Healthy Soup Recipes
I can’t wait to dive into these soup recipes with you! I’ve got a little bit of everything since Autumn is so full of fresh vegetables. These soup recipes for Fall will hopefully help you find a few go-to meals that you can make and freeze to use throughout the season.
Feel free to pair these soups with other dishes for a complete meal if they seem a little light on their own. While the Simple Ramen is a perfect lunch, I love pairing the Tomato Soup with vegan basil pesto on toast or adding a kale Caesar salad to enjoy alongside some vegan Potato soup.
Fall Soup Ingredients
While I love the berries, squashes, and crispy produce of Summer, I find myself craving the buttery, hearty veggies of Fall. Versatile Soup Toppings
Sometimes you find a soup recipe in need of a bit of oomph. I get it (I put hot sauce on a lot of dishes). Here are two quick n’ easy recipes I keep on hand in a flavor emergency, or just to jazz up my meal:
- Cashew cream: A good vegan sour cream can provide depth and creaminess to almost any recipe. If you’d add sour cream to a soup, then you can add this!
- Pesto: There’s just something about pesto that instantly levels up a recipe. I love adding a dollop of vegan pesto to a good vegetable soup. It’s just so good! I’ve got a few different variations you can try, and they all freeze well.
- Vegan cheese sprinkle: Parmesan is a staple in many American households. This vegan cheese sprinkle certainly gives Kraft’s a run for its money, and its made with real ingredients that really do add a cheesy finish to your dish.

Healthy Soup Recipes FAQs
There are a variety of soups that boast incredibly healthy benefits. All ten of the soups on my list are made with whole food, plant-based ingredients. They use seasonal produce that packs the biggest nutrient punch, and they leave out inflammatory dairy products (nothing against dairy, yet it causes an inflammatory response in a lot of people!). Use limited ingredients or homemade vegetable stock with limited sodium as well.
It can be! Look for a soup with whole food, plant-based ingredients. Use fresh, seasonal ingredients for the most nutrient-dense soup. Look for recipes with protein and healthy fat so they can fill you up and keep you full longer.
While there is no ‘magic soup’ for weight loss, as there are so many factors that contribute to a person losing weight, you can’t go wrong with using whole food, plant-based ingredients in your soup. Make a soup that will fill you up and not leave you hungry 30 minutes later. When I’m looking for a hearty soup I go with my Spiced Lentil Soup, Split Pea Soup or Minestrone. All these are great options for delicious, healthy meals.
Soup-Making Kitchen Equipment
If you’re ready to start whipping up some soup, make sure you have these items in your kitchen:
- A stock pot, crock pot, instant pot or ceramic pot. Something that can hold six quarts.
- A blender or immersion blender. Make sure your blender is rated for hot liquids.
- A good knife and cutting board for chopping ingredients.
That’s it! Soup is great because you don’t need a bunch of fancy equipment to make it, and many soups can even swap ingredients you have on hand and still taste delicious. Ready, set, soup!
Delicious! I used to have a recipe similar to this that I loved. Unfortunately I sold the cookbook in a garage sale when I moved. So glad to have the recipe back!
I really liked all the recipes, but LOVED the minestrone and Vegan chicken noodle my goodness I am so glad I did this challenge. My kids liked them all as well. The biggest result I saw from this was being full AND satisfied after my meals. Who knew soup could do that, right? Also hoping to not be TMI, but I felt a little more regular during this challenge and less bloated.
Red bell pepper soup, simple, no fuss, just good and wholesome! Best part even my husband enjoyed it and being able to share a great recipe and resource with my girls is priceless. Thank you for inspiring a return to home cooked, healthy foods.
This soup challenge was fabulous, though I think I’m ready to take a break from soup for at least the next few days. My favorite recipe was the black bean soup. I never realized you could just through everything in the Vitamix and it would cook! Thanks Jen! I’m so glad I discovered Rawktheyear and I’m looking forward to the fall cleanse!
I have to say this has been a remarkable 10 days of delicious soups! As I told you earlier in an email I lost my husband unexpectedly February 16th to a massive heart attack. We loved to cook over the 20 years we were married. We had just planned a HUGE kitchen renovation and had bought out cabinets and countertops. I went thru with it after he died because itโs what he wanted so bad.
This 10 Day Challenge has resulted in me getting back into my beautiful new kitchen and back cooking againโฆ.which I didnโt want to do for the last 8 months. Iโve been sharing the soups with my friends who have cooked and supported me over this trying time.
