Healthy Popsicle Recipe for Glowing Skin

I’m all for a healthy popsicle all day every day… why not?!

I love how you can take any of our green smoothie recipes and transform them into smoothie bowls or popsicles just like that. Super easy and keeps the healthy plant-based eating foundation going on.

This popsicle recipe is from our Fresh Start Spring Cleanse and is loaded with healthy fats and fiber… which should become your new BFFs (if they aren’t already). Avocado and coconut have beautiful amounts of healthy fats in them naturally, which is why I like to blend with them. Healthy fats help our digestive system, our skin and our hydration levels as well— and all of this translates into glowing clear skin. So let’s get blending!

This healthy popsicle recipe is creamy and refreshing on a hot summer day. Slightly sweet with loads of tangy fresh lime juice and plenty of creaminess from the avocado and coconut milk, it’s hard to believe these are a part of our Fresh Start Spring Cleanse …. but they totally are!

1 ripe avocado (weighs about 8 ounces)

1 cup fresh spinach

13.5 ounce can full-fat coconut milk

¼ cup (60 mL) fresh lime juice

2 tablespoons maple syrup or honey

1 teaspoon vanilla extract

  1. Puree the ingredients in a blender until very smooth.
  2. Pour into popsicles molds or paper cups with wooden popsicle sticks.
  3. Freeze until firm, at least 4-5 hours, preferably overnight.

Quick question. I’m 56 years old and have cystic acne. I’m not very fond of popsicles so could I reap the same “glowing skin” benefits by just drinking the smoothie without freezing it?

Please – is there an alternative for coconut milk? I’m kind of sick of all-coconut, all of the time!

    Hi Jane,

Sick of coconut? Say it isn’t so!! Hahaha, just kidding. Swap in another plant-based milk you love! Some great options are almond milk, hemp milk – and my creamy favorite – cashew milk!

Me and my kiddos Love this recipe for popsicles or smoothies! What is the difference between using the CANNED coconut milk vs. the regular stuff in the box/refrigerated? Thanks!

    Hey Stephanie,

The canned full fat coconut milk is much richer and creamier than the regular coconut milk you could buy in the cold section or the box. It makes for a delicious added flavor to any smoothie or popsicle!!
