Soup doesn’t just keep us warm—it also nourishes, comforts, and fills our homes with the best cozy aromas of the season. As fall settles in, I’ve got a lineup of healthy soup recipes that are perfect for chilly evenings, meal prep Sundays, or anytime you want something hearty and wholesome.
These ten incredible soups are all part of my 10-Day Soup Challenge. Each one is made with whole food, plant-based ingredients, packed with flavor, and ready to be a part of your fall menu. I love soup and make it often—even while living in Florida. A good cup of soup helps me pretend cooler weather is on the way.

Top Healthy Soup Recipes
These soup recipes for Fall will hopefully help you find a few go-to meals that you can make and freeze to use throughout the season. Feel free to pair these soups with other dishes for a complete meal if they seem a little light on their own. While the Simple Ramen is a perfect lunch, I love pairing the Tomato Soup with Vegan Basil Pesto on toast or adding a Kale Caesar Salad to enjoy alongside some Vegan Potato Soup.

Healthy Soup Toppings to Maximize Flavor
Sometimes you find a soup recipe in need of a bit of oomph. I get it (I put hot sauce on a lot of dishes). Here are two quick n’ easy recipes I keep on hand in a flavor emergency, or just to jazz up my meal:
- Cashew cream: A good vegan sour cream can provide depth and creaminess to almost any recipe. If you’d add sour cream to a soup, then you can add this!
- Pesto: There’s just something about pesto that instantly levels up a recipe. I love adding a dollop of vegan pesto to a good vegetable soup. It’s just so good! I’ve got a few different variations you can try, and they all freeze well.
- Vegan cheese sprinkle: Parmesan is a staple in many American households. This vegan cheese sprinkle certainly gives Kraft’s a run for its money, and its made with real ingredients that really do add a cheesy finish to your dish.

Healthy Fall Soup Ingredients
While I love the berries, squashes, and crispy produce of Summer, I find myself craving the buttery, hearty veggies of Fall. You’ll find many fall-fresh ingredients in the above healthy soup recipes because ingredients used in their proper season contain the most nutrients. While there is no ‘magic soup’ for weight loss, as there are so many factors that contribute to a person losing weight, you can’t go wrong with using whole food, plant-based ingredients in your soup. Make a soup that will fill you up and not leave you hungry 30 minutes later. When I’m looking for a hearty soup I go with my Spiced Lentil Soup, Split Pea Soup or Minestrone. All these are great options for delicious, healthy meals.




















The challenge was fun and gave me ideas for other soups I can make. My favorite was the very first tomato (veggie) soup. It was hearty and warm and seasoned well. One result I got was branching out on different flavors for making soups. I enjoyed the challenge.
It’s hard to pick a favourite recipe among so many good ones! But if I have to choose, it would be a tie between the Carrot Ginger (I love the carrot and ginger combo!) soup, the Detox soup (perfect for the colder fall days) and the Spicy Roasted Red Pepper Soup (peppers are one of my favourite food!).
This challenge has inspired me to cook more soups before we were just doing Zucchini or Potato and Leak soups, and now I know more options. Thanks!

I love soups but for some reason I don’t make them too often. This challenge made me realize how simple it is to whip up one and have meals for days ahead, since I usually freeze a couple of portions. My favorite one was the Thai coconut soup. Super delicious!
This was a very fun challenge for me. I love soups and have been wanting to add some new recipes to my regular line-up. I also discovered something about myself during this challenge and that was that I prefer soups that are not pureed. There is something about chewing my soup that is comforting to me. I am so glad that I pushed myself to try every recipe and they were all delicious, some just weren’t my preference. Also, I noticed I felt lighter the whole 10 days (not weight wise but just a feeling in my body) and it was such a great way to get more veggies each day. I loved that! I think my favorite was the 1 pot Paprika Corn Chowder. The flavor, texture & ingredients were perfect for me. However, I will say the Thai Coconut, Minestrone, & Detox soups will all be showing up in my menu plans. I liked the challenge. Easy to do with the list of ingredients given for the recipes. I liked changing up the recipes to meet my family’s personal needs.

