Sweet. Soothing. Refreshing. Hydrating. This pineapple mint smoothie happens to be my literary agent’s favorite recipe of all time. If you close your eyes while sipping it down, you might even teleport to a poolside bar and think it’s a pineapple mojito (you wouldn’t be the first!).

Ingredients You’ll Need
Head to the grocery store and gather the following fruits, leafy greens and fresh herbs to create this delicious mint smoothie. No matter where you serve it, a juicy, sweet pineapple mint smoothie is amazing. It’s the perfect summer drink to cool down, hydrate and feel amazing!
- Kale: The king of the leafy green family, kale is packed with fiber and phytonutrients that our body loves.
- Coconut Water: Is a great electrolyte replenishing liquid base. I love using it as a post-workout smoothie or on a hot day when just chilling on a pool float breaks a sweat.
- Pineapple: This natural sweetener turns this healthy smoothie into a decadent poolside cooler.
- Lime: Fresh limes make the most vibrant flavors and can be blended effortlessly into a mint smoothie.
- Mint: Mint is a natural stimulant, which can help your perk up during a painfully slow afternoon, or even give you a healthy jolt before you head to the gym.
If you’re not a fan of kale in your smoothies but want to be, then this is a great one to start with. The pineapple and coconut water up the sweetness and tone down the bitterness found in most leafy green vegetables.

How to Make Pineapple Mint Smoothie
This mint smoothie comes together fast, and the steps matter for the smoothest texture and brightest flavor.
- Start by adding the kale and coconut water to your blender. Blending helps fully break down the kale so you don’t end up with green chunks. If you’re using one of my recommended blenders for smoothies, you can skip this step and blend everything together.
- Next, add the frozen pineapple, fresh mint, lime juice, and protein powder if you’re using it. Blend again until thick and creamy. The frozen pineapple creates a naturally cold, refreshing smoothie without ice, while the mint and lime add a clean, citrusy finish.
- Taste and adjust if needed. Add a splash of coconut water to thin it out or a few extra mint leaves if you want more of that cool, refreshing kick. Pour into a glass and enjoy right away for the best flavor and texture.
Recipe Tips
- Have extra kale? You can freeze kale in bags or space-saver cubes to use later in green smoothies.
- Deal on whole pineapple? You can freeze it yourself for smoothies! First, cut pineapple into small chunks and then place on a baking sheet single layer and freeze. Transfer to a freezer-safe bag once frozen.

Ingredients
- 1 cup kale fresh
- 1 cup coconut water
- 1 ½ cup pineapple frozen
- ¼ cup mint fresh
- 1 tbsp lime juice
Instructions
- Blend kale and coconut water until smooth.
- Add remaining ingredients, and blend until smooth.

- Use frozen fruit to make smoothie cold.
- This really can turn into a mocktail with a fun glass and some fresh mint or lime wedge garnish.
- Swap kale with another leafy green vegetable of your choice (or leave out).
- Swap coconut water with water or coconut milk.
- Use a plant-based protein powder to help your body process the natural sugar more easily or try making my homemade protein powder.

I typically stick to 1/4 cup or less when adding herbs to smoothies. I really want the mint to shine in this pineapple mint smoothie, so I add the whole 1/4 cup. Feel free to start with less if this is your first time trying fresh mint!
I don’t recommend it. Dried mint has a different flavor, and consistency and doesn’t hold the nutritional benefits found in fresh. I do recommend growing your own mint! It’s super easy to do and allows you to grab a garnish any time you want.
Use a low-sugar fruit to naturally lower the sugar. If the pineapple in this pineapple mint smoothie is too much, then use half of the measurement called for and add in raspberries, blackberries or peaches to help lower the sugar.













We tried today’s smoothie challenge. It was ok. I could taste a little of the pineapple and a hint of the mint. I did not measure the kale and had too much in the blender. I had to add another cup of water in order to get it mixed up. I will try this smoothie again and measure the kale. I have never tried mint in a smoothie before. This is my first time using mint. It was slightly refreshing, but it is not as good as yesterday’s challenge. I will see if I get the same results. It was ok. Thank you.

Refreshing and vibrant! I added some Kiwi’s in with all the other green and used spinach instead of kale.

Enjoyed today’s smoothie. Doubled the recipe, added hemp seeds, and used 1/2 cup of mint herbal tea. Like peppermint, but using fresh is sometimes too strong for me. Only used 2 squeezes of lime for the double recipe. Thought this might be too sweet, but it was good.
This smoothie is very refreshing. The mint was a little overpowering, probably cut back to one tablespoon in the future.
Wow my favorite one so far and I am a blueberry and spinach kinda girl usually. I just love the fresh mint and I used spinach instead of kale. I would have never thought to put mint in a smoothie. I almost skipped the mint but so glad I added it in.

This one was surprising and pretty good. I wish it was a bit bulkier so I a banana might have helped. My blender is pretty weak so there were stringy pineapple bits that weren’t great but overall a nice smoothie.

Another keeper!!! I had to make some substitutions according to what I could get my hands on (used coconut milk, instead of water. And was a little shy of 1/4 cup mint.). I think using the milk made it more of a smoothie, while if I had used water it would have been more like a slushie. With the hot weather, I’m looking forward to trying it again with the coconut water and a full 1/4 cup of mint.
