It’s late evening and the summer heat has set in. You hear that familiar tinkling tune … the ice cream man is headed your way. And suddenly you’re giddy like a five year old, but instead of running to the driveway with three dollars in your hand, that whimsical music just reminded you that you made popsicles yesterday… and they are ready to enjoy now!

That could be you tomorrow!
And the best part is, you’re gonna love these popsicles much more than any popsicle you could get from the ice cream man! These strawberry mint popsicles are everything you could want from a popsicle: ice cold, refreshing (thank you mint!), and oh-so-good for you because, guess what? They’re made from a green smoothie!

Strawberry Mint Popsicles

Description

You’ll love these popsicles for so many reasons, but maybe the best reason is because mint is just so awesome! It leaves you feeling refreshed, aids in digestion, and helps you burn fat


Scale

Ingredients

  • 1 1/2 cups spinach
  • 1/2 cup fresh mint
  • 1/4 cup water
  • 2 cups strawberries
  • 4 medjool dates (pitted and chopped)
  • Juice of 1/2 lime

Instructions

  1. Blend all ingredients until smooth.
  2. Pour into a popsicle mold or small disposable cups. Insert popsicle sticks.
  3. Freeze until firm, at least 3 hours or overnight.

Notes

Tip: If you’re ready to take your popsicle making to the next level, try Zoku Classic Pops popsicle molds. And don’t forget to dip the molds in warm water for easier removal of pops from the mold.

    Homemade popsicles are so good to have on hand. I like tis recipe because it’s more of a grown up popsicle with the mint— and I appreciate that. I bet they would taste good with basil too!

    These are amazing! We made them a couple of times over the summer with fresh local strawberries and mint from the garden! My 4 year old loves them and I never had to stop him from having a ‘special’ treat!

    Hi! This sounds great, I can’t wait to try it! Just one quick question: is it ok to use thawed frozen strawberries even if we’re going to re-freeze them for the popsicle? I thought we weren’t supposed to re-freeze food without cooking it first but I might have gotten that completely wrong! Thanks!

      Morgane, I realize it’s been along time since this post. I just wanted to say you heard correctly about re-freezing food without cooking it first, but that’s only for meats. Everything else is safe. Thanks.

    I’m freezing mine right now. I didn’t strictly measure everything but it tasted pretty good before going into the freezer! I think next time though I might experiment with muddling the mint in warm water before adding it to get a little bit of extra mint kick! 🙂
