Versatile Soup Toppings

vegan tomato soup with text showing good soup toppings including fresh herbs, pesto, cashew cream, salt and pepper and vegan parmesan cheese.

Sometimes you find a soup recipe in need of a bit of oomph. I get it (I put hot sauce on a lot of dishes). Here are two quick n’ easy recipes I keep on hand in a flavor emergency, or just to jazz up my meal:

  • Cashew cream: A good vegan sour cream can provide depth and creaminess to almost any recipe. If you’d add sour cream to a soup, then you can add this!
  • Pesto: There’s just something about pesto that instantly levels up a recipe. I love adding a dollop of vegan pesto to a good vegetable soup. It’s just so good! I’ve got a few different variations you can try, and they all freeze well.
  • Vegan cheese sprinkle: Parmesan is a staple in many American households. This vegan cheese sprinkle certainly gives Kraft’s a run for its money, and its made with real ingredients that really do add a cheesy finish to your dish.

Healthy Soup Recipes FAQs

What’s the healthiest soup you can eat?

There are a variety of soups that boast incredibly healthy benefits. All ten of the soups on my list are made with whole food, plant-based ingredients. They use seasonal produce that packs the biggest nutrient punch, and they leave out inflammatory dairy products (nothing against dairy, yet it causes an inflammatory response in a lot of people!). Use limited ingredients or homemade vegetable stock with limited sodium as well.

Is soup a healthy dinner option?

It can be! Look for a soup with whole food, plant-based ingredients. Use fresh, seasonal ingredients for the most nutrient-dense soup. Look for recipes with protein and healthy fat so they can fill you up and keep you full longer.

Which type of soup is best for weight loss?

While there is no ‘magic soup’ for weight loss, as there are so many factors that contribute to a person losing weight, you can’t go wrong with using whole food, plant-based ingredients in your soup. Make a soup that will fill you up and not leave you hungry 30 minutes later. When I’m looking for a hearty soup I go with my Spiced Lentil Soup, Split Pea Soup or Minestrone. All these are great options for delicious, healthy meals.

Soup-Making Kitchen Equipment

If you’re ready to start whipping up some soup, make sure you have these items in your kitchen:

  • A stock pot, crock pot, instant pot or ceramic pot. Something that can hold six quarts.
  • A blender or immersion blender. Make sure your blender is rated for hot liquids.
  • A good knife and cutting board for chopping ingredients.

That’s it! Soup is great because you don’t need a bunch of fancy equipment to make it, and many soups can even swap ingredients you have on hand and still taste delicious. Ready, set, soup!

Well I made it thru the 10 day soup challenge. I had to take a break over the weekend but got back on the wagon that Monday. My real goal for this whole challenge was to focus on getting more plant based products especially vegetables into our household and on to our table. My husband had a heart attack and triple bypass surgery a few years back and we have slowly tried to get more vegetables, less sugar and less meat in our diet. This is one of the main reasons why I joined rawk the year recipes. I have to watch out for not too much protein as I am a kidney stone pron person and my husband needs to be on a good plan as well as I do. I am pretty flexible with what I eat. I am not a big pepper type fan or even tofu but I would give it a try. My spouse not as much. There were a few he was not touching. If it had kale, peppers, onions he was not going to eat it. So I had to improvise a few times. For example onions some I cooked down to nothing and grinded them up in my vitamix. Others I switched out to spices. The big winner in our house was the first one. The Vegan tomato soup was both our fav at this house. I even made extra and froze it. It was creamy and was just as good if not better than our canned standby-no names here but I think you get it. After I finished cooking it I toped it off with a little oat milk on the top of it just to make it look creamy in design. The next one was the Black Bean Soup. Really liked this one but I had to use my vitamix first because I had to get the red pepper and onion down very fine. So no immersed blender for me on this one. Once I did that I dropped in the black beans and the chicpeas. Big winner but my first fav is still the Tomato Soup. And lastly out of all 10 the third one was Paprika Corn Chowder. Again I had to get my vitamix out for some fine tuning the onions. I did that mainly by using the almond milk and adding the onions, garlic smoked paprika and salt/pepper. Then finished up at noted on recipe. The challenge is worth it. It really provides you some insight on additional options and I could see a few of these becoming a go to during the fall and winter. I may try the Vegan tomato soup by roasting my tomatoes and see how fresh comes out. Had so much fun with the challenge and learning the creativity of others so that I could be more flexible.

This was an amazing experience! I’m always looking for more clean recipes to add to my family’s meal rotation, and these recipes have each earned a special place in our family meal planning. I thought I’d burn out on so many soups, but each one was amazing, and I was especially pleased by how easy they are to make. Simple ingredients, 30-60 min from start to finish, and a delicious result every time.
The most enlightening result I found was discovering how nourished and satisfied I felt at the end of each meal and for several hours afterward. I had no idea soup could be so filling!
Thank you for putting this together and creating such a lovely community. I look forward to finding more awesome recipes!

