Versatile Soup Toppings

vegan tomato soup with text showing good soup toppings including fresh herbs, pesto, cashew cream, salt and pepper and vegan parmesan cheese.

Sometimes you find a soup recipe in need of a bit of oomph. I get it (I put hot sauce on a lot of dishes). Here are two quick n’ easy recipes I keep on hand in a flavor emergency, or just to jazz up my meal:

  • Cashew cream: A good vegan sour cream can provide depth and creaminess to almost any recipe. If you’d add sour cream to a soup, then you can add this!
  • Pesto: There’s just something about pesto that instantly levels up a recipe. I love adding a dollop of vegan pesto to a good vegetable soup. It’s just so good! I’ve got a few different variations you can try, and they all freeze well.
  • Vegan cheese sprinkle: Parmesan is a staple in many American households. This vegan cheese sprinkle certainly gives Kraft’s a run for its money, and its made with real ingredients that really do add a cheesy finish to your dish.

Healthy Soup Recipes FAQs

What’s the healthiest soup you can eat?

There are a variety of soups that boast incredibly healthy benefits. All ten of the soups on my list are made with whole food, plant-based ingredients. They use seasonal produce that packs the biggest nutrient punch, and they leave out inflammatory dairy products (nothing against dairy, yet it causes an inflammatory response in a lot of people!). Use limited ingredients or homemade vegetable stock with limited sodium as well.

Is soup a healthy dinner option?

It can be! Look for a soup with whole food, plant-based ingredients. Use fresh, seasonal ingredients for the most nutrient-dense soup. Look for recipes with protein and healthy fat so they can fill you up and keep you full longer.

Which type of soup is best for weight loss?

While there is no ‘magic soup’ for weight loss, as there are so many factors that contribute to a person losing weight, you can’t go wrong with using whole food, plant-based ingredients in your soup. Make a soup that will fill you up and not leave you hungry 30 minutes later. When I’m looking for a hearty soup I go with my Spiced Lentil Soup, Split Pea Soup or Minestrone. All these are great options for delicious, healthy meals.

Soup-Making Kitchen Equipment

If you’re ready to start whipping up some soup, make sure you have these items in your kitchen:

  • A stock pot, crock pot, instant pot or ceramic pot. Something that can hold six quarts.
  • A blender or immersion blender. Make sure your blender is rated for hot liquids.
  • A good knife and cutting board for chopping ingredients.

That’s it! Soup is great because you don’t need a bunch of fancy equipment to make it, and many soups can even swap ingredients you have on hand and still taste delicious. Ready, set, soup!

I threw in the towel yesterday. I was just tired of soup. While it was an interesting challenge, none of the soups wowed me enough to want to add to my repertoire. My husband only liked two well enough to eat, but not request more or a repeat of. The last two didn’t move me to continue. I guess we’re just now regular soup people. I’ll have to continue looking for other ways to add and diversify our vegetables.

It was fun challange to try and learned some new ways to recreate old recipes. I loves Thai soup and vegan chicken soup. My family loves tofu so added in thai soup and chicken soup already called for it It was very filling and satisfing soups. I learn how easy soup can be turn in to a meal with simple rice , bread or a sandwich. Every soup was just about one pot dish for me so it saved so much time for me. I will definetly make most of the soup on a regular bases.

My favorite soups were: the corn chowder (my thick/creamy version–added 1/3 of corn, pureed in Vitamix then added remaining corn & chicken), the black bean soup (used chipotle instead of jalepeno), and the carrot ginger soup–actually followed this recipe ๐Ÿ™‚ I think the carrot soup was #1 favorite, but it was close ๐Ÿ˜‰
My results: I obviously prefer thick pureed soups, and I learned how easy it is to get more servings of veggies into my diet.

The last 10 days of soup have been great!! Hereโ€™s my list of favorites that are definitely on schedule to be made again.
    1 Smokey paprika corn chowder
    2 Spicy roasted red pepper
    3 Black Bean
    4 Vegan tomato

All were delicious but those are my favs!

