Coconut Joy Vegan Smoothie Bowl

RECIPE CARD LEAVE REVIEW
Coconut Joy Vegan Smoothie Bowl

If you love the taste of coconut, almond, and chocolate together, then this Coconut Joy Vegan Smoothie Bowl will hit the spot! It's made with 100% plant-based ingredients to fuel your body and give it the nutrients it needs to keep going strong.

Smoothie bowls are simply just smoothies in a bowl. But they are fun to eat because you can top them with just about anything your heart desires. Sliced bananas, crunchy toasted coconut, almonds, and cacao nibs top our vegan smoothie bowl. So much deliciousness in every bite!

Moving to a more plant-focused way of eating doesn't mean sacrificing anything. You're getting way more in return! Green smoothies are a great way to start your journey to eating more plants, and what better way than in a dessert? 😉

When we blend up this vegan smoothie bowl, we use a little less liquid than we do for smoothies we drink. Depending on your blender, you may even be able to duplicate a soft-serve ice cream texture - even better!

It all starts with spinach. Spinach is a leafy green super hero ingredient, and it boasts high amounts of iron, vitamins and minerals, and fiber. For any newbies out there, I can assure you that you can't taste the spinach, just creamy coconut, chocolate, and almond with a hint of banana. Frozen bananas are often our go-to for vegan smoothie bowls because they yield a creamy texture. If bananas aren't your thing, feel free to substitute frozen avocado. Nut allergy? No worries! You can substitute any seed butter for the almond butter, and use a nut-free milk like oat or hemp milk in place of the coconut milk.

Blend up some plant-based goodness for a delicious, nutrient-rich dessert or snack. The flavors of coconut, chocolate, and almond come together quickly in this vegan smoothie bowl.
Total Time8 minutes
Servings1

Ingredients

  • 1 cup spinach
  • ½ cup coconut milk
  • 1 banana (frozen)
  • 1 tablespoon almond butter
  • 1 tablespoon cacao powder
  • 1 tablespoon maple syrup

Topping Suggestions

  • ½ banana (sliced)
  • 2 tablespoon almond slices
  • 2 tablespoon coconut flakes
  • 1 teaspoon cacao nibs

Instructions

  • Place spinach and coconut milk into a blender. Puree until smooth. (Stop and scrape down sides as needed, especially if blender is on the larger side.)
  • Add frozen banana and remaining ingredients. Keep blending, using a tamper, if needed, until fully blended. The texture should be like soft-serve ice cream.
  • Transfer to a bowl and garnish with desired toppings.

Notes

  • Frozen avocado can be substituted for the banana, if desired. Add extra maple syrup, to taste.
  • Almond milk or another non-dairy beverage can be used instead of coconut milk.

For day 3 I tried the strawberry watermelon smoothie. Definitely not a favorite flavor (maybe I need sweeter fruit) and yet the ginger flavor was oddly addicting. As a first time green smoothie maker I am loving these recipes!

    Creamy Blackberry Smoothie…
I made this smoothie into a meal replacement by adding oats and gave it a “super” boost with some ground flax seed. I think I may it like more with blueberries! It satisfied me like a meal would!!

As a first timer adding spinach or kale to my smoothie I was quite skeptical. Day 1 I started off with the Creamy Blackberry smoothie. To my surprise you don't taste the spinach at all. This may not be my favorite smoothie as there are LOTS of seeds. I added a little agave syrup for a bit of sweetness. Can't wait to try this with blueberries instead of blackberries!

    Strawberry Watermelon Blend…
Strawberries and Watermelons are both on my list of favorite fruits! This was my first time making a smoothie with watermelons and it was refreshing! The fresh ginger was a nice addition too!

My Citrus Vegan smoothie was easy to make and good to drink! The combination of oranges, pineapples, bananas, and mangoes wasn’t too sweet at all.

    Strawberry Watermelon:
It has a nice flavor. I didn't have fresh ginger, but the powder worked. Since I used it as a meal replacement, I would have liked it thicker.

The easiest way to reduce the calories in this yummy smoothie bowl is to swap out the full fat coconut milk for a different plant based milk instead. We'd recommend unsweetened almond milk, as it's the lowest calorie.

I wasn't sure what to expect but it's super tasty! I think my banana needed to be a little more ripe and possibly frozen to help keep it cool longer. I would definitely make this again!

If you like this flavor combination you will like this smoothie. Not my favorite, but i don’t like the chocolate and peanut/almond butter combination in a smoothie. My husband does like it though.

Not a big fan of the coconut milk, but other than that, it was filling and had a nice flavor. Texture is important, so liked that too.j

Absolutely delicious! It was like an almond joy in a bowl. I topped it with coconut flakes, vegan chocolate chips, more almonds and more syrup. I will definitely consume this again.

You can get fresh spinach and freeze it ahead of time but we don't recommend using store-bought frozen spinach. It often contains added salt and other unwanted ingredients. It can also give the smoothies a little bit of a weird taste.