I forgot to leave my favorite recipe! I think the corn chowder was my favorite. I had no idea what to expect from it, but the flavor explosion was divine! My husband and I are fighting over the leftovers! ๐Ÿ˜€

The tomato soup was hands down our family favorite! I made the cashew cream to go along with it- it was absolutely amazing! My 8 year old was astonished when I told her how many veggies were in it- then she asked for more! Weโ€™ll definitely put it in our dinner rotation. But to be honest- we werenโ€™t disappointed with any of the soups- they were all delicious! Thank you for all of your hard work putting the challenge together- you are all very talented!!

I (and hubby) have really enjoyed the soup challenge. It has given me some new soup recipes and it has been great seeing what everyone else did with their recipes. I will definitely be making all of the soups again. My favourite one was the vegan tomato soup, but I really enjoyed the corn chowder one as well! Thanks Jen for organising the challenge and thanks too to all the group members for making the group a fun place to interact!

Loved this challenge! I always plan to make more soups in the Fall, and I love the 5-day shopping lists and having dinners already planned. My husband and I enjoyed making the soups together. Our favorite was the Detox soup – there were no leftovers that night! Enjoyed making the cashew cream also. The result from the challenge for us – more healthy, delicious soups we are familiar with making, and experience with new flavors like the cashew cream. We will definitely make many of these soups again!

I enjoyed the 10 day soup challenge. I learned how to incorporate more vegetables into my daily diet. Got the hang of my immersion blender and will be using it more often now. I rarely used it in the past. My favorite recipe in the soup challenge was the Carrot Ginger Soup. Fantastic! Where has this recipe been all my life. I loved it and will be making it often. I was even licking the immersion blender blade, as if it was frosting hanging onto beaters. Best part of this soup was how fresh and balanced it tasted. An added benefit from the 10 day soup challenge was I lost 3lb without making any other changes to my day. I’m glad to have found the Simple Green Smoothies website and all the other recipe contributors. I’m glad to have more vegan recipes. Thank you to everyone who put this together, I’m sure it was a lot of work; it is very much appreciated!

I love soup. It is so comforting and that is why I love VITAMIX. This soup challenge was perfect for my type of eating. The Thai Coconut Soup is my favorite comfort soup. It has just the right amount of flavor and zing to make me smile. I am able to eat soups because they are easy to digest and I add all the spices and vegetables to add the right flavors that I enjoy. All the different soups over the last ten days gives me an opportunity to tune up my variety of soups to have on hand for when I want to change up my eating.

  10. This was an excellent series of soup recipes. I really like the tomato soup. I have not made all the recipes yet as itโ€™s a lot of soup but I intend to try all of them in them in the next week. I especially want to say that they are great and easy to make. Saves so much time slaving in the kitchen. I also want to say that cashew cheese is great to add to the soups snd the cinnamon vanilla is a winner on toast. Most of all I hope to keep the recipes with each presentation as they have more plant based recipes that we can use in our daily cooking. Thankful for your putting this together. You are marvelous. I decided to ask my mom to do this challenge with me, since we no longer live together and don’t have the ability to cook together anymore. This was such a fun way to stay in touch and chat every night. After making our soups and sending each other pictures we shared our opinions and our experiences with the soup. When we made a plan to go on a girls weekend during the soup challenge, we decided we should keep it going and make the soups together. Although it was fun making the soups apart, the best part was making the soups together and creating long lasting memories with her. For me, this was so much more than ‘a challenge’ it was a refresh of a mother daughter relationship and a lifelong memory that we will never forget.

As far as the soups go, my favorite was definitely the Tomato soup. It was such a deliciously flavorful twist one a classic soup. It was packed with nutrients and whole ingredients that made me feel good about eating it. A close second for me was the Coconut Thai soup, it had such a yummy flavor that made me think that it could have come straight from a restaurant. I love the different variety of soups and flavors in this challenge, it made every day exciting and fresh. Would highly recommend this challenge not only for the memories but for the delicious flavors as well. Thank you for holding this challenge!! ๐Ÿ™‚

I went out of my comfort zone and joined this challenge. I am not a big social media poster…but I do LOOK at other people’s posts frequently, lol. I felt very encouraged during this process and was thankful I could ask questions if I needed to. I am thankful I decided to do this and it was FUN!!!

My favorite recipe was the 1-Pot Paprika Corn Chowder. I LOVE CORN ๐Ÿ™‚ and the potatoes in it were just the gravy on top, lol. I have a close second which is the Carrot Ginger soup…..SO GOOD!!!! I love both of these recipes because they were easy to make and enjoyable to eat.

One result I gained from doing this challenge is that I REMEMBERED what it was like to prep and be ready for meals. I enjoyed being in my kitchen again and I gained a community of support. I learned tips I would have never thought of from reading other people’s posts!!!

    This was an awesome challenge!!!

My favorite Soup would have to be the Detox soup. The flavor profile with the ginger, turmeric, and thyme was wonderful.

Overall these 9 days have been a little challenging at times since I chose to make the soups the day of rather than ahead and with no prep. But despite that, Iโ€™ve really enjoyed the opportunity to try all of these recipes and great ingredients. Of course not every soup would be a favorite for me but they all reminded me to eat more veggies and raw foods! Soups are such an inexpensive option and can be packed full of nutrients. My biggest take away from the 10-Day Soup Challenge is eating raw doesnโ€™t have to be hard and itโ€™s much more fun with friends! Thank you all!
