Sweet. Soothing. Refreshing. Hydrating. This pineapple mint smoothie happens to be my literary agent’s favorite recipe of all time. If you close your eyes while sipping it down, you might even teleport to a poolside bar and think it’s a pineapple mojito (you wouldn’t be the first!).

Head to the grocery store and gather the following fruits, leafy greens and fresh herbs to create this delicious mint smoothie. No matter where you serve it, a juicy, sweet pineapple mint smoothie is amazing. It’s the perfect summer drink to cool down, hydrate and feel amazing!

  • Kale: The king of the leafy green family, kale is packed with fiber and phytonutrients that our body loves.
  • Coconut Water: Is a great electrolyte replenishing liquid base. I love using it as a post-workout smoothie or on a hot day when just chilling on a pool float breaks a sweat.
  • Pineapple: This natural sweetener turns this healthy smoothie into a decadent poolside cooler.
  • Lime: Fresh limes make the most vibrant flavors and can be blended effortlessly into a mint smoothie.
  • Mint: Mint is a natural stimulant, which can help your perk up during a painfully slow afternoon, or even give you a healthy jolt before you head to the gym.

If you’re not a fan of kale in your smoothies but want to be, then this is a great one to start with. The pineapple and coconut water up the sweetness and tone down the bitterness found in most leafy green vegetables.

How to Make Pineapple Mint Smoothie

This mint smoothie comes together fast, and the steps matter for the smoothest texture and brightest flavor.

  1. Start by adding the kale and coconut water to your blender. Blending helps fully break down the kale so you don’t end up with green chunks. If you’re using one of my recommended blenders for smoothies, you can skip this step and blend everything together.
  2. Next, add the frozen pineapple, fresh mint, lime juice, and protein powder if you’re using it. Blend again until thick and creamy. The frozen pineapple creates a naturally cold, refreshing smoothie without ice, while the mint and lime add a clean, citrusy finish.
  3. Taste and adjust if needed. Add a splash of coconut water to thin it out or a few extra mint leaves if you want more of that cool, refreshing kick. Pour into a glass and enjoy right away for the best flavor and texture.

  • Have extra kale? You can freeze kale in bags or space-saver cubes to use later in green smoothies.
  • Deal on whole pineapple? You can freeze it yourself for smoothies! First, cut pineapple into small chunks and then place on a baking sheet single layer and freeze. Transfer to a freezer-safe bag once frozen.

  • 1 cup kale fresh

How much mint should I add to my smoothie?

I typically stick to 1/4 cup or less when adding herbs to smoothies. I really want the mint to shine in this pineapple mint smoothie, so I add the whole 1/4 cup. Feel free to start with less if this is your first time trying fresh mint!

Can I use dried mint in a smoothie?

I don’t recommend it. Dried mint has a different flavor, and consistency and doesn’t hold the nutritional benefits found in fresh. I do recommend growing your own mint! It’s super easy to do and allows you to grab a garnish any time you want.

How do I lower the natural sugar in a smoothie?

Use a low-sugar fruit to naturally lower the sugar. If the pineapple in this pineapple mint smoothie is too much, then use half of the measurement called for and add in raspberries, blackberries or peaches to help lower the sugar.

    I. went outside to pick the mint from my garden and I cut up my pineapple and used baby kale. The lime and the mint just kind of ruined the smoothie for me. I drank it but it was more like taking medicine for me, not a real enjoyment. Sorry.

    I enjoyed this, but it almost seemed a little chalky. Perhaps I used a little too much mint. Aside from that, it was quite tasty and refreshing.

    I actually was prepared to not like this one as I really detest coconut water. However, I followed the recipe and it was delicious. The fresh mint paired so well with the pineapples and lime juice. And I couldn’t taste the coconut water.

    I absolutely loved this one! Ever since I had the beet smoothie with mint, I’ve been a fan of mint in smoothies. The flavors of pineapple and mint paired perfectly. I didn’t even mind the coconut water (I hate coconut water in or out of smoothies…too frothy and I don’t like the taste!). I will make this one again.
