  • 3 cans black beans 4 1/2 cups
  • ¾ cup salsa medium or hot
  • 1 ½ tablespoon chili powder
  • 1 ½ tablespoon smoked paprika
  • 1 ½ tablespoon ground cumin

    following up in greater detail…
    although for a challenge i usually make the recipe as written in order to provide a fair review, the ratios in this recipe seemed off to me (they have since been corrected), so i used 2 cans of black beans and 1 3/4c of vegetable broth. i also used 4t of all of the spices that called for 1 1/2T since i don’t have a 1/2T measuring spoon. i topped this with chopped tomatoes and lime juice and crushed tortilla chips. i had intended to top it with avocado, but it turns out that none of mine were good. in the future, i would likely make rice or cornbread or cashew cream, as well. i would also likely adjust the spices in some way as it seemed to need something more or different. what i appreciated most was the speed with which this soup came together in fact, after placing my beans and salsa in a pot on the stove, but before they were warm, i transferred them to my vitamix and added the remainder of the ingredients, except the bay leaves. once blended, i transferred it all back to the pot to warm and simmer. next time, i would just dump it all into my vitamix to begin with.

    I soaked and cooked black beans and used them rather than canned beans (although there’s nothing wrong with canned beans). Also used a combination of the “bean stock” along with some vegetable stock. Very tasty!
