Sweet. Soothing. Refreshing. Hydrating. This Pineapple Mint Smoothie happens to be my literary agent’s favorite recipe of all time. If you close your eyes while sipping it down, you might even teleport to a poolside bar and think it’s a pineapple mojito (you wouldn’t be the first!).

Ingredients You’ll Need
Head to the grocery store and gather the following fruits, leafy greens and fresh herbs to create this delicious mint smoothie. No matter where you serve it, a juicy, sweet pineapple mint smoothie is amazing. It’s the perfect summer drink to cool down, hydrate and feel amazing!
- Kale: The king of the leafy green family, kale is packed with fiber and phytonutrients that our body loves.
- Coconut Water: This is the most hydrating liquid base out there. I love using it as a post-workout smoothie or on a hot day.
- Pineapple: This natural sweetener turns this healthy smoothie into a decadent poolside cooler.
- Lime: Fresh limes make the most vibrant flavors and can be blended effortlessly into a mint smoothie.
- Mint: Mint is a natural stimulant, which can help your perk up during a painfully slow afternoon, or even give you a healthy jolt before you head to the gym.
If you’re not a fan of kale in your smoothies but want to be, then this is a great gateway smoothie. The pineapple and coconut water up the sweetness + tone down the bold kale flavor.

How to Make Pineapple Mint Smoothie
This Pineapple Mint Smoothie comes together fast, and the steps matter for the smoothest texture and brightest flavor.
- Start by adding the kale and coconut water to your blender. Blending the greens first helps fully break down the kale so you don’t end up with leafy bits. This step is especially helpful if you’re newer to green smoothies or using a lower-powered blender.
- Once the kale mixture is smooth, add the frozen pineapple, fresh mint, lime juice, and protein powder if you’re using it. Blend again until thick and creamy. The frozen pineapple creates a naturally cold, refreshing smoothie without ice, while the mint and lime add a clean, citrusy finish.
- Taste and adjust if needed. Add a splash of coconut water to thin it out or a few extra mint leaves if you want more of that cool, refreshing kick. Pour into a glass and enjoy right away for the best flavor and texture.

I typically stick to 1/4 cup or less when adding herbs to smoothies. I really want the mint to shine in this pineapple mint smoothie, so I add the whole 1/4 cup. Feel free to start with less if this is your first time trying fresh mint!
I don’t recommend it. Dried mint has a different flavor, and consistency and doesn’t hold the nutritional benefits found in fresh. I do recommend growing your own mint! It’s super easy to do and allows you to grab a garnish any time you want.
Use a low-sugar fruit to naturally lower the sugar. If the pineapple in this pineapple mint smoothie is too much, then use half of the measurement called for and add in raspberries, blackberries or peaches to help lower the sugar.

We loved this one! Loved the tangyness!! I put a scoop of flax meal in too. I think if your not a fan of kale, use less or sub spinach. This will definitely be in rotation here.
Loved this recipe without the mint.
Excellent smoothie, added ground flax and some pineapple juice.
Had never tried pineapple with mint. Delicious. Used half kale and half spinach. Nutritious and refreshing with a hint of lime.
Mint and pineapple go well together.
Love this smoothie recipe! Pineapple paired with mint made for a delicious, refreshing smoothie. Definitely will be making this one again!
Really don’t care for mint, but I do love the pineapple! Always willing to try something new tho, just not a fan of the mint.
Today’s smoothie was very tasty. I like the subtle flavor of kale, mint and pineapple and the way they are balanced together. I added protein powder so that it could be a meal replacement this morning.
Refreshing, on the fence with the mint, will try it without next time.
I love how bright & vibrant the flavors are!
Love the pineapple mint combo!
This was so, so refreshing on a hot summer day! The mint and pineapple was such a beautiful, cooling combination and I never would have thought of using coconut water in a smoothie! I always think of using milk as the liquid but this was so good and so hydrating! I didn’t have a chance to freeze my pineapple so I just tossed in a few ice cubes and it still came out perfect.
I substituted spinach for kale since I had that on hand. I love pineapple and like mint – I would probably put less mint next time if I make it again. Good for replenishing after an AM workout.
Pineapple refresher is my favorite so far! Refreshing in this AZ heat! Enjoyed post workout and was just what I needed.
ummm unexpected yummm!!!
I didn’t have coconut water and missed the added flavor to this smoothie. Very nice to use the mint. This is not my favorite but I think it is full of great nutrition. Great start to a morning.
This smoothie is delicious. Might opt for spinach instead of kale next time – I don’t love the texture that kale adds – but the flavor is amazing.
