This challenge is for you if…
Ten days, ten salads, and the shopping already worked out. Here’s who it’s really for.
Your salads have gone boring
The same leaves and bottled dressing every time. Ten days of recipes that taste like you meant it.
You want a real meal, not a side
Pasta salads, grain bowls, roasted vegetables — hearty enough to be lunch and dinner.
You want more vegetables in your day
The easiest way to eat a lot of them, without turning the oven on most nights.
You hate wasting produce
One grocery list for the whole ten days, so the greens get used before they turn.
Lunch is the meal you skip
Something ready in the fridge beats whatever is quickest at one o’clock.
You like doing it with other people
A challenge with a start date, daily emails, and a crowd doing it alongside you.
What’s inside the challenge
Ten days of salads worth looking forward to, with the thinking already done.

Menu
10-day salad menu
A new one every day — Healthy Taco, Vegan Potato, Kale Caesar, Bright Berry. Each serves two, so dinner leaves lunch behind.

Groceries
One grocery list
Split across two trips, days 1–5 and 6–10, so the spinach never turns before you reach it.

Prep
A salad prep guide
Dressings made ahead in little jars, vegetables chopped and waiting. Then it is grab, toss and eat.

Emails
Motivation emails
Encouragement, quick tips and reminders from me, start to finish. We’re in this together.

Fuel your passion
It started with one green smoothie. That was the whole plan — one a day, every day, and let it add up. I was exhausted, stressed out and frustrated with my body, and a smoothie was the one thing I could manage.
Smoothies turned into soups, soups turned into salads, and eventually it turned into this. Somewhere along the way I stopped surviving each day and started living it — a backyard family farm, running across the Grand Canyon twice in a single day, hiking to the top of the tallest waterfall in North America with my kids.
What I’ve learned from all of it is that repetition and focus are what make results happen. So ten days of salads, one after another, will get you good at this — confident making salads that are filling, full of flavor, and that actually taste good.

FAQs
Two. Enjoy one for dinner and the other as lunch leftovers the next day, or do the challenge with someone and have exactly the right amount each day. The shopping list is worked out on that basis.
So your produce doesn’t go bad. You buy only what you need for the first five days, then shop again for days six to ten. There’s nothing enjoyable about opening a bag of rancid spinach.
Both, and that’s deliberate. Fruit salads, potato salads, garden salads — some are filling enough to be dinner on their own, others are better alongside something. It’s up to you which way you take each one.
Yes, and I’d recommend it. Make the dressings ahead and keep them in small airtight containers, and chop most of the vegetables and fruit in advance — just wait to wash until you’re ready to eat. Three recipes want nuts soaked the night before, so set a phone reminder.
Not at all. Keep drinking one right through the challenge — I will. The more plants, the merrier.
A ten-day salad menu, a done-for-you grocery list split across the two shopping trips, a salad prep guide, a full-colour interactive PDF, and a motivation email from me each day. It’s yours to keep and cook from again.

Jumping into Spring
I enjoy all of the Rawkstar challenges. However, the Spring Salad Challenge brings Spring & fun to my mind & well-being. Best challenge!
Salad challenge
It was tough to eat salad for 10 days straight but I was able to incorporate a salad during those 10 days. This included fruit salad, vegetable salad, pasta salad, etc. Once I started to think of different salad ideas, they became easier to implement. I’ll continue to try to eat more salads post-challenge.
Energy!
Not easy getting started but lots of good tools here to help. Have more energy and sleeping better so far so planning to keep going. Thanks for the motivation!
Stepping Outside My Comfort Zone
On my healthier journey, I was starting to back slide a bit. After a strong New Year’s Resolution, I was beginning to slow down to a boring crawl. I needed a new challenge to provide some momentum. This 10 Day Salad Challenge was the kick in the behind that I needed. I shopped, created new amazing salads everyday, and walked when the crazy Dallas spring couldn’t decide to be cold or rainy or hot! Now facing the end of the 10 days, I am joyfully celebrating a renewed spirit of determination. Success can only be measured by perseverance along with determination, and I am now armed with new tools to continue that journey that I began in January. I have no fear of recreating Jen’s fabulous recipes from the Simple Green Smoothies cookbook or even reinventing them with all the suggestions from my fellow challenge participants. I have a Fitness Tracker from Run the Edge to keep me trekking, and a big round of applause to Organic Girl for supplying the healthy salad mixes and alerting me to the 10 Day Salad Challenge. I’ll be making my favorite, the Taco Salad, tomorrow as I trek thru the next month with an “I Got This” attitude. Thank You!
I Love Fennel – Who knew?
One of those things I’m just terrible at is creativity in my meal planning. This challenge was the kick in the pants I needed to try new things and – bonus!- eat more plants. Literally on Day 1 I found my new favorite salad dressing, the Strawberry Basil. Day 4 is my new favorite salad (Lemon Arugula, picture attached) with Day 10 (Strawberry Arugula) as the runner up. Never tried fennel before in my life but it will be a regular addition to my salads now. (I also get to break out my mandolin slicer -yay!) One downside to this challenge: I hate to waste food, so doing this challenge for 10 consecutive days was tricky. I did have some difficulty trying to use up the ingredients that didn’t make it into the salads. My rabbit took care of some of the scraps and we got creative with the rest. Thanks for the motivation and tools give this a try!
Mmm salad
Really like promos that are actually good for me and the planet. Yay!
Enjoyed the salad
Since I am theonly person eating these salads and they make 2 servings, I have been eating one salad for two days (once a day). I have enjoyed the variety that I have eaten so far. I finally ate avocados. I enjoyed them to my surprise! I loved the salad with the barley in it. I have always just reserved barley for soups in the wintertime. It was a new experience to eat it cold and in a salad. Tomorrow I do the pasta salad. I look forward to that. I intend to do all the salads even through the 10 days are over. I have really enjoyed this challenge and the new combinations that you have given me. Thank you.
Salads for life
So nice to go beyond a simple green salad. Also the dressings that came along with them were great. I don’t like dressing but i love the berry dressing from day 2
Fun
It was fun to see new ideas and lots of colors.
Best Salads Ever!
Thank so much for the fantastic salad recipes. I already eat a lot of salads but your challenge has opened my eyes to a lot of brand new ideas. I have used your recipes as a jumping off point to create my own with ingredients that I love. Great job to get people to eat more greens. I love Organic Girl greens!

Loved this challenge. I was looking for new ways to make salads exciting and that’s exactly what I got! No more boring salads for me! Great dressing recipes too. Lemon Arugula salad was my favorite. I’ve tried some new foods and got some great ideas!
The Greenies Spirit
This is a healthy and fun thing to do!
Loving my Salads
Unfortunately due to unforeseen circumstances I wasn’t able to complete the challenge but have printed all the recipes and when able I will definitely try them all. Thank you so much for putting these challenges together, lots of fun , I am still enjoying the soups from the soup challenge.
Great intro to spicing up salads
This was a great challenge to learn how to enjoy salads and that salads are not just iceberg lettuce! There were some many great flavor combinations and so many ways to make salad with more than just greens. I love the way this sparks the imagination to eat more greens in your diet and stay healthier. I also love the way it was combined with the 10 day exercise challenge. This was amazing.
