As I started making more smoothies, I found myself wandering the produce aisle thinking, Could I turn this into something tasty? This strawberry carrot smoothie came from one of those curious moments—and I’m proud of how delicious it turned out. If you’re looking to get more variety of fruits and veggies into your day (and love blending as much as I do), this one’s definitely worth a try.

Ingredients You’ll Need

All of the ingredients in this strawberry carrot smoothie are simple, plant-based whole foods you can feel really good about. Here’s what I’m blending:

  • Carrot: Carrots add natural sweetness, beautiful color, and a subtle earthy depth that balances the fruit. Both raw and frozen carrots work well in this smoothie. If your blender isn’t very powerful, you can steam carrots before blending to soften. Either way, carrots will add natural sweetness and vibrant color to your smoothie.
  • Strawberries: Sweet, juicy strawberries bring natural flavor and vibrant color to this smoothie. Fresh, in-season berries taste best, but frozen strawberries work beautifully too.
  • Pineapple: This tropical fruit adds brightness and natural sweetness that ties everything together. Fresh pineapple from the produce section is amazing, but frozen pineapple chunks are convenient and give the smoothie a thick texture.
  • Spinach: It’s the ultimate “sneaky veggie” ingredient (you can leave out, too). Look for baby spinach in the produce section. You can also check out my guide on how to freeze spinach to save for later use.
  • Coconut water: Light, refreshing, and naturally hydrating, coconut water blends everything together without making the smoothie heavy. Look for it in the beverage aisle.

How to Make Strawberry Carrot Smoothie

If you’ve got five minutes and a blender, you’ve got this smoothie. The ingredients come together quickly to create a smooth, fruity blend with a subtle veggie boost. It’s an easy carrot smoothie recipe that’s perfect for smoothie lovers:

  1. Wash the spinach and strawberries thoroughly. Cut the end off the carrot and chop it into small pieces so it blends easily. If using fresh pineapple, cut pineapple into chunks.
  2. Place the coconut water in the blender first, followed by the spinach, strawberries, carrot, and pineapple. Adding the liquid first helps the blades move more freely.
  3. Start blending on low speed, then gradually increase to high. Blend for 45–60 seconds, or until the smoothie is completely smooth and creamy with no visible chunks.
  4. Pour the smoothie into a glass and enjoy right away for the best flavor and freshness.

Recipe Tips

Ingredient Swaps and Add-Ins

The more I drink smoothies with leafy greens, the more my body starts to crave other veggies. Here’s a couple swap ideas to make this blend your own:

  • Swap spinach: You can replace spinach with another leafy green vegetables like kale. Carrot tops are perfectly edible, and would also make a great swap in this smoothie!
  • Swap coconut water: You can use regular water, or a brewed herbal tea.
  • Use other berries: Switch out those strawberries with another berry (raspberries would be my first choice!). If you want to keep the sugar low, you can use my low sugar fruits list.

  • Boost with seeds: Add a tablespoon of hemp hearts or flaxseed for extra staying power. As long as you’re using a high-powered blender, they’ll blend in smoothly without affecting the texture.

  • Blend spinach and coconut water together until smooth.
  • Add remaining ingredients and blend again.

Notes

  • Meal prep friendly: You can store it in an airtight container in the fridge for up to 24 hours. Shake or stir well before drinking.
  • Use frozen fruit: Add at least one frozen fruit (like strawberries or pineapple) to keep the smoothie cold and thick. If using all fresh ingredients, serve over ice for a chilled finish.
  • Carrot tip: If you don’t have a high-speed blender, using steamed carrots makes it easier to blend, or you can also leave them raw if you have the right smoothie blenders
  • Make smoothie packs: Prep frozen meal prep smoothie packs by portioning spinach, strawberries, carrots, and pineapple into freezer bags. When ready to blend, just add coconut water and go.

    Really enjoyed this one. It was my first time using carrots in a SGS. I liked it and will be adding it to my rotation. My only o the comment is that I should have blended it longer.

    Well it is not the prettiest smoothie.

    I miss the smoothness of the first few days of smoothies. But it is still good. The carrot is not super overpowering.

    Admittedly I hate carrots and put more in this by mistake, but just did not love it. The carrot taste came through too much for me. That said I did force it down and felt better afterwards so I’m hoping I can force myself into liking it

    Not a fan of the Carrot in a smoothie. I love carrot ginger juice. Adding almond milk was the deal breaker for me.
