I’ve got a rawkstar lineup of fall soup recipes to share with you today. These ten incredible healthy soup recipes are all part of my free 10-Day Soup Challenge. They are made with whole food, plant-based ingredients, full of flavor and just waiting to be a part of your Fall menu. I love soup and make it often, even while living in Florida. A good cup of soup helps me pretend cooler weather is coming.

As we move into the fall season, there are also so many new veggies coming up and ready to be put in hearty, savory dishes. So let’s dive right in!

I can’t wait to dive into these soup recipes with you! I’ve got a little bit of everything since Autumn is so full of fresh vegetables. These soup recipes for Fall will hopefully help you find a few go-to meals that you can make and freeze to use throughout the season.

Feel free to pair these soups with other dishes for a complete meal if they seem a little light on their own. While the Simple Ramen is a perfect lunch, I love pairing the Tomato Soup with vegan basil pesto on toast or adding a kale Caesar salad to enjoy alongside some vegan Potato soup.

Versatile Soup Toppings

Sometimes you find a soup recipe in need of a bit of oomph. I get it (I put hot sauce on a lot of dishes). Here are two quick n’ easy recipes I keep on hand in a flavor emergency, or just to jazz up my meal:

  • Cashew cream: A good vegan sour cream can provide depth and creaminess to almost any recipe. If you’d add sour cream to a soup, then you can add this!
  • Pesto: There’s just something about pesto that instantly levels up a recipe. I love adding a dollop of vegan pesto to a good vegetable soup. It’s just so good! I’ve got a few different variations you can try, and they all freeze well.
  • Vegan cheese sprinkle: Parmesan is a staple in many American households. This vegan cheese sprinkle certainly gives Kraft’s a run for its money, and its made with real ingredients that really do add a cheesy finish to your dish.

Healthy Soup Recipes FAQs

What’s the healthiest soup you can eat?

There are a variety of soups that boast incredibly healthy benefits. All ten of the soups on my list are made with whole food, plant-based ingredients. They use seasonal produce that packs the biggest nutrient punch, and they leave out inflammatory dairy products (nothing against dairy, yet it causes an inflammatory response in a lot of people!). Use limited ingredients or homemade vegetable stock with limited sodium as well.

Is soup a healthy dinner option?

It can be! Look for a soup with whole food, plant-based ingredients. Use fresh, seasonal ingredients for the most nutrient-dense soup. Look for recipes with protein and healthy fat so they can fill you up and keep you full longer.

Which type of soup is best for weight loss?

While there is no ‘magic soup’ for weight loss, as there are so many factors that contribute to a person losing weight, you can’t go wrong with using whole food, plant-based ingredients in your soup. Make a soup that will fill you up and not leave you hungry 30 minutes later. When I’m looking for a hearty soup I go with my Spiced Lentil Soup, Split Pea Soup or Minestrone. All these are great options for delicious, healthy meals.

Soup-Making Kitchen Equipment

If you’re ready to start whipping up some soup, make sure you have these items in your kitchen:

  • A stock pot, crock pot, instant pot or ceramic pot. Something that can hold six quarts.
  • A blender or immersion blender. Make sure your blender is rated for hot liquids.
  • A good knife and cutting board for chopping ingredients.

That’s it! Soup is great because you don’t need a bunch of fancy equipment to make it, and many soups can even swap ingredients you have on hand and still taste delicious. Ready, set, soup!

    My favorite soup from the challenge was the Vegan Tomato Soup. So good with a toasted vegan cheese sandwich. Thank you so much for this 10 day challenge. I learned how easy it is to make a really healthy pot of goodness from scratch. Definitely will use these recipes again!

  2. First of all I would like to thank everyone for putting together this challenge. I know how hard and time consuming it is to put an event together! Great job!
    While all the recipes were packed with healthy and fresh ingredients and all brought a different twist and taste to the table my favorite was the tomato. I started making homemade tomato soup one day when I didnโ€™t have any Campbellโ€™s on the shelf. So it was nice to try someone elseโ€™s. And it was so yummy and packed with so much flavor. My runner up to the tomato was the Thai Coconut. While I am not a fan of coconut or curry this one was hard for me to get excited about. But I loved it!! While all the soups and this challenge was something to look forward to each and every day, the best part was the day my daughter called and ask me if I wanted to join with her. She lives on her own now so we donโ€™t get a chance to cook together much so it was nice talking and comparing notes while cooking and sending pics of our soups. We even had a girlโ€™s weekend getaway and brought all the ingredients with us and made them together. So in closing this challenge not only provided me with some healthy and new soup ideas it gave me lasting memories of enjoying my time with me daughter.

    I loved the Carrot Ginger Soup because it has a bit of sweetness from the coconut milk and carrots and a little kick from the ginger, garlic and cumin. It’s a perfect blend of healthy comfort on a chilly autumn day. I’ve had a little cold and this soup hits the spot. It’s creamy and very filling. I added some vegan parmesan cheese to it and served it up with a couple of slices of toasted cauliflower thins with vegan butter, avocado slices seasoned with a little sea salt and garlic/onion powder. Delicious! This challenge is great for this time of year.

