Healthy Soup Recipes
I can’t wait to dive into these soup recipes with you! I’ve got a little bit of everything since Autumn is so full of fresh vegetables. These soup recipes for Fall will hopefully help you find a few go-to meals that you can make and freeze to use throughout the season.
Feel free to pair these soups with other dishes for a complete meal if they seem a little light on their own. While the Simple Ramen is a perfect lunch, I love pairing the Tomato Soup with vegan basil pesto on toast or adding a kale Caesar salad to enjoy alongside some vegan Potato soup.

While I love the berries, squashes, and crispy produce of Summer, I find myself craving the buttery, hearty veggies of Fall. Versatile Soup Toppings
Sometimes you find a soup recipe in need of a bit of oomph. I get it (I put hot sauce on a lot of dishes). Here are two quick n’ easy recipes I keep on hand in a flavor emergency, or just to jazz up my meal:
- Cashew cream: A good vegan sour cream can provide depth and creaminess to almost any recipe. If you’d add sour cream to a soup, then you can add this!
- Pesto: There’s just something about pesto that instantly levels up a recipe. I love adding a dollop of vegan pesto to a good vegetable soup. It’s just so good! I’ve got a few different variations you can try, and they all freeze well.
- Vegan cheese sprinkle: Parmesan is a staple in many American households. This vegan cheese sprinkle certainly gives Kraft’s a run for its money, and its made with real ingredients that really do add a cheesy finish to your dish.

Healthy Soup Recipes FAQs
There are a variety of soups that boast incredibly healthy benefits. All ten of the soups on my list are made with whole food, plant-based ingredients. They use seasonal produce that packs the biggest nutrient punch, and they leave out inflammatory dairy products (nothing against dairy, yet it causes an inflammatory response in a lot of people!). Use limited ingredients or homemade vegetable stock with limited sodium as well.
It can be! Look for a soup with whole food, plant-based ingredients. Use fresh, seasonal ingredients for the most nutrient-dense soup. Look for recipes with protein and healthy fat so they can fill you up and keep you full longer.
While there is no ‘magic soup’ for weight loss, as there are so many factors that contribute to a person losing weight, you can’t go wrong with using whole food, plant-based ingredients in your soup. Make a soup that will fill you up and not leave you hungry 30 minutes later. When I’m looking for a hearty soup I go with my Spiced Lentil Soup, Split Pea Soup or Minestrone. All these are great options for delicious, healthy meals.
Soup-Making Kitchen Equipment
If you’re ready to start whipping up some soup, make sure you have these items in your kitchen:
- A stock pot, crock pot, instant pot or ceramic pot. Something that can hold six quarts.
- A blender or immersion blender. Make sure your blender is rated for hot liquids.
- A good knife and cutting board for chopping ingredients.
That’s it! Soup is great because you don’t need a bunch of fancy equipment to make it, and many soups can even swap ingredients you have on hand and still taste delicious. Ready, set, soup!
The Soup Challenge is Awesome Iโve enjoyed making the plant based soups and it is allowing me to up my game in the plant based lifestyle. Going plant based has really changed my health and well-being over the last year. These recipes give me ways to have plant based comfort food as the cooler weather approaches here in Ohio. I love the simplicity and the ability to add ingredients to my own taste. Simple Green Smoothies is where I started when I wanted to life a healthier lifestyle. Thank you
Roasted Red Pepper Soup. I have been following a vegetarian diet for a long time and found that most of the soup recipes I have experienced are a variation of broth and vegetables that require a substantial addition of seasonings to make it palatable. I like to reduce the sodium level and keep it healthy, this challenges the enjoyment. Both of the Roasted Red Pepper soups I have made used modest sodium and were extremely satisfying. The flavors were rich, smooth and produced a comfortable mouth feel that was satiating without a calorie charge that would be produced if I added a pasta. The suggestion to roast the vegetables on a parchment sheet was wonderful. This removed the clean-up discouragement. We buy the vegetables at the local farmers market. On our next buying trip we search for new ingredients and explore some other recipes.
Loved the ginger soup. Made me feel like a chef.
Thank you
It’s hard to pick a favorite since I loved every single one of the ten I had the time to make. I am excited to try the Thai Coconut one this weekend and I have a strong hunch that will turn out be number one! As of now, the simple but delicious carrot ginger soup is my top pick. It’s elegant enough to serve as a starter at a dinner party which I love! My guests loved it, especially the pop of GINGER!
THANKS for all the yummy soups! I’ll be making these frequently
Enthusiastically

