Free Radical Fighting Super Smoothie

Free Radical Fighter-3

Try this Free Radical Fighting Super Smoothie once you’ve moved beyond the beginning stages of green smoothies. Cantaloupes are a rich source of vitamin A (as beta-carotene) and vitamin C, which are important immunity and antioxidant vitamins. They also contain good levels of B vitamins and vitamin K. Blueberries rank the highest for antioxidants when it comes to fruit. And these tiny berries are full of vitamin C and fiber. Mint helps soothe your stomach and stimulates digestion of fats. Let’s blend breakfast together!

Description

This refreshing, fruity smoothie is chockfull of antioxidants to help fight free radicals.


Scale

Ingredients

  • 2 cups spinach (fresh)
  • 1 sprig mint (fresh)
  • 1 cup water (optional)
  • 2 cups cantaloupe (ripe and rind removed)
  • 1/2 cup blueberries
  • 1 apple
  • 1/2 lime (fresh squeezed)

Instructions

  1. Blend spinach, mint leaves, and ripe cantaloupe until smooth.
  2. Next add the remaining fruits and blend again.


Notes

You do not need to add a liquid-base to this recipe because of the high water content in ripe cantaloupes. Use at least one frozen fruit to make the green smoothie cold. Cantaloupe can be cut into small cubes and frozen overnight.

    So, I hate cantaloupe.. But I LOVE this smoothie! When I first saw the recipe picture I dismissed it because of the melon, but decided to try something new and am glad I did! Slightly creamy, not too sweet, and the mint and lime make it so refreshing! Thanks for getting me to re-think my faves and try something I thought for sure wouldn’t work for me!

    I would love to try this when melons are in when season. In the meantime, is there a substitute to recommend?

    Hi Theresa,

    Of course! Some great substitutes when cantaloupe is out of season are peaches + papaya! Also, feel free to try this recipe with any other type of melon!

    Do you have any options for someone on a kidney stone diet? We have to avoid soinach, beets, anything in the cabbage family.
