Sweet. Soothing. Refreshing. Hydrating. This Pineapple Mint Smoothie happens to be my literary agent’s favorite recipe of all time. If you close your eyes while sipping it down, you might even teleport to a poolside bar and think it’s a pineapple mojito (you wouldn’t be the first!).

Head to the grocery store and gather the following fruits, leafy greens and fresh herbs to create this delicious mint smoothie. No matter where you serve it, a juicy, sweet pineapple mint smoothie is amazing. It’s the perfect summer drink to cool down, hydrate and feel amazing!

  • Kale: The king of the leafy green family, kale is packed with fiber and phytonutrients that our body loves.
  • Coconut Water: This is the most hydrating liquid base out there. I love using it as a post-workout smoothie or on a hot day.
  • Pineapple: This natural sweetener turns this healthy smoothie into a decadent poolside cooler.
  • Lime: Fresh limes make the most vibrant flavors and can be blended effortlessly into a mint smoothie.
  • Mint: Mint is a natural stimulant, which can help your perk up during a painfully slow afternoon, or even give you a healthy jolt before you head to the gym.

If you’re not a fan of kale in your smoothies but want to be, then this is a great gateway smoothie. The pineapple and coconut water up the sweetness + tone down the bold kale flavor.

How to Make Pineapple Mint Smoothie

This Pineapple Mint Smoothie comes together fast, and the steps matter for the smoothest texture and brightest flavor.

  1. Start by adding the kale and coconut water to your blender. Blending the greens first helps fully break down the kale so you don’t end up with leafy bits. This step is especially helpful if you’re newer to green smoothies or using a lower-powered blender.
  2. Once the kale mixture is smooth, add the frozen pineapple, fresh mint, lime juice, and protein powder if you’re using it. Blend again until thick and creamy. The frozen pineapple creates a naturally cold, refreshing smoothie without ice, while the mint and lime add a clean, citrusy finish.
  3. Taste and adjust if needed. Add a splash of coconut water to thin it out or a few extra mint leaves if you want more of that cool, refreshing kick. Pour into a glass and enjoy right away for the best flavor and texture.

How much mint should I add to my smoothie?

I typically stick to 1/4 cup or less when adding herbs to smoothies. I really want the mint to shine in this pineapple mint smoothie, so I add the whole 1/4 cup. Feel free to start with less if this is your first time trying fresh mint!

Can I use dried mint in a smoothie?

I don’t recommend it. Dried mint has a different flavor, and consistency and doesn’t hold the nutritional benefits found in fresh. I do recommend growing your own mint! It’s super easy to do and allows you to grab a garnish any time you want.

How do I lower the natural sugar in a smoothie?

Use a low-sugar fruit to naturally lower the sugar. If the pineapple in this pineapple mint smoothie is too much, then use half of the measurement called for and add in raspberries, blackberries or peaches to help lower the sugar.

  4. My boyfriend and I have been replicating 2 meals a day with your smoothies and this one is BY FAR my favorite! I use all of the “meat” of the lime, though- not just the juice. I also like using a little less fruit and a bit more veggies just to keep carbs/sugar down.

  6. I just bought a blendtec yesterday at Costco and made my first green smoothie…I LOVE it! I was wondering if anyone has ever used Arugula? Just curious. I love spinach, kale and swiss chard but I live in the south so there are always lots of greens like mustard and collard greens. I grew up in the northeast so I never had these. Any feedback on these?

  8. Hi! So I just made this, but with spinach and no other ingredients were frozen except for the spinach leaves. It turned out to be more of a juice than a smoothie, and most of the drink is like fuzzy at the top instead of it just being juice. Did I do something wrong? It also tastes a bit bitter…is it because of the spinach??

      Sometimes lime juice can be bitter. Next time I would suggest using frozen pineapple and less lime juice. Hope that helps. 🙂

  9. To make my smoothie a meal replacement I add a half cup of oatmeal. One morning I didn’t have any kale or spinach..so I thinking what am I going to use– frozen broccoli. Smoothies are addicting!!!

    1. Hello! to eat a smoothie for breakfast I add a couple of spoons of hemp hearts or soy or almond milk or even soft tofu for a full meal replacement.

        Thanks for the comment. We recommend staying away from highly-processed soy products which can interfere with nutrient absorption and leach nutrients from your body. Small amounts of organic, non-GMO soy are fine.

  10. Made this yesterday as my first green smoothie! I froze the pineapple so it was like a beautiful yummy slushie! Soooooo good! I used baby kale also and did it in my food processor! It worked really well, still had little pieces but I was happy with the consistency. I just got ingredients for 2 smoothies, so also the mango ginger immune support. Can’t wait to try that one today!
