was looking forward to trying this one but it wasn't quite as good as I had hoped for. I used the baby power greens that has baby kale in it as I didn't buy Kale this week. Got to use the fresh mint from my yard. Needed a bit more sweetness for me so I did add a bit of honey. I think maybe a flavored or more sweetened coconut water might help meld the flavors. I like the ingredients but may tweak this one a bit the next time I give it a go.

    I thought this smoothie was yummy, refreshing, and not overly sweet, but there were too many flavors going on for the young palates in our home. I did not buy enough mint and only used about a 1/4 of what the recipe called for, but it definitely still had a minty taste. I think it would have been too much mint if I used the 1/4 cup for each serving.

    Thanks for the recipe.

    I thought it was just okay. I thought eating 1 1/2 cups pineapple in 1 serving is a bit much…I was fine drinking the first half of the smoothie, but then my throat started to itch. (I’m not allergic to pineapple.)

    I’d also recommend including the weight of each ingredient as greens and herbs measure differently if packed or not, and fruit measures differently depending on how big/small you cut it.

    Omg, can I say how delish this smoothie is!!! It was so good and refreshing that I decided to skip dinner and just have this smoothie. That’s two smoothies in one day and I feel great. I didn’t miss my dinner at all.