As far as favorite soups? They all were very, very good in their own way.. But I think it was the Thai Coconut soup that was a “FAVE”. One of my friend’s made the comment Damn girl…this is Best in Show”!
I’m not sure how I found this calling…but I’m sure glad I did. Please let me know if there is another. Thank you so much! xo Sheryl Biermann
I fully enjoyed the 10 day soup challenge. My main desire was finding a way to get more vegetables into my diet and these soup recipes really did that. I have found the result of doing this challenge is I feel better and have lost 5 pounds, both were unexpected.
The soups i liked best were the corn chowder and vegetable soups. Now plan to continue making about half of the 10 recipes on a regular basis and figure out ways to get more vegetables into the soups. I fully plan to continue looking for more vegetable based recipes I can add to my weekly meal rotation.
Thank you for providing this challenge and the opportunity to add healthy recipes to my diet.
I loved this soup challenge! The tomato soup was my favorite. I have always loved tomato soup but didn’t make it much as I never had a healthy recipe. Now I can make it as much as I want and not feel guilty! This challenge gave me so much energy and I noticed it by the third day. It made me realize what a difference it makes to get proper nutrition in my diet. I am sold! I want to thank you for making this fun and easy to participate in! Looking forward to the next challenge!
I really enjoyed this challenge. Life got busy and I didn’t get to make a couple soups but I plan on trying them this weekend. It will be more soup weather this weekend lol. I enjoyed trying soups I never would have (Thai Coconut Soup). I really liked the minestrone soup. It was full of veggies and had a nice flavor. This challenge really opened my eyes to try new things. And as an added bonus, from eating healthier, I lost a few pounds.
I enjoyed the 10 day soup challenge because itโs made me try new vegetables and other substitute for meat. I was surprised that my husband enjoyed and tried all the soups. Our favorite was the detox soup. I was surprised how filling it was and the flavor was delicious. My husband is not a lentil fan but this soup made him one! I learned different receipts and will continue to make them. I just purchased the souper cubes and look forward to making more of this recipes. Not only did we enjoy the flavors but we learned how to incorporate more vegetables and less meat. Thank you!
My faves were the tomato soup and the coconut soup….both are so versatile. They are in the normal rotation at my house. I think the lentil soups come in as a close second. They were easy to make and very full of flavor. This was a fun challenge! Thanks so much….keep them coming.
I loved this challenge! Most of the soups were great. I loved the Thai soup the most. I will be making many of these soups again. I love the pictures that others posted of their creations. This was a great group. I will be watching for any other challenges you may offer, as I find this very fun to do. Thanks so much!!!!!
I forgot to post that I lost a few pounds from doing this challenge which was great!
I really enjoyed the soup challenge and seeing all the creative photographs posted by the participants. I have to say my favorite soup was the paprika corn chowder… It had a little heat…. normally I would not make a soup like this because I wouldn’t want to use cream.. but this one used almond milk. So creative!
One think I got out of the opportunity to make soups I may have overlooked in the past… such as the roasted red pepper soup and even my f av, the corn chowder.
I definiltye look forward to using the recipes throughout the fall / winter. I will say that doing as much prep work ahead of time is certainly beneficial and also organizing multiple soup preps based on ingredients.
Thanks Jen and all the soup recipe contributors for putting this together!
I looooved the Thai Coconut Soup! That one pushed me so far outside my comfort zone I almost backed outโย yet I’m so glad I didn’t! I had not clue such flavors could be inside a soup. I loved the silky texture, the spice from the serranos and the crunchy cashews on top. I’ve had soups for dinner all 10 days of the challenge and dropped 2 pounds… without even trying! I mean I literally ate every soup recipe and was never hungry!!! I’m excited to keep eating plant-based recipes and see what other results I can get. Thanks Jen and all the recipe makers for creating this challenge. I had such a great time.
I loved the Thai Coconut Soup. I will definitely make this again and again.
The healthy tomato soup recipe was my favorite from the soup challenge, it was easy to make and I love a good tomato soup, It was very hard to choose a favorite as they all had such unique flavors and all were easier to make than I anticipated.
I will add these to my soup rotation and this has inspired me to add more soups into my everyday
Loved this 10 day challenge – the recipes were interesting and varied and my favorite new thing is the cashew cream!
