This apple beet juice leans heavy on the veggies and keeps the sugar lower than most beet juice recipes—while still tasting fresh, vibrant, and refreshing. If you’re ready to start juicing with intention, this is a great place to begin.
Juicing is something I’ve leaned into more over the past few years as a simple way to use up extra produce and give my body a little support when it feels sluggish. Since juicing removes most of the fiber, I’m mindful about building blends that won’t send my blood sugar on a roller coaster.

Ingredients You’ll Need
I love keeping juice recipes minimal, because when you start with quality produce, you don’t need much to make something delicious. You can find everything at your local grocery store:
- Apple: I use a red apple in this recipe for a naturally sweet, smooth flavor that balances the earthy beets and cabbage. Honeycrisp and Fuji are my go-to varieties because they’re crisp and juice beautifully. Apples also bring natural vitamin C to the mix while keeping the flavor bright.
- Beet: Beets are well known for supporting the liver and natural detox pathways, yet most of us don’t eat them often. Adding them into your juice is an easy, delicious way to get more of this powerful root into your day. Raw beets are ideal, you can get them in the vegetable section.
- Red cabbage: I always sneak a vegetable (or two) that I don’t eat often into my juices to reap the benefits. Red cabbage delivers a solid dose of vitamins C, K, A, and B6.
- Lemon: A splash of lemon brightens everything up, helping mask the potent cabbage and beet flavors and turning this nutrient-dense juice into something refreshing, smooth, and genuinely enjoyable to drink.

How to Make Apple Beet Juice
Making this vibrant apple and beet juice is easier than you think. In just 15 minutes, you can have a refreshing glass that’s both nourishing and delicious. Here’s how I do it:

- Wash and peel your beet and lemon, core your apple, and roughly chop the red cabbage. Cutting them into smaller pieces helps your juicer do its job faster.

- Start with the beet, then add the apple, lemon, and cabbage into your juicer. I usually alternate a few pieces at a time to help everything juice smoothly.

- Give it a stir once everything’s juiced.

- Pour your juice into a glass and enjoy. One serving is packed with antioxidants, vitamins, and minerals to fuel your day.
Equipment You’ll Need
- Juicing can be a pain, and it usually comes down to the juicer. The one I love and recommend without hesitation is the Nama J2 Cold Press Juicer (10% off with code: JEN10). It’s quiet, sleek, extracts a ton of juice from the pulp, and—best of all—is easy to clean. Honestly, that alone makes juicing something I look forward to.
- No juicer? No problem. You can blend these ingredients in one of my recommended smoothie blenders instead. Just add ½ to 1 cup coconut water to help everything blend smoothly, then strain through a nut milk bag— just like I do in my blender green juice recipe.

Easy Swaps and Add-Ins
This apple beet juice is flexible, which makes it perfect for using what you have on hand. You can swap ingredients if needed or add a little extra for a flavor twist.
- Swap apple: No red apple? Use pear for a softer sweetness or green apple for a slightly tart finish. Both juice beautifully.
- Swap cabbage: Out of red cabbage? You can leave out but I encourage you to toss in other leafy green vegetables.
- Citrus twist: A squeeze of orange, lemon, or lime brightens up the juice and adds vitamin C.
- Ginger or turmeric: A small knob of fresh ginger or turmeric gives the juice a warming kick and adds anti-inflammatory benefits.
Beet Juice Recipe Tips
- Juice with fresh produce: Buying produce from a farmers market or the day of delivery guarantees the most flavorful and hydrated produce.
- Use cold produce: Chilled apples, beets, and cabbage give your juice a naturally refreshing taste. When your produce is cold, you won’t need to add ice after you juice, which keeps the flavor bold and undiluted.
- Prep smart: Trim ends, peel if needed, and cut into chunks that fit easily in your juicer or blender.

Many people love this juice when they need a natural pick-me-up. Beets are vibrant root vegetables, and apples add natural sweetness, making this a refreshing way to feel fueled without reaching for another cup of coffee.
Yes! Daily servings can be a tasty way to sneak in extra nutrients. Just keep it balanced, mostly veggies with a touch of fruit, to avoid spiking blood sugar. Variety is key, so mix it up with other juices too.
It’s up to you. If your beets are organic and clean, you can juice them with the skin on, it adds extra fiber and nutrients. If they’re large, older, or not organic, peeling helps remove bitterness and any residual dirt.
Fresh is always best, but you can store your juice in an airtight container for up to 24 hours. Give it a good shake before drinking, as separation is natural.
