So I’ve leaned into the non-dairy ice creams and feel so much better. And let me tell you, it’s been a hit ever since!

Ingredients  

  • 1 banana
  • 3 scoops vegan ice cream
  • ยฝ cup strawberries diced
  • ยฝ cup blueberries
  • cacao nibs for sprinkling
  • ground cinnamon ground, for sprinkling

Instructions 

  • Peel and halve the banana lengthwise.
  • Place in a shallow serving bowl or sundae dish so the banana halves open like a book.
  • Place ice cream scoops down the center of the banana.
  • Top with fresh berries.ย Sprinkle cacao nibs and cinnamon on top.ย Serve immediately.