10 soups in 10 days was a steep challenge but I loved this! The thai coconut curry soup was my personal favorite. My kids loved the tomato. My husband loved the red lentil curry. I’m so excited to have added these recipes to my rotation, especially since so many of them are so easy. Definitely looking forward to time-saving coziness this winter!
The 10-day soup challenge was a winner for me! My favorite was the Thai coconut soup, mostly because it’s the first soup that was NOT made with heavy cream that my husband asked for SECONDS on:-).
My family has really developed a new openness to trying new dishes, even when they are soup! My palate has changed and is adjusting to (and even craving) natural flavors. These soups are like smoothies, only warm and comforting. Thanks for the challenge!
10 soups in 10 days was hard to keep up. I tried 5 of them and will continue over the next week to make the rest! So far, my favorite is the Thai Coconut soup. I lived in Asia a couple of years and Thai Green zcurry was one of my favorite dishes. This soup is very close in flavors and I love zoodles!
I have thoroughly enjoyed the soup challenge. I learned how to make a soup in a blender which I had never done before. I have some new recipes that I can use and since I live in North Carolina I make soups a lot in the winter.
I am a fan of Simple Green Smoothies. I am not just saying that, I am. I have all of the cleanse cookbooks all of the seasons, and my favorite is the 21 day cleanse which I do on a regular basis, itโs pretty much my diet what I eat.
The soup cleanse was totally different, I even got my husband to eat some of them which is amazing. Next line for me, having something to stick to buy the letter is very beneficial for me Iโm one of those kind of people that follows rules so, it helps me stay true to what I am doing.
My favorite soup was the minestrone. I really liked all the beans and vegetables and flavors that went into that soup. I was surprised by the corn chowder I didnโt think I was going to like that one and I really did.
This was a great experience for me and I would encourage others to do it. I really appreciated the shopping list it made things so much simpler and I donโt like to throw away food and it was the perfect amounts so thank you
Thank you for all these amazing recipes! The black bean soup was by far my favorite. I don’t love black bean soup recipes usually. The addition of chickpeas, as well as the blending of a portion of the beans made all the difference. So delicious! While we didn’t eat soup every day (my husband was not up for that), this challenge helped me to prep and plan better and try some new recipes. All in all a great experience that I will carry forward into my meal planning. Thanks again!
The Autumn 10-Day Soup Challenge was something that I did not know I needed! I am transitioning to eating more plant-based foods and this challenge made it easy to stay on track. All of the soups were delicious, however, my favorite was the Red Lentil Curry Soup. I love how the lentils, potatoes, curry, and kale greens complemented each other. It was nutritious, hearty, comforting, and easy to make. I’ve shared the recipes with friends and they enjoy the Red Lentil Curry Soup just as much as I do! My second favorite was the Vegan Tomato Soup. I love tomato soup and learning how to make cashew cream was an added bonus! I enjoyed it with a grilled cheese sandwich. Being a part of the Facebook community was awesome! I enjoyed the engagement, support, and encouragement from everyone in the challenge. After completing the challenge, I had more energy, less brain fog, my skin was clearer and I lost 5 pounds without trying! I am so happy that I decided to participate in this challenge. My life was changed for the better and I will continue to use the recipes on a regular basis.
These ten days have been great. So glad I took the challenge. The paprika corn chowder was my favorite followed by both the lentil soups and the tomato was a winner too! So many great flavors
I loved the 10 day soup challenge. It pushed me to actually make something for dinner each night and to make some soups that I might not have picked to make. I was surprised at how quick and easy the soups were, even without doing the prep. My favorite was the Thai Coconut. But I love all things coconut so it wasn’t a high bar for that one to be my favorite.
Thai coconut anything is always my favorite. I love the variety of the recipes with the 10 days. Perfect for someone who is recently really focused on whole food eating. Thanks!!
Love all of these recipes (the SGS Vegan Tomato, Carrot Ginger and Thai Coconut soups have been go-to staples in our house for years!), but my absolute favorites of the Fall 2021 10-day Soup Challenge were the Red Lentil Curry and the Black Bean soups. My favorite part of this challenge was welcoming in fall with some new, heartwarming recipes. October is always one of my busiest months and I loved how this forced me to slow down and appreciate the seasonal change. It was also so nice knowing that there were so many other rawkstars cooking/enjoying these same recipes at the same time. It makes a solo activity a whole lot more enjoyable when you know there are others out there sharing in the same experience as you. Thanks Team SGS for creating this challenge! <3
I have tried all the recipes and liked most of them. My favorite has been the vegan chicken noodle, although I added chicken. I’m not vegan so added some animal protein to most of the recipes. I’m surprised at how much fresh produce I used over the course of the challenge. I do think 10 consecutive days were a bit overwhelming. It was a lot of soup and I ended up having to give most of it away. I also was souped out by day 7. It would have been more enjoyable as a 5 or 7 day challenge. Overall it was a good experience and I’ve added a few base recipes to my collection.
I can honestly say my wife and I really loved this entire challenge! It forced us out of our comfort zone as far as food and pushed us to use ingredients we normally wouldnโt eat(tofu, red lentils, etc.) or wouldnโt think to use.
My wife is an adamant celery hater and even she was blow away by how it was utilized in so many different and unique ways.
The entire challenge really helped us refresh our diets and overall we both just felt healthier after dinner. Literally, eating just soup and salad goes a long way as far as making you feel cleaner while also keeping you filled up.
I personally loved the detox soup! 100% my favorite of the whole challenge.
Thank you so much for this challenge. I really enjoyed my 10 day plant based journey. Can say these will be incorporated into my regular diet from now on!
