Blending up veggies is a great way to add more plant-based goodness. This Carrot Smoothie provides one full serving of veggies.

If you’d told me when I started drinking green smoothies that I would be adding other veggies beside kale or spinach into my smoothies, I’d have told you you were crazy! But the more you drink green smoothies, the more your body starts to crave veggies and you get creative with your blends.

I like to eat my veggies too, but I like adding extra to my smoothies for added nutrition and fiber.

Carrots are a good place to start if you’re looking to add other veggies into your smoothies. This Strawberry Carrot Smoothie includes vitamin C-rich pineapple that pair well with the earthy carrot. If you’re looking to boost your Vitamin C, check out our DIY Smoothie Cubes.

What Are The Health Benefits of Carrots?

You were probably told as a child, as I was, that eating carrots would help your eyesight, particularly night vision or being able to see in dim light. And it’s true! Though now we look at screens so much that advice is changing. 😉

Carrots contain beta carotene, the precursor of vitamin A, which helps eyesight, but also helps maintain healthy bones, teeth, soft tissues and mucus membranes, and skin. Vitamin A aids collagen production which can help repair damaged skin.

Warning: It turns out that eating too many carrots may have an unwanted side effect. Too much beta carotene in your diet can make your skin take on an orange hue… or even a sorta tan.

Is It Healthier To Eat Raw or Cooked Carrots?

It’s important to have a diet rich in raw and cooked vegetables. Is one better than the other? Not necessarily.

Cooking makes food easier to eat because the cell walls become softer and less rigid making it easier for the body to absorb the nutrients. Cooked carrots also have more beta carotene than raw. Some of the vitamin C in carrots is lost during cooking, but it’s easily remedied by consuming plenty of foods that contain vitamin C.

What kind to use in a carrot smoothie?

Raw carrots are great for snacking. I prefer raw carrots in my smoothies mainly because I have a high powered blender and it retains the most nutrients. Need a blender recommendation? Be sure to check out our Blender Guide for everything you need to decide which blender is best for you.

But as far as nutrition goes, as long as you’re eating veggies, it doesn’t matter if they are raw or cooked. They’re good for you either way!

Strawberry Carrot Smoothie

I know…carrot smoothie?! First time I was like, ummm…no thanks. Yet this one is so delicious with a sweet unique undertone that you’ll begin to crave.



  • 1 cup fresh spinach
  • 1 cup coconut water, unsweetened
  • 1/2 cup carrots
  • 1/2 cup strawberries
  • 1/2 cup pineapple


  1. Blend spinach and coconut water together until smooth.
  2. Add remaining ingredients and blend again.


  • Use at least one frozen fruit to make the smoothie cold or serve over ice.
  • Can chop and steam carrots to make them easier to blend, or leave them raw.

    I thought this one would be more fruity, but tasted a little bland to me. I added a half a banana which gave it enough sweetness to make it ok. Also not a very pretty green color, but luckily tasted good in the end.

    I have to admit I was not looking forward to the carrots, but it still tasted pretty good. Just takes some getting used to but my taste buds are complying 🙂 Day 8!

    Wow, I’m surprised. I wasn’t sure how I was going to react to the addition of carrots. I was scared it was going to be lumpy but it wasn’t. I love this flavor profile. I’m giving this 4stars instead of 5 because my smoothie was to thick, 1/2c of liquid didn’t suffice, I had to modify so it was 1c of liquid. That said, I froze my carrots with the fruit as part of my smoothie prep, so not sure if left unfrozen if that would have accounted for the other 1/2c of liquid, I’m guessing so. Now I want to know what other flavor profiles/fruit combos carrots can go with.

    I found it really tasty, although I’m pretty sure I added way more carrot than needed, so that was the main flavor.

    I followed this recipe as close as I could with the fruit and veggies but only using 3/4 cup of coconut water and 1/4 cup of water today. I liked the carrot taste, but it still was a little too sweet for me. I added some unflavored protein to give it more nutrition and lime to tamper the sweetness but still had some oatmeal for breakfast.

    I made this one with baby kale, but would prefer spinach. After tasting, I boosted with coconut smoothie cubes to help lessen the kale flavor. I like the addition of carrots. It must have been good because it didn’t last long!

    This one was really good. I have never added carrots to my smoothies before, but after tasting it, will definitely have to add them in from time to time! It made me feel healthier with every sip (especially since I also added in kale because I ran out of spinach) 😉

    Had day 7 smoothie, too be honest not my favorite. I think I might have needed at add some protein powder as I like a little thicker. It was sweet with the grapes and would be refreshing in the summer.

    Tastes better than it looks! Much less sweet than I thought it would be, but I may have used less fruit than was called for since I doubled the recipe for two people. Hubby still says it tasted earthy which must be the spinach and I added kale today. In mine I also added chia seeds and pea protein powder. I froze the fruit and spinach which made the smoothies nice and cool.

    Today I made smoothie #8 Carrot Cooler using my Nutribullet blender. It did a pretty good job with the raw carrot, I shredded the carrot on my box grater. I made it with half spinach and half kale, I also added two of the turmeric boost cubes, really like them. Smoothie was very tasty although using the curly kale instead of the flat leaf kale, I could really detect the kale flavor, will most likely cut back on the kale a bit.

    This smoothie has one of the lowest calorie count so I would think for losing weight it’s an excellent choice, However, in terms of titillating my taste buds, this was pretty blah 🙁 . I don’t like the taste that coconut water brings to this smoothie, next time if I use the recipe, I would use unsweetened coconut milk and and 1/2 banana

    Loving this 10-day smoothie challenge! Had to make a couple of substitutes given some fruits & veggies not in season (in January), but the are awesome and I feel great! Excellent way to start a new clean diet regimen! We prepped everything for each 5 & froze ahead & my husband & I have been having one for breakfast each day with a piece of dry high-fiber wheat toast. Easy for my long haul commute breakfast!

    I miss the smoothness of the first few days of smoothies. But it is still good. The carrot is not super overpowering.

    Admittedly I hate carrots and put more in this by mistake, but just did not love it. The carrot taste came through too much for me. That said I did force it down and felt better afterwards so I’m hoping I can force myself into liking it

    This smoothie is so yummy! I love the idea of adding carrots to a smoothie. It came out a bit grainy due to put the carrots into the blender in fairly large pieces, so will have to try grating them next time.

      I loved the consistency of this smoothie..I steam the carrots slightly and then blend with the coconut water which was smooth quickly then add the other ingredients..I took out pineapple and add cherries and I would call this smoothie my favourite one so far..DELICIOUS
