How to Make Coconut Smoothie Bowl

  1. Start by blending the spinach and coconut milk until there are no visible leafy chunks. Spinach blends right in with one of my recommended blenders for smoothies.
  2. Then add the remaining ingredients and blend again. Since this is meant to be thick, the blender blades may stop blending at some point. Use a tamper (if you’ve got a high-powered blender) to keep the mixture moving until the blades take over again.
  3. Scoop into a bowl and add your toppings. Take a moment to enjoy the crunch, the creaminess, and the fact that you just made something both nourishing and fun.

Topping & Variations

  • Nut-free option: Swap almond butter for sunflower seed butter or leave out.
  • Extra protein: Add hemp seeds or a scoop of your favorite plant-based protein powder to the blender.

Coconut Smoothie Bowl

This Coconut Smoothie Bowl is thick, creamy, and deeply chocolatey without using dairy or refined sugar. Coconut milk and almond butter create a satisfying base, while spinach blends in unnoticed. Instructions 

  • Place spinach and coconut milk into a blender. Puree until smooth. (Stop and scrape down sides as needed, especially if blender is on the larger side.)
  • Add frozen banana and remaining ingredients. Keep blending, using a tamper, if needed, until fully blended. The texture should be like soft-serve ice cream.
  • Transfer to a bowl and garnish with desired toppings.

  • Frozen avocado can be substituted for the banana, if desired to cut down on the natural sugar in this recipe.

    I wasn’t sure about this ‘chocolate’ recipe since the bowl is green, but was pleasantly surprised by the coconuty-chocolate flavor! Sprinkled some vegan chocolate chips and toasted almonds on top for a bit of crunch.

  2. For day 3 I tried the strawberry watermelon smoothie. Definitely not a favorite flavor (maybe I need sweeter fruit) and yet the ginger flavor was oddly addicting. As a first time green smoothie maker I am loving these recipes!

    Creamy Blackberry Smoothie…
    I made this smoothie into a meal replacement by adding oats and gave it a “super” boost with some ground flax seed. I think I may it like more with blueberries! It satisfied me like a meal would!!

  4. As a first timer adding spinach or kale to my smoothie I was quite skeptical. Day 1 I started off with the Creamy Blackberry smoothie. To my surprise you don’t taste the spinach at all. This may not be my favorite smoothie as there are LOTS of seeds. I added a little agave syrup for a bit of sweetness. Can’t wait to try this with blueberries instead of blackberries!

    Strawberry Watermelon Blend…
    Strawberries and Watermelons are both on my list of favorite fruits! This was my first time making a smoothie with watermelons and it was refreshing! The fresh ginger was a nice addition too!

    This recipe has too many calories for me.. What can I change to lighten to caloric load?

    1. The easiest way to reduce the calories in this yummy smoothie bowl is to swap out the full fat coconut milk for a different plant based milk instead. We’d recommend unsweetened almond milk, as it’s the lowest calorie.

    I wasn’t sure what to expect but it’s super tasty! I think my banana needed to be a little more ripe and possibly frozen to help keep it cool longer. I would definitely make this again!

    Absolutely delicious! It was like an almond joy in a bowl. I topped it with coconut flakes, vegan chocolate chips, more almonds and more syrup. I will definitely consume this again.

    1. You can get fresh spinach and freeze it ahead of time but we don’t recommend using store-bought frozen spinach. It often contains added salt and other unwanted ingredients. It can also give the smoothies a little bit of a weird taste.
