Sweet. Soothing. Refreshing. Hydrating. This pineapple mint smoothie happens to be my literary agent’s favorite recipe of all time. If you close your eyes while sipping it down, you might even teleport to a poolside bar and think it’s a pineapple mojito (you wouldn’t be the first!).

Ingredients You’ll Need
Head to the grocery store and gather the following fruits, leafy greens and fresh herbs to create this delicious mint smoothie. No matter where you serve it, a juicy, sweet pineapple mint smoothie is amazing. It’s the perfect summer drink to cool down, hydrate and feel amazing!
- Kale: The king of the leafy green family, kale is packed with fiber and phytonutrients that our body loves.
- Coconut Water: Is a great electrolyte replenishing liquid base. I love using it as a post-workout smoothie or on a hot day when just chilling on a pool float breaks a sweat.
- Pineapple: This natural sweetener turns this healthy smoothie into a decadent poolside cooler.
- Lime: Fresh limes make the most vibrant flavors and can be blended effortlessly into a mint smoothie.
- Mint: Mint is a natural stimulant, which can help your perk up during a painfully slow afternoon, or even give you a healthy jolt before you head to the gym.
If you’re not a fan of kale in your smoothies but want to be, then this is a great one to start with. The pineapple and coconut water up the sweetness and tone down the bitterness found in most leafy green vegetables.

How to Make Pineapple Mint Smoothie
This mint smoothie comes together fast, and the steps matter for the smoothest texture and brightest flavor.
- Start by adding the kale and coconut water to your blender. Blending helps fully break down the kale so you don’t end up with green chunks. If you’re using one of my recommended blenders for smoothies, you can skip this step and blend everything together.
- Next, add the frozen pineapple, fresh mint, lime juice, and protein powder if you’re using it. Blend again until thick and creamy. The frozen pineapple creates a naturally cold, refreshing smoothie without ice, while the mint and lime add a clean, citrusy finish.
- Taste and adjust if needed. Add a splash of coconut water to thin it out or a few extra mint leaves if you want more of that cool, refreshing kick. Pour into a glass and enjoy right away for the best flavor and texture.
Recipe Tips
- Have extra kale? You can freeze kale in bags or space-saver cubes to use later in green smoothies.
- Deal on whole pineapple? You can freeze it yourself for smoothies! First, cut pineapple into small chunks and then place on a baking sheet single layer and freeze. Transfer to a freezer-safe bag once frozen.
- Love this recipe? Make extras and store in frozen meal prep smoothie packs to have on hand.

I typically stick to 1/4 cup or less when adding herbs to smoothies. I really want the mint to shine in this pineapple mint smoothie, so I add the whole 1/4 cup. Feel free to start with less if this is your first time trying fresh mint!
I don’t recommend it. Dried mint has a different flavor, and consistency and doesn’t hold the nutritional benefits found in fresh. I do recommend growing your own mint! It’s super easy to do and allows you to grab a garnish any time you want.
Use a low-sugar fruit to naturally lower the sugar. If the pineapple in this pineapple mint smoothie is too much, then use half of the measurement called for and add in raspberries, blackberries or peaches to help lower the sugar.

Another great and simple smoothie! Tastes like summer with a hint of mint!
Refreshing–looking forward to trying it on a sunny day!
Tart n tangy taste! I used all pulp from lime amd used Body Armor instead and would make again. Good Summer one!
This is a winner!! I enjoy the flavors of the pineapple and mint together and then top it off with like . I did make a few changes, I substituted spinach for kale, coconut milk for the water and lime EO for the lime. VERY REFRESHING!!
Didn’t have kale on hand, used spinach, Still super cool & refreshing. Awesome for sumer!!!
So I have never tried Kale and don’t have any. But with spinach and coconut milk, it was delicious. Since all the recipes I have tried thus far have been spectacular, I am going to purchase some Kale and try one of your recipes with Kale. It’s a brave new world!!!
Pineapple mint is not a favorite but still yummy
Fruity and refreshing! Love the combo!
Gosh all the smoothies have been equally good. I liked this one but I could have used less mint and more pineapple. However, it was still very refreshing.
I didn’t have pineapple so I replace with mango but very fresh and sweet. Love it <3
Love the added mint, so freshing
Used frozen spinach instead of kale , loved the fresh mint!
We made this one yesterday and it is my favorite so far! So refreshing and full of flavor. We made yesterday’s blueberry smoothie today and while it is very good, it didn’t beat out the mint smoothie.
Okay so yesterday I said that was my favorite but that has changed today. Today’s smoothie is the best so far. Sweet and refreshing but a little too much mint. I would do a bit less next time. And there will definitely be a next time.
Love the mint in this smoothie! Subbed some spinach for kale and fresh mint from my garden. Yum!
Loved this one since pineapple is one of my favs in smoothies plus the added mint was perfect!
Not a favorite for me, personally, but I’m glad to have tried it. It is refreshing though, for sure. Too much mint for me (and I LOVE mint!), if I made again I’d definitely decrease the amount. It was just an interesting combination to me.
This was a bit out of my comfort zone but overall an interesting smoothie! Thinking less mint might be better next time.
I enjoyed this smoothie. I used spinach instead of kale and fresh mint from my garden. Very refridheshing and aromatic.
I can’t tolerate pineapple, so I used kiwi. I love this smoothie! Mint is a great addition.
I love the fresh taste of mint. Incredibly refreshing. Can’t go wrong with this combination of flavors.
Oh my goodness I loved this smoothie. I’ve always loved pineapple but I have to admit I was not sure what to expect from the kale and mint. This was delightfully fresh and bright and it has been my favorite so far in the challenge. I will definitely be making this again.
I’m, I think it takes some getting used to the kale and mint together. But, I will drink it. Maybe I need to do a few twerks to make it more my flavor. But it does have a beginning to a good smoothie..
