Sweet. Soothing. Refreshing. Hydrating. This pineapple mint smoothie happens to be my literary agent’s favorite recipe of all time. If you close your eyes while sipping it down, you might even teleport to a poolside bar and think it’s a pineapple mojito (you wouldn’t be the first!).

Ingredients You’ll Need
Head to the grocery store and gather the following fruits, leafy greens and fresh herbs to create this delicious mint smoothie. No matter where you serve it, a juicy, sweet pineapple mint smoothie is amazing. It’s the perfect summer drink to cool down, hydrate and feel amazing!
- Kale: The king of the leafy green family, kale is packed with fiber and phytonutrients that our body loves.
- Coconut Water: Is a great electrolyte replenishing liquid base. I love using it as a post-workout smoothie or on a hot day when just chilling on a pool float breaks a sweat.
- Pineapple: This natural sweetener turns this healthy smoothie into a decadent poolside cooler.
- Lime: Fresh limes make the most vibrant flavors and can be blended effortlessly into a mint smoothie.
- Mint: Mint is a natural stimulant, which can help your perk up during a painfully slow afternoon, or even give you a healthy jolt before you head to the gym.
If you’re not a fan of kale in your smoothies but want to be, then this is a great one to start with. The pineapple and coconut water up the sweetness and tone down the bitterness found in most leafy green vegetables.

How to Make Pineapple Mint Smoothie
This mint smoothie comes together fast, and the steps matter for the smoothest texture and brightest flavor.
- Start by adding the kale and coconut water to your blender. Blending helps fully break down the kale so you don’t end up with green chunks. If you’re using one of my recommended blenders for smoothies, you can skip this step and blend everything together.
- Next, add the frozen pineapple, fresh mint, lime juice, and protein powder if you’re using it. Blend again until thick and creamy. The frozen pineapple creates a naturally cold, refreshing smoothie without ice, while the mint and lime add a clean, citrusy finish.
- Taste and adjust if needed. Add a splash of coconut water to thin it out or a few extra mint leaves if you want more of that cool, refreshing kick. Pour into a glass and enjoy right away for the best flavor and texture.
Recipe Tips
- Have extra kale? You can freeze kale in bags or space-saver cubes to use later in green smoothies.
- Deal on whole pineapple? You can freeze it yourself for smoothies! First, cut pineapple into small chunks and then place on a baking sheet single layer and freeze. Transfer to a freezer-safe bag once frozen.

Pineapple Mint Smoothie
Ingredients
- 1 cup kale fresh
- 1 cup coconut water
- 1 ½ cup pineapple frozen
- ¼ cup mint fresh
- 1 tbsp lime juice
Instructions
- Blend kale and coconut water until smooth.
- Add remaining ingredients, and blend until smooth.

Notes
- Use frozen fruit to make smoothie cold.
- This really can turn into a mocktail with a fun glass and some fresh mint or lime wedge garnish.
- Swap kale with another leafy green vegetable of your choice (or leave out).
- Swap coconut water with water or coconut milk.
- Use a plant-based protein powder to help your body process the natural sugar more easily or try making my homemade protein powder.

I typically stick to 1/4 cup or less when adding herbs to smoothies. I really want the mint to shine in this pineapple mint smoothie, so I add the whole 1/4 cup. Feel free to start with less if this is your first time trying fresh mint!
I don’t recommend it. Dried mint has a different flavor, and consistency and doesn’t hold the nutritional benefits found in fresh. I do recommend growing your own mint! It’s super easy to do and allows you to grab a garnish any time you want.
Use a low-sugar fruit to naturally lower the sugar. If the pineapple in this pineapple mint smoothie is too much, then use half of the measurement called for and add in raspberries, blackberries or peaches to help lower the sugar.

Yes, you can totally swap in spinach! We love changing up our recipes, so never hesitate to swap out one leafy green for another! Also, not a fan of kale? Have you tried baby kale? It’s packed with the same nutrition as it’s more mature version, but it’s milder in flavor + blends great!

Looking to pre-blend and freeze our recipes! Go for it!! We suggest storing your pre-blended smoothies in an airtight freezer-safe container. When you’re ready to enjoy, simply thaw your green smoothie in the refrigerator the night before. Because none of our recipes have yucky additives or stabilizers, separation is completely natural, simply give you smoothie a quick shake before enjoying.

Hi!. I have taken up the 30days challenge. Sorry this might be a silly question, on your recipe it says 2 cups of kale. Do you compact the kale into the cups?. I normally just get 2 stalks or should i say 2 leave from stem. They are about 20 to 30cm each leave. Would that be enough? . I am think that i might not be putting enough green leaf for smoothies. Never as green as your pictures. But i do add a fair bit into my juice. Kale, Celery, Chia, Raw almond, an apple, carrot and blueberries minimum.

Thanks for reaching out! When measuring our leafy greens, we tightly pack them into a measuring cup. If you’re blendin’ outside of the US, 1 cup of leafy greens is equal to 30g.

Of course! We love switching up our leafy greens! Use what’s available and local to your area! And just remember – because of their more intense concentrated flavor, dried herbs can be substituted for fresh herbs at a ratio of 1 to 3.

Hi, this one turned out so chunky and fibrous for me – a first with the smoothies from this site. Is it because of the fibrous pineapple – I have a regular Kitchen Aid blender, and while it works fine with the other smoothies I’ve tried, I think it met its match in this one. No matter how long I blended, the final mix never really got homogenized. I wonder if this one needs a banana?

Thanks for reaching out! Did you use fresh or frozen pineapple? Like you said, the fibrous pineapple can sometimes be tough on your blender, and using frozen pineapple is a great way to get around the pineapple’s texture! If you bought fresh, I love cutting up the pineapple, laying it out on a baking sheet lined with parchment paper in the freezer, and then once it’s frozen, store the pineapple in an airtight container.
