Sweet. Soothing. Refreshing. Hydrating. This Pineapple Mint Smoothie happens to be my literary agent’s favorite recipe of all time. If you close your eyes while sipping it down, you might even teleport to a poolside bar and think it’s a pineapple mojito (you wouldn’t be the first!).
Have you ever thought about serving smoothies at your poolside parties? They make the perfect addition to a summery spread, and I won’t tell anyone if you add a little rum to them!

Ingredients in a Mint Smoothie
Head to the grocery store and gather the following fruits, leafy greens and fresh herbs to create this delicious mint smoothie.
No matter where you serve it, a juicy, sweet pineapple smoothie is amazing. It’s the perfect summer drink to cool down, hydrate and feel amazing!
- Kale: The king of the leafy green family, kale is packed with fiber and phytonutrients that our body loves.
- Coconut Water: This is the most hydrating liquid base out there. I love using it as a post-workout smoothie or on a hot day.
- Pineapple: This natural sweetener turns this healthy smoothie into a decadent poolside cooler.
- Lime: Fresh limes make the most vibrant flavors and can be blended effortlessly into a mint smoothie.
- Mint: Mint is a natural stimulant, which can help your perk up during a painfully slow afternoon, or even give you a healthy jolt before you head to the gym.
If you’re not a fan of kale in your smoothies but want to be, then this is a great gateway smoothie. The pineapple and coconut water up the sweetness + tone down the bold kale flavor.
Let me put it this way. Normally my kids don’t like kale in their smoothies, but this pineapple mint smoothie went down the hatch nice n’ easy.
Pineapple Mint Smoothie FAQs
I typically stick to 1/4 cup or less when adding herbs to smoothies. I really want the mint to shine in this pineapple mint smoothie, so I add the whole 1/4 cup. Feel free to start with less if this is your first time trying fresh mint!
I don’t recommend it. Dried mint has a different flavor, and consistency and doesn’t hold the nutritional benefits found in fresh. I do recommend growing your own mint! It’s super easy to do and allows you to grab a garnish any time you want.
Use a low-sugar fruit to naturally lower the sugar. If the pineapple in this pineapple mint smoothie is too much, then use half of the measurement called for and add in raspberries, blackberries or peaches to help lower the sugar.
Naturally Lower Sugar in Smoothies
While sugar in fruit is not processed, it can be a bit much at times. The easiest way to help your body easily process the natural sugar in fruits is to add in my homemade protein powderโthen you get a filling snack without the sugar crash.
You can also swap out higher glycemic fruits with lower glycemic fruits.
Low Sugar Fruit Swaps
If the pineapple holds too much natural sugar for you then cut it down to 3/4 cup and add in 3/4 cup of one of the following low sugar fruits:
- Raspberries
- Blackberries
- Peaches
- Grapefruit
Don’t let natural sugar slow you down! Smoothies are the ultimate ‘build your own’ since you can really use what you have on hand or prefer to make any recipe work for you.

Pineapple Mint Smoothie
Ingredients
- 1 cup kale fresh
- 1 cup coconut water
- 1 ยฝ cups pineapple frozen
- ยผ cup mint fresh
- 1 tbsp lime juice
- 1 serving homemade protein powder optional
Instructions
- Blend kale and coconut water until smooth.
- Add remaining ingredients, and blend until smooth.
Notes
- Use frozen fruit to make smoothie cold.
- This really can turn into a mocktail with a fun glass and some fresh mint or lime wedge garnish.
- Swap kale with the leafy green of your choice.ย
- Swap coconut water with regular water or carton coconut milk.
- Use a plant based protein powder to help your body process the natural sugar more easily.
I changed this up a bit. I could not find frozen pineapple, so I used frozen peaches. I swapped out coconut water for plain water and included the mint and lime. I will make this again.
Loved this smoothie- so fresh and summery. Had to go out to my garden to pick some mint for it and loved the touch of mint with the pineapple and lime. I also added hemp hearts, Brazil nuts and collagen.
This smoothie is yummy! The lime added a citrus flavor that went well with the pineapple and mint.
Surprisingly I really liked this smoothie! The mint really opens up the sinuses, which is a good thing. Day 4 down, whoohoo! I also used the Protein Smoothie Powder. Thanks for another great tasting smoothie.

This smoothies is not what I expected. The flavors are complex. The pineapple and mint work well together. The lime brightens everything. The only down side is it’s a bit chalky.

I liked this smoothie, I used it after a day of yard work and it was very hydrating. It came out rather thick so make sure to blend it a little longer.
I am not a huge fan of kale but this smoothie makes the overpowering taste of kale surprisingly good. However, I do not like the grittiness of the kale, I think that spinach may have made it better for my personal likes. I like the coconut water as well!

Iโm really loving todayโs smoothie. The pineapple and mint is refreshing. I substituted spinach for kale and the smoothie is delicious. I also added the protein powder to keep me satisfied. Truly by far the best green smoothie Iโve ever had. Thanks for introducing us to different smoothie options.
This smoothie was so good and refreshing! Definitely could not taste the kale. I could not find coconut water so I just used water instead and added half a banana. It was plenty sweet and so delicious and filling!
Unfortunately I hate mint.(Have to use non mint flavored toothpaste.). The smoothie was great without it. I almost always have frozen pineapple on hand and I just so happened to have kale and lime hanging out in the fridge. Will make this one again.

Not noticing the kale is what I like about these recipes. I donโt mind it. However, my husband is very picky and doesnโt like kale at all. Iโve made this smoothy and he loved it.
YUMโฃ๏ธโฃ๏ธ Wasnโt convinced about the kale. Good news, you donโt even notice it .. the mint is a lovely boost. I added vanilla vegan protein powder and lemon instead of lime . Winner!
Super simple! Super delicious! The lime really adds to it. I added 2 Tbsp of chia seeds for protein (instead of the powder) and it worked out great.
