Strawberry Carrot Smoothie

Blending up veggies is a great way to add more plant-based goodness. This Carrot Smoothie provides one full serving of veggies.

If you’d told me when I started drinking green smoothies that I would be adding other veggies beside kale or spinach into my smoothies, I’d have told you you were crazy! But the more you drink green smoothies, the more your body starts to crave veggies and you get creative with your blends.

I like to eat my veggies too, but I like adding extra to my smoothies for added nutrition and fiber.

Carrots are a good place to start if you’re looking to add other veggies into your smoothies. This Strawberry Carrot Smoothie includes vitamin C-rich pineapple that pair well with the earthy carrot. If you’re looking to boost your Vitamin C, check out our DIY Smoothie Cubes.

What Are The Health Benefits of Carrots?

You were probably told as a child, as I was, that eating carrots would help your eyesight, particularly night vision or being able to see in dim light. And it’s true! Though now we look at screens so much that advice is changing. 😉

Carrots contain beta carotene, the precursor of vitamin A, which helps eyesight, but also helps maintain healthy bones, teeth, soft tissues and mucus membranes, and skin. Vitamin A aids collagen production which can help repair damaged skin.

Warning: It turns out that eating too many carrots may have an unwanted side effect. Too much beta carotene in your diet can make your skin take on an orange hue… or even a sorta tan.

Is It Healthier To Eat Raw or Cooked Carrots?

It’s important to have a diet rich in raw and cooked vegetables. Is one better than the other? Not necessarily.

Cooking makes food easier to eat because the cell walls become softer and less rigid making it easier for the body to absorb the nutrients. Cooked carrots also have more beta carotene than raw. Some of the vitamin C in carrots is lost during cooking, but it’s easily remedied by consuming plenty of foods that contain vitamin C.

What kind to use in a carrot smoothie?

Raw carrots are great for snacking. I prefer raw carrots in my smoothies mainly because I have a high powered blender and it retains the most nutrients. Need a blender recommendation? Be sure to check out our Blender Guide for everything you need to decide which blender is best for you.

But as far as nutrition goes, as long as you’re eating veggies, it doesn’t matter if they are raw or cooked. They’re good for you either way!

Strawberry Carrot Smoothie

Description

I know…carrot smoothie?! First time I was like, ummm…no thanks. Yet this one is so delicious with a sweet unique undertone that you’ll begin to crave.


Scale

Ingredients

  • 1 cup fresh spinach
  • 1 cup coconut water, unsweetened
  • 1/2 cup carrots
  • 1/2 cup strawberries
  • 1/2 cup pineapple

Instructions

  1. Blend spinach and coconut water together until smooth.
  2. Add remaining ingredients and blend again.

Notes

  • Use at least one frozen fruit to make the smoothie cold or serve over ice.
  • Can chop and steam carrots to make them easier to blend, or leave them raw.

    Day 8 of my 10 challenge – this one has me nervous first one adding vegetables but YUM YUM YUM , these challenges are really inspiring, have me trying smoothies for the first time and consuming more fruit and vegetables than I have ever had in my life !!!
    I share in all my smoothie groups and NutriBullet recipe pages I can not recommend these recipes another !!!

    I do not particularly like carrots, especially in my smoothies. It just isn’t as smooth and I guess I have sensory issues. lol.
    The taste was not so bad, just didn’t like the texture. I made a 2nd and left out the carrot, but added some kale and i liked it better.

    This one was less sweet than most, partly due to frozen strawberries & pineapple, rather than ultra-sweet fresh fruit. I enjoyed it, but not over keen on the coconut. Really benefiting from this challenge and actually beginning to get the smoothie habit! Thanks Jen!

    This one improved after the sip, given time for the flavors to warm in my mouth a bit. The texture is different, more like an applesauce due to the carrots. Not bad for a change of pace.

    This one was not my favorite, but. I drank it all because of all the goodness inside! I have been fighting off something and I think this one really boosted my immunity! I will make it again!

    Switched strawberry for a mix of berries (strawberry, cherries and raspberry) and the spinach for a mix of kale and lettuce =)

    I love that this is healthy and raw, but it wasn’t a favorite. I think next time I will add less carrots and maybe add some ginger.

    Not a big fan of this one. The carrots threw me off. I couldn’t get them to blend well. Definitely missing the banana

    This one was ok. Wouldn’t be a regular at this point because of the carrots. Next time may steam carrots first.

    With spinach and carrots the recipe was a little too savory. I think I will reduce the carrot mix.

    I did just order the Vitamix special sale (using ninja with the single serving cup to increase the smoothness of the blend). Very excited about the new blender.

    Carrots and Strawberries! Who knew they would taste good together. Not a bad smoothie. Also, I’m not a fan of coconut but I have to say, putting it into a smoothie-you can’t even taste it!! #rawkstar

    I’m only giving this 3 stars because it was edible and it was sweet. Not a favorite! However, I think I don’t like the smoothies with coconut water that aren’t paired with a creamy fruit.

    This smoothie tasted great! I had to add more liquid since everything I used was either frozen or carrots. I turned this into a meal replacement smoothie by adding chia seeds & MCT oil. It stays in the rotation!

    I did not care for the texture of this smoothie. The carrots and coconut water left it watery and not fully incorporated. The flavor was great, but an ingredient is needed to make it more creamier and blended.

    Not a big fan. It was smooth as I blended the carrots after I did the spinach, then added the strawberries and pineapple. My son thought it tasted ok. I don’t think I will make it again.

    I liked this drink, but it was a little too many flavors for me & was a little muddy for me.
    Definitely drinkable, but not my favorite.

    Carrots hits the mark in this one. The pineapple washes it out, but the carrot balances the sweetness for a nice overall pleasant flavour.

    Really surprised with the taste of carrot… It was pretty good! Really thick so added more liquid. Added some banana for some sweetness.

    I like it, but I really adopted it to my tastes. I added a lot more liquid to this one. Enough so that I had two full glasses. I used a coconut/pineapple infusion which gave it some flavor but the dilution really took away the other flavors. I am sure the carrot is what made it thick. I don’t like carrots to begin with, so this was a hard one for me. I didn’t think it was sweet at all.

    Day 8 – Carrot Cooler. What a delightful change! I bulked up the carrot, and a few extra strawberries, and it was very tasty!
