Sweet. Soothing. Refreshing. Hydrating. This Pineapple Mint Smoothie happens to be my literary agent’s favorite recipe of all time. If you close your eyes while sipping it down, you might even teleport to a poolside bar and think it’s a pineapple mojito (you wouldn’t be the first!).
Have you ever thought about serving smoothies at your poolside parties? They make the perfect addition to a summery spread, and I won’t tell anyone if you add a little rum to them!

Ingredients in a Mint Smoothie
Head to the grocery store and gather the following fruits, leafy greens and fresh herbs to create this delicious mint smoothie.
No matter where you serve it, a juicy, sweet pineapple smoothie is amazing. It’s the perfect summer drink to cool down, hydrate and feel amazing!
- Kale: The king of the leafy green family, kale is packed with fiber and phytonutrients that our body loves.
- Coconut Water: This is the most hydrating liquid base out there. I love using it as a post-workout smoothie or on a hot day.
- Pineapple: This natural sweetener turns this healthy smoothie into a decadent poolside cooler.
- Lime: Fresh limes make the most vibrant flavors and can be blended effortlessly into a mint smoothie.
- Mint: Mint is a natural stimulant, which can help your perk up during a painfully slow afternoon, or even give you a healthy jolt before you head to the gym.
If you’re not a fan of kale in your smoothies but want to be, then this is a great gateway smoothie. The pineapple and coconut water up the sweetness + tone down the bold kale flavor.
Let me put it this way. Normally my kids don’t like kale in their smoothies, but this pineapple mint smoothie went down the hatch nice n’ easy.
Pineapple Mint Smoothie FAQs
I typically stick to 1/4 cup or less when adding herbs to smoothies. I really want the mint to shine in this pineapple mint smoothie, so I add the whole 1/4 cup. Feel free to start with less if this is your first time trying fresh mint!
I don’t recommend it. Dried mint has a different flavor, and consistency and doesn’t hold the nutritional benefits found in fresh. I do recommend growing your own mint! It’s super easy to do and allows you to grab a garnish any time you want.
Use a low-sugar fruit to naturally lower the sugar. If the pineapple in this pineapple mint smoothie is too much, then use half of the measurement called for and add in raspberries, blackberries or peaches to help lower the sugar.
Naturally Lower Sugar in Smoothies
While sugar in fruit is not processed, it can be a bit much at times. The easiest way to help your body easily process the natural sugar in fruits is to add in my homemade protein powderโthen you get a filling snack without the sugar crash.
You can also swap out higher glycemic fruits with lower glycemic fruits.
Low Sugar Fruit Swaps
If the pineapple holds too much natural sugar for you then cut it down to 3/4 cup and add in 3/4 cup of one of the following low sugar fruits:
- Raspberries
- Blackberries
- Peaches
- Grapefruit
Don’t let natural sugar slow you down! Smoothies are the ultimate ‘build your own’ since you can really use what you have on hand or prefer to make any recipe work for you.

Pineapple Mint Smoothie
Ingredients
- 1 cup kale fresh
- 1 cup coconut water
- 1 ยฝ cups pineapple frozen
- ยผ cup mint fresh
- 1 tbsp lime juice
- 1 serving homemade protein powder optional
Instructions
- Blend kale and coconut water until smooth.
- Add remaining ingredients, and blend until smooth.
Notes
- Use frozen fruit to make smoothie cold.
- This really can turn into a mocktail with a fun glass and some fresh mint or lime wedge garnish.
- Swap kale with the leafy green of your choice.ย
- Swap coconut water with regular water or carton coconut milk.
- Use a plant based protein powder to help your body process the natural sugar more easily.
This was really nice. I added a half a banana and it was delicious! I liked the lime – it gave the smoothie a nice tang.
Day 4 – The Mint & Kale was from my garden the Pineapple was to hard to blend, however, it worked out. The Smoothie was Very Good, I loved the Mint, couldn’t really taste the pineapple or the coconut water. However, Overall I really liked it!
Yummy, sweet and refreshing! Substituted spinach for the kale,but still delicious and nutritious!
This one was a little strange for me. The kale was not something Iโm used to. If I made this again Iโd sub spinach. The over all taste was not that great due to the kale.

I love this one. Really refreshing. Sweet but not too sweet as the lime cuts through it nicely. I personally love kale in smoothies, but if you are new to kale or scared of it being overpowering, this one is pretty undetectable in my opinion. I also pack in the mint for that refreshing resort flavour โค๏ธ

Another favorite! I’ve always used spinach cause I was afraid of kale. But using kale for the first time in the salad challenge, I found out that it aint so scary.Fresh mint from the garden just puts it over the top.
I had to add banana and apple juice. I think I added too strong of mint that I grow or the taste of the kale

So far this is the best tasting one. Despite being thinner than I like them, it at least had some flavor. What by the way us a quarter cup of mint leaves? I just used all I purchased in the little herb package. Also, can someone please tell me how to get stop all the foamy bubbles Iโm getting.
Hi Portia! Glad you liked this one best! To measure out 1/4 cup mint leaves, we’d use about 10 leaves or so. And those foamy bubbles are showing up because you have such an awesome high powered blender. ๐ To correct that, be sure to slow the blender down at the end and blend slowly for a bit before pouring it out to drink.
This is one the most delicious smoothies you can try. I highly recommend it! Definitely always blend your kale and liquids first until smooth as recommended. It makes all the difference. When I started doing this I was able to switch up my greens and I noticed a big difference. Your body needs diversity in your greens. Happy blending .
This surprised me with the mint and pineapple combo but I love mojitos so gave it a try. This did not disappoint. The flavor combo was intriguing and delicious. Will definitely make again.
I was excited to use my homegrown mint for this smoothie. I added ice to make it colder, but wonder if that made it so I couldnโt taste the pineapple flavor very much.