I made the Thai coconut soup and it was delicious. Next time I will add a little bit of shrimp and may be a little bit more veggies.
I loved the Thai coconut soup. I thought it might be too sweet but it was just right. I will make it again but I might add some shrimp.
It’s a battle for top contender but if I have to choose one I would say the Black Bean Soup takes the cake for me! I love the flavour profile, its hearty, creamy and delicious! I add a ton of lime juice and I could eat this all day!! Other than a freezer full of soup I am so happy to have gained these recipes for my collection and some great tips from other participants in the Facebook group. The first thing I’ll say about these last ten days is never underestimate the value of prepping in advance! I didn’t prep much before the challenge started, so even though I currently work at home, and it’s just me and my husband, cooking a new soup, plus two other meals and cleaning dishes every day, meant a LOT of time in the kitchen. Ha!
I loved trying the new recipes and repeating some that are in regular rotation already. I loved several of the soups, but I think I’m going to have to pick the Vegan Tomato Soup as my surprise favorite! I didn’t puree it, and I added pesto sauce instead of cashew cream, and it just tasted like Italy in a bowl. SO good! Also, my digestive system was thankful that I was going easier on it by having soup at least once, sometimes twice, a day. What a great bonus, in addition to having some new recipes!

Carrot Ginger Soup
My house smells absolutely wonderful! And I love the soup. Very creamy and I added cashew butter with some jalapeño peppers and raw cashews. Love it!
I thoroughly enjoyed this challenge…I love soup and make some most weeks. Making ten new ones in ten days was fun for me. I am always open to trying new recipes and I like to make them as written first, then make adjustments if necessary for my taste when I make them again. It is hard to pick one soup as my favourite because I enjoyed most of them, but the Minestrone is one I will make regularly. So full of goodness and flavour. Perfect for the cool days of fall.
The Soup Challenge is Awesome I’ve enjoyed making the plant based soups and it is allowing me to up my game in the plant based lifestyle. Going plant based has really changed my health and well-being over the last year. These recipes give me ways to have plant based comfort food as the cooler weather approaches here in Ohio. Roasted Red Pepper Soup. I have been following a vegetarian diet for a long time and found that most of the soup recipes I have experienced are a variation of broth and vegetables that require a substantial addition of seasonings to make it palatable. I like to reduce the sodium level and keep it healthy, this challenges the enjoyment. Both of the Roasted Red Pepper soups I have made used modest sodium and were extremely satisfying. The flavors were rich, smooth and produced a comfortable mouth feel that was satiating without a calorie charge that would be produced if I added a pasta. The suggestion to roast the vegetables on a parchment sheet was wonderful. This removed the clean-up discouragement. We buy the vegetables at the local farmers market. On our next buying trip we search for new ingredients and explore some other recipes.

It’s hard to pick a favorite since I loved every single one of the ten I had the time to make. I am excited to try the Thai Coconut one this weekend and I have a strong hunch that will turn out be number one! As of now, the simple but delicious carrot ginger soup is my top pick. It’s elegant enough to serve as a starter at a dinner party which I love! My guests loved it, especially the pop of GINGER!

10 soups in 10 days was a steep challenge but I loved this! The thai coconut curry soup was my personal favorite. My kids loved the tomato. My husband loved the red lentil curry. I’m so excited to have added these recipes to my rotation, especially since so many of them are so easy. Definitely looking forward to time-saving coziness this winter!
The 10-day soup challenge was a winner for me! My favorite was the Thai coconut soup, mostly because it’s the first soup that was NOT made with heavy cream that my husband asked for SECONDS on:-).
My family has really developed a new openness to trying new dishes, even when they are soup! My palate has changed and is adjusting to (and even craving) natural flavors. These soups are like smoothies, only warm and comforting. Thanks for the challenge!
10 soups in 10 days was hard to keep up. I tried 5 of them and will continue over the next week to make the rest! So far, my favorite is the Thai Coconut soup. I lived in Asia a couple of years and Thai Green zcurry was one of my favorite dishes. This soup is very close in flavors and I love zoodles!
I have thoroughly enjoyed the soup challenge. I learned how to make a soup in a blender which I had never done before. I have some new recipes that I can use and since I live in North Carolina I make soups a lot in the winter.
I am a fan of Simple Green Smoothies. I am not just saying that, I am. I have all of the cleanse cookbooks all of the seasons, and my favorite is the 21 day cleanse which I do on a regular basis, it’s pretty much my diet what I eat.
The soup cleanse was totally different, I even got my husband to eat some of them which is amazing. Next line for me, having something to stick to buy the letter is very beneficial for me I’m one of those kind of people that follows rules so, it helps me stay true to what I am doing.
My favorite soup was the minestrone. I really liked all the beans and vegetables and flavors that went into that soup. I was surprised by the corn chowder I didn’t think I was going to like that one and I really did.
This was a great experience for me and I would encourage others to do it. I really appreciated the shopping list it made things so much simpler and I don’t like to throw away food and it was the perfect amounts so thank you
