Healthy Soup Recipes
I can’t wait to dive into these soup recipes with you! I’ve got a little bit of everything since Autumn is so full of fresh vegetables. These soup recipes for Fall will hopefully help you find a few go-to meals that you can make and freeze to use throughout the season.
Feel free to pair these soups with other dishes for a complete meal if they seem a little light on their own. While the Simple Ramen is a perfect lunch, I love pairing the Tomato Soup with vegan basil pesto on toast or adding a kale Caesar salad to enjoy alongside some vegan Potato soup.
Fall Soup Ingredients
While I love the berries, squashes, and crispy produce of Summer, I find myself craving the buttery, hearty veggies of Fall. You’ll find many Fall-fresh ingredients in the above healthy soup recipes because ingredients used in their proper season contain the most nutrients. If you’re creating a fall kitchen garden, then pick from this list!
Artichokes | Chiles | Pumpkins |
Arugula | Edamame | Radishes |
Beets | Eggplant | Shallots |

Versatile Soup Toppings
Sometimes you find a soup recipe in need of a bit of oomph. I get it (I put hot sauce on a lot of dishes). Here are two quick n’ easy recipes I keep on hand in a flavor emergency, or just to jazz up my meal:
- Cashew cream: A good vegan sour cream can provide depth and creaminess to almost any recipe. If you’d add sour cream to a soup, then you can add this!
- Pesto: There’s just something about pesto that instantly levels up a recipe. I love adding a dollop of vegan pesto to a good vegetable soup. It’s just so good! I’ve got a few different variations you can try, and they all freeze well.
- Vegan cheese sprinkle: Parmesan is a staple in many American households. This vegan cheese sprinkle certainly gives Kraft’s a run for its money, and its made with real ingredients that really do add a cheesy finish to your dish.

Healthy Soup Recipes FAQs
There are a variety of soups that boast incredibly healthy benefits. All ten of the soups on my list are made with whole food, plant-based ingredients. They use seasonal produce that packs the biggest nutrient punch, and they leave out inflammatory dairy products (nothing against dairy, yet it causes an inflammatory response in a lot of people!). Use limited ingredients or homemade vegetable stock with limited sodium as well.
It can be! Look for a soup with whole food, plant-based ingredients. Use fresh, seasonal ingredients for the most nutrient-dense soup. Look for recipes with protein and healthy fat so they can fill you up and keep you full longer.
While there is no ‘magic soup’ for weight loss, as there are so many factors that contribute to a person losing weight, you can’t go wrong with using whole food, plant-based ingredients in your soup. Make a soup that will fill you up and not leave you hungry 30 minutes later. When I’m looking for a hearty soup I go with my Spiced Lentil Soup, Split Pea Soup or Minestrone. All these are great options for delicious, healthy meals.
Soup-Making Kitchen Equipment
If you’re ready to start whipping up some soup, make sure you have these items in your kitchen:
- A stock pot, crock pot, instant pot or ceramic pot. Something that can hold six quarts.
- A blender or immersion blender. Make sure your blender is rated for hot liquids.
- A good knife and cutting board for chopping ingredients.
That’s it! Soup is great because you don’t need a bunch of fancy equipment to make it, and many soups can even swap ingredients you have on hand and still taste delicious. Ready, set, soup!
Idk So many good soups! And I’m not I’m really a soup person! Think I really loved the corn chowder, red pepper and tomato best. Which is unlike me because I’m mostly a chunky soup person.
Love how many rawkstars are learning new things about their tastes with this challenge. ๐
This was an amaging plant based soup challenge. I have wven shared this experience with others who are on the same pathway. I have gained mixing some amazong flavors and even creativity mxing some leftovers with each other. One day at a time with a lifestyle change makes all the difference . So the most like soup for me was the black bean. The creaminess of this and the preparation were both perfect .
Thank you and I look forward to continuing the journey!
This was an amazing plant based soup challenge. I not only gained blending some amazing flavors to acquire a masterpiece but I even had a little creativity by combining a few leftovers which was a bigger soup challenge win. I have 3 soups that I missed attempting to keep up on the daily challenge. But I have shared this great event with others who are on the same path as I. Beyond greatfull for this opportunity as I continue to transition within this lifestyle change.
The Tai Coconut was my fave. It was a new flavor profile for me and absolutely delicious. Loved this challenge…showed me how easy eating healthier really is! Thank you!!!!
Carrot Ginger is in my top 3 soups!!!! YUM- definitely making this next week & again for Halloween (so vibrantly festive). I blended it in the blender and topped wit chives. THANK YOU so very much for this great challenge. I am going to up my soup game from now on! Brenda

On each day, I ate the designated soup for lunch. I know have almost 20 cubes of frozen cubes of healthy, delicious, plant-based soups! I loved the variety of recipes.
Thank you for inviting me to do the challenge!!
Made all these recipes for the soup challenge, and I was shocked that I enjoyed so many of them! I would even have soup as leftovers the next day with most recipes.
Soup? Leftovers? What’s not to love!

