Soup doesn’t just keep us warm—it also nourishes, comforts, and fills our homes with the best cozy aromas of the season. As fall settles in, I’ve got a lineup of healthy soup recipes that are perfect for chilly evenings, meal prep Sundays, or anytime you want something hearty and wholesome.
These ten incredible soups are all part of my 10-Day Soup Challenge. Each one is made with whole food, plant-based ingredients, packed with flavor, and ready to be a part of your fall menu. I love soup and make it often—even while living in Florida. A good cup of soup helps me pretend cooler weather is on the way.

These soup recipes for Fall will hopefully help you find a few go-to meals that you can make and freeze to use throughout the season. Feel free to pair these soups with other dishes for a complete meal if they seem a little light on their own. While the Simple Ramen is a perfect lunch, I love pairing the Tomato Soup with Vegan Basil Pesto on toast or adding a Kale Caesar Salad to enjoy alongside some Vegan Potato Soup.

Healthy Soup Toppings to Maximize Flavor
Sometimes you find a soup recipe in need of a bit of oomph. I get it (I put hot sauce on a lot of dishes). Here are two quick n’ easy recipes I keep on hand in a flavor emergency, or just to jazz up my meal:
- Cashew cream: A good vegan sour cream can provide depth and creaminess to almost any recipe. If you’d add sour cream to a soup, then you can add this!
- Pesto: There’s just something about pesto that instantly levels up a recipe. I love adding a dollop of vegan pesto to a good vegetable soup. It’s just so good! I’ve got a few different variations you can try, and they all freeze well.
- Vegan cheese sprinkle: Parmesan is a staple in many American households. This vegan cheese sprinkle certainly gives Kraft’s a run for its money, and its made with real ingredients that really do add a cheesy finish to your dish.

Healthy Fall Soup Ingredients
While I love the berries, squashes, and crispy produce of Summer, I find myself craving the buttery, hearty veggies of Fall. You’ll find many fall-fresh ingredients in the above healthy soup recipes because ingredients used in their proper season contain the most nutrients. While there is no ‘magic soup’ for weight loss, as there are so many factors that contribute to a person losing weight, you can’t go wrong with using whole food, plant-based ingredients in your soup. Make a soup that will fill you up and not leave you hungry 30 minutes later. When I’m looking for a hearty soup I go with my Spiced Lentil Soup, Split Pea Soup or Minestrone. All these are great options for delicious, healthy meals.

To be very honest I joined the 10 day Soup challenge in hopes of winning the Vitamix because I really need it and never owned it but boy oh boy just fell in love with the soups. I never thought I and the kids would be enjoying the soups everyday and those too only plant based. Today my teenager asked excited what is the soup of the day Simply Loved the experience. Thank you so much Jen for putting it together and sharing these amazing healthy soup recipes.
Favorite is hard to pick however if I have to I’ll pick carrot ginger soup however definitely will be making detox , coconut Thai ( with siracha) and roasted red pepper again and again.
Along the way I discovered unexpected love of soups, everyday fresh home cooking is not that hard and surprisingly found out that I’m not missing eating meat that much. ( Just had it a couple of times in 8/10 days). Maybe I’m ready to try plant based diet for a month or more that I’ve been planning to do forever but thought wouldn’t last that long.

The 10-Day Soup Challenge was so much fun as I love soup. I loved all of the recipes except I’m allergic to coconut and couldn’t do that one. My absolute favorite is the Black Bean Soup. The ingredients were basic and easy to find, and the actual putting together of the soup was quick, and the taste was delicious. I’m all for recipes that have easy to find ingredients and that do not take a long time to prepare and cook. I still have a little bit of Black Bean soup leftover so I’m having it for dinner with a large salad and baked tortilla chips.
Love soup and I appreciate eating a healthy prepared soup can be quite satisfying, especially when accompanied by a salad. This broadened my palate.
Will definitely make these again.

My favorite soup from the challenge was the Vegan Tomato Soup. So good with a toasted vegan cheese sandwich. Thank you so much for this 10 day challenge. I learned how easy it is to make a really healthy pot of goodness from scratch. Definitely will use these recipes again!
First of all I would like to thank everyone for putting together this challenge. I know how hard and time consuming it is to put an event together! Great job!
While all the recipes were packed with healthy and fresh ingredients and all brought a different twist and taste to the table my favorite was the tomato. I started making homemade tomato soup one day when I didn’t have any Campbell’s on the shelf. So it was nice to try someone else’s. And it was so yummy and packed with so much flavor. My runner up to the tomato was the Thai Coconut. While I am not a fan of coconut or curry this one was hard for me to get excited about. But I loved it!! While all the soups and this challenge was something to look forward to each and every day, the best part was the day my daughter called and ask me if I wanted to join with her. She lives on her own now so we don’t get a chance to cook together much so it was nice talking and comparing notes while cooking and sending pics of our soups. We even had a girl’s weekend getaway and brought all the ingredients with us and made them together. So in closing this challenge not only provided me with some healthy and new soup ideas it gave me lasting memories of enjoying my time with me daughter.

I will make the black bean soup first!
I loved the Carrot Ginger Soup because it has a bit of sweetness from the coconut milk and carrots and a little kick from the ginger, garlic and cumin. It’s a perfect blend of healthy comfort on a chilly autumn day. I’ve had a little cold and this soup hits the spot. It’s creamy and very filling. I added some vegan parmesan cheese to it and served it up with a couple of slices of toasted cauliflower thins with vegan butter, avocado slices seasoned with a little sea salt and garlic/onion powder. Delicious! This challenge is great for this time of year.
My family loved the Thai Coconut Soup! It was so easy to make. I really enjoyed finding new plant-based recipes for the fall & winter.
I have truly enjoyed these past 10 days! My freezer is chock full of healthy soup leftovers. My favorite soup genuinely surprised me, and it was the Tomato Soup. I normally am not a huge fan of tomato soup but this one was outstanding. It was also my partner’s favorite, and we never agree on anything. I think it would make a great healthier alternative to pasta sauce with all the hidden veggies. My second favorite is Carrot Ginger, which I turned into a curry carrot ginger soup.
I’ve learned the following:
1) I need a bigger freezer.
2) All soups start with onion, carrots and celery.
3) If a soup doesn’t start with mirepoix it’s still delicious.
4) I learned the term mirepoix.
5) Roasting veggies before making soup enhances and sweetens the flavors.
6) Soup makes an awesome quick breakfast.

I loved this challenge! My favorites were the corn chowder, detox soup, and the creamy tomato!
I learned that there are simple recipes out there and it is completely possible to make homemade soup everyday with minimal cook time and low cost ingredients. I’ve also never been keen on tomato’s and have never made or had tomato soup before and it turned out to be one of my favorites! I’ll have to try the smoothie challenge next!
The Autumn 10-day Soup Challenge had so many soups I never would have tried on my own. The Paprika Corn Chowder was so delicious and probably my favorite. However, It may be a toss up with the Roasted Red Pepper and the Detox Lentil (that broth!).
I should mention that doing 10 days of soups made me realize how much I love soups but also that I really missed my green salads
This challenge was so interesting! I am not a soup lover, so that in and of itself was a challenge, yet there are soups I will definitely be making again (minestrone, tomato, detox). This was fun!
