Our pineapple mojito smoothie is a great way to introduce your friends to green smoothies!
It’s refreshing served poolside on a hot summer day. Instead of cocktails, whip up a big pitcher of this green smoothie and watch as the compliments roll in. You can even have a bottle of rum on the side as an option to upgrade to an adult drink.

If you’re not a fan of kale in your smoothies but want to be, this is a good one to start with. The pineapple and coconut water make it very sweet. The kale flavor ends up being very mild. Let me put it this way, normally my kids don’t like kale in their smoothies, but this one went down the hatch nice and easy with nary a word of, “I don’t like this! It’s too…green!”

- 2 cups fresh kale
- 2 cups coconut water
- 3 cups pineapple
- ¼ cup fresh mint leaves
- Juice of 1 lime
- Blend kale and coconut water until smooth.
- Add remaining ingredients, and blend until smooth. Enjoy!
*Use frozen fruit to make smoothie cold.
