Sweet. Soothing. Refreshing. Hydrating. This Pineapple Mint Smoothie happens to be my literary agent’s favorite recipe of all time. If you close your eyes while sipping it down, you might even teleport to a poolside bar and think it’s a pineapple mojito (you wouldn’t be the first!).
Have you ever thought about serving smoothies at your poolside parties? They make the perfect addition to a summery spread, and I won’t tell anyone if you add a little rum to them!

Ingredients in a Mint Smoothie
Head to the grocery store and gather the following fruits, leafy greens and fresh herbs to create this delicious mint smoothie.
No matter where you serve it, a juicy, sweet pineapple smoothie is amazing. It’s the perfect summer drink to cool down, hydrate and feel amazing!
- Kale: The king of the leafy green family, kale is packed with fiber and phytonutrients that our body loves.
- Coconut Water: This is the most hydrating liquid base out there. I love using it as a post-workout smoothie or on a hot day.
- Pineapple: This natural sweetener turns this healthy smoothie into a decadent poolside cooler.
- Lime: Fresh limes make the most vibrant flavors and can be blended effortlessly into a mint smoothie.
- Mint: Mint is a natural stimulant,ย whichย can help your perk up during a painfully slow afternoon, or even give you a healthy jolt before you head to the gym.
If you’re not a fan of kale in your smoothies but want to be, then this is a great gateway smoothie. The pineapple and coconut water up the sweetness + tone down the bold kale flavor.
Let me put it this way. Normally my kids don’t like kale in their smoothies, but this pineapple mint smoothie went down the hatch nice n’ easy.
Pineapple Mint Smoothie FAQs
I typically stick to 1/4 cup or less when adding herbs to smoothies. I really want the mint to shine in this pineapple mint smoothie, so I add the whole 1/4 cup. Feel free to start with less if this is your first time trying fresh mint!
I don’t recommend it. Dried mint has a different flavor, and consistency and doesn’t hold the nutritional benefits found in fresh. I do recommend growing your own mint! It’s super easy to do and allows you to grab a garnish any time you want.
Use a low-sugar fruit to naturally lower the sugar. If the pineapple in this pineapple mint smoothie is too much, then use half of the measurement called for and add in raspberries, blackberries or peaches to help lower the sugar.
Naturally Lower Sugar in Smoothies
While sugar in fruit is not processed, it can be a bit much at times. The easiest way to help your body easily process the natural sugar in fruits is to add in a plant-based protein powder with protein and healthy fats. Then you get a filling snack without the sugar crash.
You can also swap out higher glycemic fruits with lower glycemic fruits.
Low Sugar Fruit Swaps
If the pineapple holds too much natural sugar for you then cut it down to 3/4 cup and add in 3/4 cup of one of the following low sugar fruits:
- Raspberries
- Blackberries
- Peaches
- Grapefruit
Don’t let natural sugar slow you down! Smoothies are the ultimate ‘build your own’ since you can really use what you have on hand or prefer to make any recipe work for you.

Pineapple Mint Smoothie
Ingredients
- 1 cup kale fresh
- 1 cup coconut water
- 1 ยฝ cups pineapple frozen
- ยผ cup mint fresh
- 1 tbsp lime juice
- 1 serving homemade protein powder optional
Instructions
- Blend kale and coconut water until smooth.
- Add remaining ingredients, and blend until smooth.
Notes
- Use frozen fruit to make smoothie cold.
- This really can turn into a mocktail with a fun glass and some fresh mint or lime wedge garnish.
- Swap kale with the leafy green of your choice.ย
- Swap coconut water with regular water or carton coconut milk.
- Use a plant based protein powder to help your body process the natural sugar more easily.
I enjoyed this smoothie. I used spinach instead of kale and fresh mint from my garden. Very refridheshing and aromatic.
I can’t tolerate pineapple, so I used kiwi. I love this smoothie! Mint is a great addition.

Oh my goodness I loved this smoothie. Iโve always loved pineapple but I have to admit I was not sure what to expect from the kale and mint. This was delightfully fresh and bright and it has been my favorite so far in the challenge. I will definitely be making this again.
Iโm, I think it takes some getting used to the kale and mint together. But, I will drink it. Maybe I need to do a few twerks to make it more my flavor. But it does have a beginning to a good smoothie..
I admit I was a little worried that the mint would overpower everything, but I am happy to report that I was so wrong. The pineapple and lime made this so refreshing and delicious! This will be in the regular rotation!

My favorite of the week
I must confess that I was afraid of this smoothie, as I didnโt know if we would like it with the kale. I am happy to report that it is our favorite one so far!!
I think this one might be my favorite so far. I found it to be so refreshing, loved the mint after taste.
I love mint and I love pineapple so this is a hit for me. I love the idea that you can sub out half the pineapple for raspberries or other berries to lower the natural sugar.
This was surprisingly good. I’m not normally a fan of kale in smoothies, but this recipe got it right!

Not a big fan of this one. Drank it all but probably wonโt make again.
Not much of a fan. I used 1/8 cup of mint and it still seems strong flavor to me. First time adding fresh mint to a smoothie. I added vanilla protein powder to try to tone down the mint flavor. Love the pineapple but if I make again I will put less mint.
This is such a great smoothie! I added a frozen banana to it to make it more filling.
Iโve never thought to put mint in a smoothie. Yum! I like the tips on how to exchange a fruit for another fruit. I exchanged the pineapple for mango. and added chia seed in exchange for protein powder.
