Make the following recipes this week using a variety of vegetables & spices to keep the flavors amazing and your body rawkin‘! You can make them in any order you’d like and enhance with additional ingredients that you enjoy. Can’t wait to see how they turn out!

This healing, cleansing blended vegetable soup recipe helps to alkalize the body and bring it back into balance. Add unflavored collagen for a protein boost.
Jalapeno Corn Chowder

Absolutely! Two of the recipes are best with some sorta blending process, which can be done in a high-speed blender, immersion blender or food processor. We challenge you to find a way to make each of these recipes so you can celebrate all the vegetables and flavor combinations.
All my soup recipes adhere to a plant-based whole food diet, yet that doesnโt mean you canโt change it up. Feel free to add cheese, meat or sour creamโย it’s totally up to you. Modify to make each recipe something your family will love!
If you have food sensitivities or trouble finding certain ingredients, feel free to get creative and tweak the recipes to work best for you. Iโm here to give you a solid plant foundation to build your diet upon and experience the health benefits. Thereโs no right or wrong way to do this challenge. You have to modify and make it work for you.
We suggest using what you already have: a stockpot, Dutch oven or whatever pot you have will most likely work. Keep in mind that each soup makes four servings, which yields between 8-10 cups. If you are in the market for new soup pot, I suggest the Lodge 6-Quart Enamel Dutch Oven.

Vegetable stock is very similar to vegetable broth (and can def be swapped!) without much difference to most people. Vegetable stock tends to be more flavorful and contains less sodium. Yet both will work fine in any of these recipes. You can easily make your own Homemade Vegetable Stock using the scraps from the soups. If you’d rather but, we suggest picking an organic one and reading the label to make sure there are no sweeteners in it (yep, some brands add corn syrup to their brothโฆso crazy!).
Depending what your weather is like right now, you might be struggling to make hot soups. It can get to 90ยฐ in my part of Oklahoma right now… so I get it. If it’s hot in your area, try making a cold fresh salad to eat with your soup. We have wonderful fresh salad recipes on our blog that compliment the Soup Challenge.
If you’d like to eat more plant-based throughout the challenge, try having a green smoothie and plant-protein rich snacks. That’s what I do and I’ve included them in my weekly Rawk the Year meal plan. No matter what you decide to do, your success with this challenge is determined by YOU making as many new soup recipes as you can. You’ve got this!
