Healthy spring recipes

Spring ushers in a natural time of new beginnings every year. No matter how my year is going, spring is a time where I shake off the cobwebs of winter (both figuratively and literally!), and prepare for all things fresh and new. So today I’m sharing a few of my fav things to do, as well as my fav spring recipes using fresh produce. Spring fruits and spring vegetables are fresh, bright, and oh so delicious.

What to do this spring

Grow a kitchen garden: While my garden may never look as incredible as Ashlie of The Mocha Gardener‘s, I’m all about supplementing meals with garden produce this year. If you need some help starting your garden, then reach out to my friend Nicole of The Gardenary Co. She, along with her team of incredibly talented gardening consultants, will teach you the ins and outs of creating a beautiful spring garden.

Start a new hobby: My family decided to start mountain biking this spring and so far it’s SO fun! We’ve got some great trails in the Withlacoochee State Forest, perfect for practicing our new skills. It’s def a good workout, as well as an activity my entire family enjoys.

Get outside + get active: This winter I’ve been continually challenged by Anna Mae Groves to get outside every day. She posts weekly in her Insta stories asking whether her followers have gotten outside, rain or shine, cold or warm weather. It is so vitally important both mentally and physically, so I challenge you to get outside this spring!

Spring whole food cleanse: I like to start this season with a Seasonal Cleanse, which helps my body recharge as well as prepares me for the season ahead. I use seasonal produce for a completely plant-based, whole food menu so that you can transform from the inside out.

I love cooking/eating seasonal food, and there are so many great spring vegetables and fruits that are at their peak in the coming months. Did you know that produce grown in season is actually higher in nutrition than produce grown outside its natural season? The spring recipes below use seasonal produce for optimal flavor.

I know that not all these foods are available all over the world this time of year, yet it’s not hard to Google some local resources to help you find what’s fresh in your area. Or, just stop by the next farmer’s market to check out what’s getting harvested right now. Some of the best spring recipes start with the produce that catches my eye at a roadside stand.

With so much goodness growing, I had to share a few of my favorite springtime recipes as well. These recipes will make cooking as well as eating seasonal spring foods a breeze.

Carrots– Let’s start with this incredible Honey Turmeric Carrot Smoothie. This smoothie is a great way to start spring, because it contains ingredients meant to both soothe inflammation + boost the immune system.

Artichokes– High in fiber as well as loaded with nutrients + antioxidants, this veggie can be roasted, grilled, pickled… you name it. Chrissa has a spring recipe for Instant Pot Artichokes w/ 3 dipping sauces that has me drooling. The vegan cheese sauce alone sounds fabulous!

Strawberries– Spring foods have me craving fresh, bright salads. This Mixed Greens Salad hits the tastebuds perfectly as the ultimate spring recipe. I love grabbing herbs from my kitchen garden, because they spruce up any meal. Though strawberries seem to be stocked in stores year round, they’re definitely meant to be a spring fruit.

Fennel– This veggie is actually a close relation to carrots! It’s the star of this Lentil Fennel Soup recipe, though I also love using it as a topping for salads and pizza. This is one of the incredible spring recipes found in my Seasonal Cleanse Spring Cleanse.

Asparagus– Super simple to cook, as well as fun to grow, asparagus is probably one of my fav veggies. Megan from Detoxinista has an incredible recipe for Cauliflower Rice ‘Risotto’ with Asparagus and Mushrooms. It’s as good as it sounds, as well as capitalizes on great spring veg to up the flavor factor.

Herbs– If flavor is the reason why you’re seeking out spring recipes, then you definitely need to try this Herbalicious hummus. Mix + match any fresh herbs you have on hand, then pair with some fresh veggies for a vibrantly filling snack.

Cherries– This delectable spring fruit disappears fast at my house, though the culprit can usually be found with a red-tinged mouth. While cherries are the perfect seasonal dessert all by themselves, I love adding them to smoothies as well. Try this Cherry Almond Cinnamon smoothie either as a pre-workout boost, or a wake up call for a busy day.

Lettuce– While I give a lot of space on the blog to leafy greens like kale and spinach, lettuce is a great spring food. It’s super versatile as well as full of Vitamin C. It’s not just for salads either; those big leaves can also be used as a delicious food wrap. These Thai Lettuce Wraps are a community fav, as well as perfect for any takeout cravings!

Radishes– Now, this is a recipe I’m really gonna need you to try, as well as let me know how they turned out! Pinch of Yum’s Cinnamon Sugar Radish Chips take the cake in this spring recipe round up.     I currently live and share a kitchen with my daughter in law and son, she is allergic to nuts. What do you suggest as a substitution? I try to be careful of soy due to my thyroid. Thanks for all you do!

    1. Hi Carol! If your daughter is allergic to nuts, there are good substitutes such as olives, pumpkin seeds, sunflower seeds and avocados. These are all excellent sources of the nutrients, including unsaturated fats, that nuts are famous for. 🙂
