Our pineapple mojito smoothie is a great way to introduce your friends to green smoothies!

It’s refreshing served poolside on a hot summer day. Instead of cocktails, whip up a big pitcher of this green smoothie and watch as the compliments roll in.  You can even have a bottle of rum on the side as an option to upgrade to an adult drink.

No matter where ya serve it, this has got to be one of our family favorites— juicy, sweet pineapple; refreshing mint and a squeeze of lime. It’s the perfect summer drink to cool down, hydrate yourself and feel amazing!

If you’re not a fan of kale in your smoothies but want to be, this is a good one to start with. The pineapple and coconut water make it very sweet. The kale flavor ends up being very mild. Let me put it this way, normally my kids don’t like kale in their smoothies, but this one went down the hatch nice and easy with nary a word of, “I don’t like this! It’s too…green!”

Your friends and your body will thank you further on down the line. The recipe below will make 2 good-sized smoothies. For a crowd, make a double or triple batch. Trust me, your guests are going to keep coming back for more!

Friends will keep coming back for more when you serve up this refreshingly sweet pineapple mojito drink. This green smoothie recipe is a great way to introduce others to the world of kale!



  • 2 cups fresh kale
  • 2 cups coconut water
  • 3 cups pineapple
  • ¼ cup fresh mint leaves
  • Juice of 1 lime


  1. Blend kale and coconut water until smooth.
  2. Add remaining ingredients, and blend until smooth. Enjoy!


*Use frozen fruit to make smoothie cold.

    Hi!. I have taken up the 30days challenge. Sorry this might be a silly question, on your recipe it says 2 cups of kale. Do you compact the kale into the cups?. I normally just get 2 stalks or should i say 2 leave from stem. They are about 20 to 30cm each leave. Would that be enough? . I am think that i might not be putting enough green leaf for smoothies. Never as green as your pictures. But i do add a fair bit into my juice. Kale, Celery, Chia, Raw almond, an apple, carrot and blueberries minimum.

    Hi Kent,

    Thanks for reaching out! When measuring our leafy greens, we tightly pack them into a measuring cup. If you’re blendin’ outside of the US, 1 cup of leafy greens is equal to 30g.

    I am trying to find smoothie recipes I can make ahead of time for “individual frozen smoothie packs”.. Have you ever tried that with this recipe?

    Hi Victoria,

    Looking to pre-blend and freeze our recipes! Go for it!! We suggest storing your pre-blended smoothies in an airtight freezer-safe container. When you’re ready to enjoy, simply thaw your green smoothie in the refrigerator the night before. Because none of our recipes have yucky additives or stabilizers, separation is completely natural, simply give you smoothie a quick shake before enjoying.

    Hi, I was wondering what could use instead of cocunut water? I don’t care for that stuff! An also is this a good one for losing weight??

    I have purchased smoothie books etc in an attempt to encourage my child to eat more greens, fiber, beneficial enzymes etc that supports our probiotic intake and avoids dairy (I’m a Chiropractor with a Masters degree in Nutrition and human performance with teaching experience in functional nutrition so I’m a bit passionate on this). My child has avoided most green smoothies and thought they were ‘too weird’. He continued to request this smoothie and it is a first! I’ve never left a comment on a site before but this thrilled me so much I wanted to share my experience with other parents who may be struggling as well. Thank you!!!

    Yes, you can totally swap in spinach! We love changing up our recipes, so never hesitate to swap out one leafy green for another! Also, not a fan of kale? Have you tried baby kale? It’s packed with the same nutrition as it’s more mature version, but it’s milder in flavor + blends great!

    Simple & very refreshing with the mint as I already love pineapple & spinach! A nice, light option & change from my usual almond milk/yogurt based smoothies. Happy to hear from the comments that it can aid in weight-loss as well! Will be starting my mornings with this one for a while! Thanks for sharing!
