Summer temps keep rising and itโ€™s getting hot. Like you shouldn’t wear grey bottoms hot. Like sweating-in-places-you-shouldn’t hot. You get my point. That’s where these watermelon popsicles come to the rescue.

Two ingredients. No weird stuff. You literally blend and freeze. Thatโ€™s it. I make these on repeat every summer because I can commit to being in the kitchen for 5 minutes to blend these 2-ingredient popsicles that I can enjoy all week long.

  • Popsicle molds differ in capacity. For this recipe, we used 3/4 cup (6oz) molds. Paper of silicone cups can be used in place of the popsicle molds.

    Really yummy! I added a little scoop of freeze-dried kale and a teaspoon of fruit-flavoured plant-based omega-3, then let them freeze for five hours. My toddler was so excited to help make them, and try them!

    Made these popsicles this morning so will wait to enjoy later tonight. Had extra liquid left, so drank it. Added a touch of maple syrup since the watermelon wasnโ€™t very sweet and the frozen strawberries were not as flavorful as fresh. I would recommend using fresh, ripe strawberries to make the most of the flavor combination, which is tasty.