I started this soup challenge 10 days ago 6 lbs heavier. Eating plant based has allowed me to change how I feel physically. I was diagnosed with Polymyalgia rheumaticaย (PMR) in March which is a condition that causes pain, stiffness and inflammation in the muscles and by eating plant based it has allowed for a relief in the inflammation that I experience and overall I feel better with healthier plant based meals with lots of veggies. Improvement so much so that I think this will me a permanent change in my diet to minimize all meat except proteins like chicken and the healthfullness of fish. True appreciation to all the soup contributors and and #simplegreensmoothies for the impact you’ve had on my life these past 10 days.

Melisa!!! We’re so excited that the power of plants has made this amazing difference for you! Keep us posted on how things go. xoxo
What a fun challenge! We were traveling for part of the challenge so I did not make all the soups buy the ones I did I loved. I took soup ingredients to my daughters house and made the minestrone while visiting. It was terrific! I think i I say my favorite was the corn chowder because it got very favorable responses from everyone! And one outcome for me is that my freezer is stocked with soups as we could not eat all the soup every day, Winner, winner, soup for dinner!
Sensational soups!
The past 10 days have been fun! With a bit of prep work anyone can have healthy and delicious meals. The best part of Simple Green Smoothies soup challenge is being in a community where you can share your thoughts or post a question.
My favourite soup was the Thai coconut soup! The bold Thai flavours take over. Itโs jammed packed with veggies!
From doing this challenge I was easily able to increase my veggie intake. The best part is that my kids even liked some of the soups! Talk about a win!
You hit the nail on the head Kelly with prep. Planning ahead is key to eating healthy and totally leads to success. Way to rawk it!
This has been a difficult challenge. Once past the novelty, I had to finish the leftovers myself. I would have love to get a little breather in between like 10 soups in 15 days. I will cook the remaining soups over the next few days. My favorite soup so far is the Day 5 Detox soup.
Glad you tackled this with us, Richard! Remember that most soups freeze really well, so be sure to put your freezer to work for you next time you find yourself with too much.
I absolutely loved making all the soups for this challenge! I had never really made many vegan soups before so I was really interested in the variety of recipes. I liked having pre-made grocery lists which made shopping easy and fast.
As a diabetic, my glucose numbers were in range every single day while following this challenge. I intend to continue soups as quick lunches especially since I froze several of these.
Cashew cream was delicious and I loved how easy that was to make.
I lost eight pounds too and overall, I have just felt better during the past ten days.
Itโs really hard to pick a favorite soup because they were all yummy, but Iโd give the minestrone an A+ for flavor and texture.
Thank you for creating this amazing challenge!!
Holy soup, Suellyn! 8 lbs?! That’s incredible. You get an A+ from us. ๐
All the soups were great! If I had to decide I really enjoyed the the vegan Tomato soup because it was filling. Second Roasted Red Pepper Soup. My husband First was Paprika Corn Chowder. I enjoyed the Black Bean Soup. They were filling and easy to make. Participating in the soup challenge my family got in their vegetables and I dropped some weight! An added bonus.
It’s been such a fun 10-day soup challenge! Our favorite, hands-down, was the Thai Coconut. I added extra Thai curry paste, extra carrots, and some garden tomatoes. It made plenty for leftovers which is another win!
All that coconut was particularly helpful because I’m detoxing from an intestinal bug. And, we both lost a couple pounds! Yay for results!
Kudos for setting up this challenge and helping us get into the healthy autumn mood. It’s been fun! Let’s do it again!
Thanks for joining us, Kelly!
The ten day challenge was great. It was fun to know what i was making from day to day and that my choices were healthy and easy to make. I was not sure how my hubby would react to this challenge but he was looking forward to the new soup each day. I have certainly gotten a better appreciation for easy plant based soups and will be looking for more meal ideas. I also truly enjoyed the soups, my favorite being the detox lentil soup.
I love Simple Green Smoothies challenges in general, and to join the 10 days soup challenge seemed like a evidence! With the days getting colder and the harvests so plenty, the timing was just perfect. I love the uses of such ร variety of produce, yet without being cumbersome. The challenge was well tough of, easy to follow, with a variety of recipes to please people of all tastes. The recipes are easy to execute, and the fact that we can adjust them to our tastes, dietary requirements or simply to accommodate the other person in our family is simply great. I like the conviviality of the support group, the constant follow-up, the email answering, and the great document you put together. Linking different sites is also awesome, opening our horizons to a healthy path. I have a few close favourites, detox soup is definitely in my palette, but i love the corn chowder the most as it is very different to what i would normally do. I like the mix of flavours and textures, crunchy, smooth and sweet and salty. Thank you for that great experience, canโt wait for the next challenge!