    I have truly enjoyed these past 10 days! My freezer is chock full of healthy soup leftovers. My favorite soup genuinely surprised me, and it was the Tomato Soup. I normally am not a huge fan of tomato soup but this one was outstanding. It was also my partner’s favorite, and we never agree on anything. I think it would make a great healthier alternative to pasta sauce with all the hidden veggies. My second favorite is Carrot Ginger, which I turned into a curry carrot ginger soup.

    I’ve learned the following:
    1) I need a bigger freezer.
    2) All soups start with onion, carrots and celery.
    3) If a soup doesn’t start with mirepoix it’s still delicious.
    4) I learned the term mirepoix.
    5) Roasting veggies before making soup enhances and sweetens the flavors.
    6) Soup makes an awesome quick breakfast.

      I loved this challenge! My favorites were the corn chowder, detox soup, and the creamy tomato!
      I learned that there are simple recipes out there and it is completely possible to make homemade soup everyday with minimal cook time and low cost ingredients. Iโ€™ve also never been keen on tomatoโ€™s and have never made or had tomato soup before and it turned out to be one of my favorites! Iโ€™ll have to try the smoothie challenge next!

    The Autumn 10-day Soup Challenge had so many soups I never would have tried on my own. The Paprika Corn Chowder was so delicious and probably my favorite. However, It may be a toss up with the Roasted Red Pepper and the Detox Lentil (that broth!).

    This challenge was so interesting! I am not a soup lover, so that in and of itself was a challenge, yet there are soups I will definitely be making again (minestrone, tomato, detox). This was fun!

    Living with someone that does not really like or even enjoy eating veggies made this challenge just that, a challenge.
    But not surprisingly there were at least a few soups that have been added to the “Needs Repeating” recipe book. The Thai Coconut Soup was the biggest hit with the pickiest of eaters.
    Which was very surprising because she is not a big fan of coconut or veggies and was dreading eating that one the whole time. But then she reached for the ladle to get another helping. Winner-Winner, Veggie Soup Dinner.
    However, modifications were made. I used 2 cans of coconut milk and added one (1) cup of veggie broth then frying the curry paste in a bit of canola oil before adding the coconut milk helped with bringing out the flavor more as well.
    Also, my elderly parents enjoyed their soup deliveries when we had too much left over. They would call at night asking if there was any of that day’s soup left for them to try.
    I am sure that they want to try more of what Simple Green Smoothies has to offer. So… challenge accepted.
    As stated previously, I made several modifications and have a few more that we want to try on some of the soups as well.
    For example using Spicy Red Pepper Soup as a stock/base to change the flavor profile of the other soups or to reduce down to make a pizza sauce.
    Looking forward to more challenges in the future.

    Was a very delicious 10 day challenge. My favorite recipe was the smoky corn chowder!!! Shared with my mom and sister and they both loved the flavor as much as I do!
    Filling but not heavy!! Crusty bread and meal is complete.

    This 10 day soup challenge was a good experience for me; it got me used to the preparation process and introduced me to different ways to use the spices. My two favorites were the vegan tomato soup, the classic minestrone, and the detox soup. I did not like the vegan chicken noodle soup, or the roasted pepper soup, or the black bean soup, but I ended up liking the carrot ginger soup, and the detox soup ended up being one of my favorites, even though I was not looking forward to making either one of those. I had trouble rating the last few soups as it was not clear how to do so and a couple of them said I made duplicate comments, which I hadn’t, so I don’t understand that. It could have been more user friendly, but I am not very tech savvy anyway.

    I really enjoyed the 10-Day Soup challenge and it was hard to pick just one favorite! My top 3 were the Tomato Soup, Roasted Red Pepper Soup & Thai Coconut Soup. Most of the soups were total change of what foods I normally would eat & who knew roasting peppers was so easy! I learned a lot from the Jen & the challenge, along with the members for tips & ideas and that prepping/chopping makes it quick to pull together a meal that is satisfying, tastes great & is good for me too! And big take away was I’ve been making it too difficult to add veggies and it really isn’t – a smoothie and/or a soup are easy to do ๐Ÿ™‚

    The 10 day soup challenge was a great way to get my husband on board with some nutrition updates (heโ€™s pretty meat and potatoes guy)! My fave was the Thai soup with extra mushrooms, next time Iโ€™ll also add tofu. His was the pepper and the corn paprika. Our kids enjoyed sampling the soups as well! Iโ€™ve been having some digestive difficulties and doing this challenge helped even out my system, thank you!!!

  16. I loved this soup challenge! I decided to keep the whole 10 days pretty light to move off of a 6week weight loss plateau. And it worked! The soups were delicious. It’s hard to choose a favorite! I especially loved the Thai Coconut Soup, the Detox Soup and the Classic Minestrone! Plus the concept of adding a bit of pesto as a topping…..Life changing! Lol! Thanks for putting this together!
