Strawberry Peach Refresher-2

Every day is another chance to treat your body right and give it the nutrition it needs. We don’t have to tell you because you probably already know that our favorite way is to blend up a green smoothie for breakfast or snack each and every day.

It can be hard to eat all the recommended fruits and veggies for the day. Everyone is busy. It takes time to prepare a healthy meal. That’s why we have come to rely on green smoothies to help us fit all that leafy green goodness into our diets.

A glass full of nutrients

This creamy green smoothie includes a mild tasting green, bok choy, which is part of the cabbage family and has cancer-fighting properties. It’s a very good source of beta carotene. One cup of bok choy is contains 9 calories, 63% the recommended daily value of vitamin A, 52% vitamin C, and 8% calcium.

Let’s not forget the strawberries and peaches! The two cups strawberries used in this recipe boast and amazing 182% daily value of vitamin C. Peaches are another good source of vitamin A. Sip up this smoothie to help give your immune system a boost and help you feel great!

This recipe was submitted by Yvonne R for our weekly Feature Friday contest and features a cancer-fighting powerhouse, bok choy, along with peaches and strawberries. // serves two

Ingredients

  • 2 cups bok choy (fresh)
  • 2 cups almond milk (unsweetened)
  • 1 cup strawberries
  • 2 cups peaches

Instructions

  1. Blend bok choy and almond milk until smooth.
  2. Next add the remaining fruits and blend again.

Notes

*Use frozen fruit to make smoothie cold. Can use baby bok choy or another leafy green in place of bok choy.

    This one looks DELICIOUS and simple! I think I overcrowd my smoothie which makes it not taste fruity, what do you think?

    1/2 cup spinach
    1/2 cup argula
    1/2 cup unsweetened almond milk
    1/2 cup water
    3/4 of a banana
    1 cup strawberries
    1/4 Avocado
    1 tbsp organic rice protein nutribiotic
    stevia to sweeten
    1/4 cup chia seeds
    1 tbsp goji powder

    PS. do I need Chia seeds or goji or flax or cacao powder or maca powder to get the energy in a smoothie? I feel as if i dont have these things everyday, (2 at a time at least) I do not feel energetic throughout the day. i start to feel tired mid day without them. but i haven’t tried a smoothie without these superfoods in fear of falling asleep. any info will help. i need to lose 40 lbs and want to be healthy and make smoothies a life choice. i just bought a vitamix, can’t wait for it to come to make better smoothies, just shipped 🙂 and plz reply to my email. Wish to become like friends, i have no one to help me. and am enjoying eating like this, I just had a salad i thought id never try in a million yrs 🙂

    hi: Just made the strawberry refresher smoothie with spinach.
    Taste was good, but it turned brown. I don’t think I can get my 11 year old daughter to drink a brown smoothie. Any suggestions??

    Can I use a mix of baby kale, chard and spinach instead of just 2 cups of spinach or bok choy?

    For this recipe, do you use just the green leafy parts of the bok choy, or the whole thing including the white parts?
