I love how you can take any of our green smoothie recipes and transform them into smoothie bowls or popsicles just like that. Super easy and keeps the healthy plant-based eating foundation going on.

Health benefits of this popsicle recipe

How to blend a popsicle

The key to a delicious healthy popsicle is making sure all the chunks are gone. You want something smooth and creamy to suck on— not chew on. I use my Vitamix, which is the best high speed blender (in my opinion).

Description

This healthy popsicle recipe is creamy and refreshing on a hot summer day. Slightly sweet with loads of tangy fresh lime juice and plenty of creaminess from the avocado and coconut milk, it’s hard to believe these are a part of our Fresh Start Spring Cleanse …. but they totally are!

Ingredients

  • 1 ripe avocado (weighs about 8 ounces)
  • 1 cup fresh spinach
  • 13.5 ounce can full-fat coconut milk
  • ¼ cup (60 mL) fresh lime juice
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract

Instructions

  1. Puree the ingredients in a blender until very smooth.
  2. Pour into popsicles molds or paper cups with wooden popsicle sticks.
  3. Freeze until firm, at least 4-5 hours, preferably overnight.

    Great recipe!!! My partner and I made these yesterday, they froze overnight…had one today after our lunch smoothie (strawberry banana healthy smoothie), this is SO good! It will hold me over until dinner…OMG! Best recipe ever.       The canned full fat coconut milk is much richer and creamier than the regular coconut milk you could buy in the cold section or the box. It makes for a delicious added flavor to any smoothie or popsicle!!

      Sick of coconut? Say it isn’t so!! Hahaha, just kidding. Swap in another plant-based milk you love! Some great options are almond milk, hemp milk – and my creamy favorite – cashew milk!