The challenge was fun and gave me ideas for other soups I can make. My favorite was the very first tomato (veggie) soup. It was hearty and warm and seasoned well. One result I got was branching out on different flavors for making soups. I enjoyed the challenge.

  6. It’s hard to pick a favourite recipe among so many good ones! But if I have to choose, it would be a tie between the Carrot Ginger (I love the carrot and ginger combo!) soup, the Detox soup (perfect for the colder fall days) and the Spicy Roasted Red Pepper Soup (peppers are one of my favourite food!).
This challenge has inspired me to cook more soups before we were just doing Zucchini or Potato and Leak soups, and now I know more options. Thanks!

  7. Great smoothie and soup recipes! I make one of both every day ; thank you for the health!

I love soups but for some reason I don’t make them too often. This challenge made me realize how simple it is to whip up one and have meals for days ahead, since I usually freeze a couple of portions. My favorite one was the Thai coconut soup. Super delicious!

This was a very fun challenge for me. I love soups and have been wanting to add some new recipes to my regular line-up. I also discovered something about myself during this challenge and that was that I prefer soups that are not pureed. There is something about chewing my soup that is comforting to me. I am so glad that I pushed myself to try every recipe and they were all delicious, some just weren’t my preference. Also, I noticed I felt lighter the whole 10 days (not weight wise but just a feeling in my body) and it was such a great way to get more veggies each day. I loved that! I think my favorite was the 1 pot Paprika Corn Chowder. The flavor, texture & ingredients were perfect for me. However, I will say the Thai Coconut, Minestrone, & Detox soups will all be showing up in my menu plans. Thank you all for contributing your time, your creations and your love of nourishing people to this challenge. I’m up for the next challenge!

  10. I had a difficult time with the rating of the recipes at times.
I liked the challenge. Easy to do with the list of ingredients given for the recipes. I liked changing up the recipes to meet my family’s personal needs.
    Thanks for 10days of soup!

I made the Thai coconut soup and it was delicious. Next time I will add a little bit of shrimp and may be a little bit more veggies.

  12. I loved the Thai coconut soup. I thought it might be too sweet but it was just right. I will make it again but I might add some shrimp.

It’s a battle for top contender but if I have to choose one I would say the Black Bean Soup takes the cake for me! I love the flavour profile, its hearty, creamy and delicious! I add a ton of lime juice and I could eat this all day!! Other than a freezer full of soup I am so happy to have gained these recipes for my collection and some great tips from other participants in the Facebook group. What a great challenge, so happy I was apart if it! Thank you xx

The first thing I’ll say about these last ten days is never underestimate the value of prepping in advance! I didn’t prep much before the challenge started, so even though I currently work at home, and it’s just me and my husband, cooking a new soup, plus two other meals and cleaning dishes every day, meant a LOT of time in the kitchen. Ha!

I loved trying the new recipes and repeating some that are in regular rotation already. I loved several of the soups, but I think I’m going to have to pick the Vegan Tomato Soup as my surprise favorite! I didn’t puree it, and I added pesto sauce instead of cashew cream, and it just tasted like Italy in a bowl. SO good! Also, my digestive system was thankful that I was going easier on it by having soup at least once, sometimes twice, a day. What a great bonus, in addition to having some new recipes!

Thanks, Jen and team, for another great challenge with great recipes!

    Carrot Ginger Soup

My house smells absolutely wonderful! And I love the soup. Very creamy and I added cashew butter with some jalapeรฑo peppers and raw cashews. Love it!

  16. I thoroughly enjoyed this challengeโ€ฆI love soup and make some most weeks. Making ten new ones in ten days was fun for me. I am always open to trying new recipes and I like to make them as written first, then make adjustments if necessary for my taste when I make them again. It is hard to pick one soup as my favourite because I enjoyed most of them, but the Minestrone is one I will make regularly. So full of goodness and flavour. Perfect for the cool days of fall.
