Sweet. Soothing. Refreshing. Hydrating. This Pineapple Mint Smoothie happens to be my literary agent’s favorite recipe of all time. If you close your eyes while sipping it down, you might even teleport to a poolside bar and think it’s a pineapple mojito. (You wouldn’t be the first!)

How to make this Mint Smoothie

Head to the grocery store and gather the following fruits, leafy greens and herbs to create this delicious mint smoothie. No matter where you serve it, this juicy, sweet pineapple smoothie is amazing. It’s the perfect summer drink to cool down, hydrate and feel amazing!

Kale: The king of the leafy green family, kale is packed with fiber and phytonutrients that our body loves

Coconut Water: This is the most hydrating liquid base out there. I love using it as a post workout smoothie or on a hot day.

Pineapple: This natural sweetener turns this healthy smoothie into a decadent poolside cooler.

Lime: Fresh limes make the most vibrant flavors and can be blended effortlessly into a mint smoothie.

Mint: This herb is a natural stimulant, which can help your perk up during a painfully slow afternoon, or even give you a healthy jolt before you head to the gym.

If you’re not a fan of kale in your smoothies but want to be, this is a good one to start with. The pineapple and coconut water make it very sweet. The kale flavor ends up being very mild. Let me put it this way, normally my kids don’t like kale in their smoothies, but this Pineapple Mint Smoothie went down the hatch nice and easy.

Yep, you heard me right. You can totally add a splash of rum to this smoothie and transform it into a pineapple mojito with a healthy twist.

  • 1 cup fresh kale
  • 1 cup coconut water
  • 1 1/2 cups pineapple
  • ¼ cup fresh mint
  • 1 tbsp lime juice
  • 1 serving Protein Smoothie Boost - optional


  • Blend kale and coconut water until smooth.
  • Add remaining ingredients, and blend until smooth.


  • Use frozen fruit to make smoothie cold.

    So far this is the best tasting one. Despite being thinner than I like them, it at least had some flavor. What by the way us a quarter cup of mint leaves? I just used all I purchased in the little herb package. Also, can someone please tell me how to get stop all the foamy bubbles I’m getting.

      Hi Portia! Glad you liked this one best! To measure out 1/4 cup mint leaves, we’d use about 10 leaves or so. And those foamy bubbles are showing up because you have such an awesome high powered blender. 😉 To correct that, be sure to slow the blender down at the end and blend slowly for a bit before pouring it out to drink.

    This is one the most delicious smoothies you can try. I highly recommend it! Definitely always blend your kale and liquids first until smooth as recommended. It makes all the difference. When I started doing this I was able to switch up my greens and I noticed a big difference. Your body needs diversity in your greens. Happy blending .

    I was excited to use my homegrown mint for this smoothie. I added ice to make it colder, but wonder if that made it so I couldn’t taste the pineapple flavor very much.

    It was pretty refreshing. I liked the mint but my kids didn’t like it. They felt like it was sour and tasted like grass.

    This one was really good, even though my dislike of kale and preference for spinach had me make the swap; and my lack of fresh mint had me use some peppermint and spearmint candy for the mint flavor. I would make it again, still with spinach, once I get fresh mint.

    I think I added too much mint, but I did like it. Less mint and make sure the fruit is frozen and it will be perfect! I did add the chia that I blended in and protein powder to make it my breakfast.

    When pineapple is the only fruit smoothies are a little bit too acidic for me and I have a weird aftertaste. This one wasn’t my favorite. I think someone who really likes pineapple would LOVE it though!
