Raw vs Cooked Carrots

Someone asked me whether raw or cooked carrots were more beneficial in this carrot smoothie. I laughed, thinking it was a joke… and then I actually researched it. The answer may surprise you!

According to the National Library of Medicine, cooked, pureed carrots actually released more beta-carotene than raw carrots did. So if you’d rather cook your carrots before blending, then go for it! Either way, carrots are a great, sweet veggie to add to all kinds of smoothies.

To Peel or Not to Peel

As with many fruits + veggies, the peel (or outside wrinkly part) of a carrot actually contains some of its nutrients. So I recommend leaving that carrot whole before blending. This way you can benefit from as much of that carrot as possible. If your carrots came with their leafy green tops, then you can even toss those in. Carrot Smoothie Ingredient Swaps

If you’d told me when I started drinking smoothies that I’d be adding veggies like kale or spinach into my smoothies, I’d have told you you were crazy! Yet the more I drink smoothies with leafy greens, the more my body starts to crave other veggies and so I got creative with my blends.

  • Swap spinach with another leafy green vegetables. Carrot tops are perfectly edible, and would make a great swap in this smoothie!
  • Swap coconut water with regular water, or a brewed herbal tea.
  • Switch out those strawberries with another berry (raspberries would be my first choice!). If you want to keep the sugar low, you can use my low sugar fruits list.

Strawberry Carrot Smoothie

I know…a carrot smoothie recipe?! First time I was like, ummm…no thanks. Yet this one is so delicious with a sweet unique undertone that you’ll begin to crave.

  • Blend spinach and coconut water together until smooth.
  • Add remaining ingredients and blend again.

  • Use at least one frozen fruit to make the smoothie cold or serve over ice.
  • Using steam carrots make it easier to blend, or you can also leave them raw. Either way, the right smoothie blenders make it quick and easy.
  • Make frozen meal prep smoothie packs so you have smoothie packs ready to go.

    I was nervous about this one, but pineapple saved the day, as usual! I could taste a bit of carrot, but it really just gave the smoothie a feeling of freshness.

    Enjoyed this one and you don’t even taste the carrot. Added turmeric ginger smoothie cubes, pumpkin and hemp seeds.

    I was apprehensive about this one, because i haven’t like the carrot smoothies i’ve made in the past. Steaming the carrot ahead of time really made a difference. I didn’t notice it this smoothie. The predominate flavors were of strawberry and pineapple.

    Yum….. an interesting smoothie. As always I made it a meal replacement smoothie and I added something wild too: a piece of fresh ginger!!!

    I can’t even taste the carrot. For me that’s great! Lol! This one is nice and tangy, not overly sweet, and refreshing start to my morning.

    I’m on the fence with this smoothie. Not sure if it’s the carrots in a smoothie. While I like carrots not sure I like it in my smoothie, I do like trying new things. I’ll keep an open mind to trying it again n maybe adding some other fruits❤️

    This one was just alright; I used purple carrot so maybe it gave too strong of a carrot flavor? I did taste the hint of sweetness, so it was interesting getting the earthiness and sweetness.

    1. Hi Laura – Great feedback! Purple carrots actually have one of the most sweet flavors of all the carrots. However, they also can have a peppery taste along with it, which might account for the earthiness. If you’d like the nutritional benefit of carrot, yet a milder flavor, you could try a yellow carrot next time. They are said to be the most mild and have hardly any earthy flavor. Let us know what you think if you do!

    Day 8 of my 10 challenge – this one has me nervous first one adding vegetables but YUM YUM YUM , these challenges are really inspiring, have me trying smoothies for the first time and consuming more fruit and vegetables than I have ever had in my life !!!
    I share in all my smoothie groups and NutriBullet recipe pages I can not recommend these recipes another !!!

    I do not particularly like carrots, especially in my smoothies. It just isn’t as smooth and I guess I have sensory issues. lol.
    The taste was not so bad, just didn’t like the texture. I made a 2nd and left out the carrot, but added some kale and i liked it better.
